MAPLE PECAN SHORTBREAD SQUARES
These squares are my husband's favorite. We get some real, pure maple syrup from back home in Ontario, Canada, and they are just to die for. Hope you enjoy as much as we do.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
- Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firmed, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

MAPLE BARS (DOUGHNUTS)
I grew up with these oh so good bar doughnuts and didn't realize till recently that they are somewhat of a northwestern phenomenon. I actually halved the original recipe because it was so huge, so it does double. Don't use to much flour because it will make the dough tough. If you are feeling really decadent (they are already deep fried after all) I like to fill them with Bavarian cream filling which I get at our Cash and Carry restaurant supply store, or you can make it yourself.

Steps:
- In a bowl place yeast and 1/2 water, to activate.
- Place butter, salt, and sugar in hot scalded milk, then add cold water.
- Mix well and add eggs to this.
- When it is cool enough place in mixer with yeast mixture.
- Add flour 1 c at a time till soft but workable dough.
- Roll out on lightly floured surface into a rectangle about 1/4-1/2 inch thick.
- Cut into rectangular bars about 2-3 inches by5-6 inches.
- Let rise till doubled.
- Heat oil to 350°F and fry till browned on both sides.
- Drain on paper towels and when cool fill with bavarian cream if desired and frost.
- Frosting:.
- Place all ingredients in a medium bowl and mix with a hand blender till smooth.
- I frost mine as I eat them because if you let the frosting sit it will start to slide off the doughnut.
- The number you will get is determined by how big you cut them.

MAPLE WALNUT SHORTBREAD BARS
Maple and walnut are a winning combination in these buttery bars that are a refreshing alternative to a chocolate dessert.

- Preheat the oven to 325 degrees F. Cut a piece of foil 8 by 16-inches. Butter the corners and sides of an 8-by-8-inch baking pan. Line the pan with the foil, leaving an overhang on two sides.
- Beat the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed to medium and add the egg yolk, syrup, vanilla extract and vanilla bean seeds if using. Reduce the speed to low, add the flours and salt, all at once, and beat until just combined. Add the walnuts and continue to mix until fully combined.
- Using your hands, drop the dough in pieces evenly into the prepared pan. Flour your hands lightly and press the dough together and into the corners of the pan. Put a piece of waxed paper on top of the dough and use something square and heavy-another pan, a pound of cold butter-to press the dough into the pan and make a smooth, even top. Chill until firm, about 30 minutes.
- When it is firm, use a fork to score the dough all over. Bake until deep golden brown and starting to pull away from the sides of the pan, about 45 minutes. Cool completely on a rack, about 2 hours, then wrap with plastic wrap, and let sit at room temperature overnight.
- Place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to lift off the pan. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up.
- Using a sharp, serrated knife, slice the square in half. Then slice each half into 8 bars.

- Base: Preheat oven to 350 degrees to cook cookie base.
- Rub the flour, sugar and butter together in bowl, mix well and press firmly into 8 x 10" pan.

- COMBINE marshmallows and margarine in medium saucepan.
- Cook, stirring constantly, over medium heat for 1 to 2 minutes or until marshmallows are melted.
- Remove from heat; stir in cereal until coated.
- Press onto bottom of 13 x 9-inch baking pan coated with nonstick cooking spray, using spatula coated with nonstick cooking spray.
- COMBINE margarine, sugar, evaporated milk and salt in medium, heavy-duty saucepan.

- Directions for bottom layer:
- Put the flour, brown sugar, and salt in the bowl of a food processor and process to combine.
- Add the butter and process until mixture begins to clump, scraping down the bowl several times.
- With moistened fingers, pat the dough evenly over the bottom of the prepared pan.

- Preheat an oven to 175 degrees C (350 degrees F)
- Combine the flour and 75g light brown muscovado sugar in a mixer until well combined.
- Mix in the softened butter until a dough has formed.
- Press into a lined 20x20cm baking dish, and prick with a fork. If you don't have an 20x20cm dish you can use any rectangular dish. You may just have to make more shortbread, but that's never a bad thing!
- Bake the shortbread in the preheated oven for about 20-30 minutes (depending on the amount of shortbread you make). It should look puffy and golden brown when done.
- While the shortbread is baking, beat the egg in a mixing bowl along with 75g light brown muscovado sugar, maple syrup, and pecans.
- Pour the pecan mixture over the hot shortbread and return to the oven. Continue baking until firmed, about 20-25 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking if the mixture has got past the baking parchment. Cool completely, then cut how ever you like. ENJOY!
MAPLE WALNUT CREAM SQUARES
I have made these for church fellowship gatherings and they always go over very well. This is a no bake recipe. The cook time is the 5 minutes cooking on top of the stove.

- Line an 8 inch square pan with foil.
- Place 10 wafers in a single layer in bottom of pan, cutting to fit. Save other 10 for top
- Set aside.
- Crush another 10 wafers for filling. Or use about 3/4 cup graham cracker crumbs
- In saucepan, mix brown sugar, butter, milk and syrup.
- Bring to boil and simmer 5 minutes, stirring constantly.
- Remove from heat.
- Stir in crushed wafers, coconut and walnuts.
- Spread over wafers in pan.
- Top with remaining wafers, cutting to fit.
- FROSTING.
- Mix all frosting ingredients until smooth.
- Spread over top while warm.
- Sprinkle with additional nuts if desired.
