SHEET PAN MUSTARD MAPLE GLAZED SALMON WITH ASPARAGUS AND POTATOES

- Line a baking sheet with parchment paper or a silicone baking mat. Preheat oven to 425°F.
- In a medium-size bowl, mix together the potatoes, two tablespoons of oil, 1 teaspoon salt, and 1/2 teaspoon black pepper. Spread onto prepared baking sheet, and roast in preheated oven for 20-25 minutes, or until the potatoes have begun to soften, but aren't completely tender.
- While the potatoes cook, mix together the mustard, maple syrup, and dill in a small bowl. Set aside.
- When the potato cooking time is up, push them to one side of the sheet plan, and then place the salmon fillets in the middle and the asparagus on the side.
- Liberally spread the mustard mixture on top of the salmon. Then drizzle the remaining oil, salt, and pepper over the asparagus.
- Roast in the preheated oven for 12-14 minutes, or until the salmon is opaque and flaky and the asparagus is fork tender, but not mushy. Serve with lemon wedges to spritz on the asparagus and salmon.

- Preheat oven to 350. Line a large sheet pan with parchment paper. Beat eggs in shallow bowl. Add 1 cup panko breadcrumbs to another shallow bowl. Set aside.
- To assemble each cake, scoop ½ cup mashed potatoes, 2 tablespoons scallions, and 8-10 salmon chunks; assemble into 1-inch-thick patties by hand, each about 4-inches wide. Place each one on a platter until all 8 are assembled.
- Carefully dip each one in egg; fully-coat both sides, then dip both sides in panko breadcrumbs - adding additional panko to bowl as needed. Place on prepared sheet pan. Bake on middle oven rack for 35-40 minutes, flipping each cake halfway through. Serve hot.

MAPLE-BAKED SALMON
Salmon baked at a low temperature until medium-rare delivers a silky texture that tastes special enough to make it a festive centerpiece. This easy dish works any night of the week, since it comes together in less than half an hour. Maple syrup sweetens the glaze, which gets a savory pop from whole mustard seeds in Dijon. Even though salmon is naturally fatty, a dollop of mayonnaise adds extra richness while thickening the glaze to help it seal onto the fish. The herbaceous aroma of cilantro stems baked into the sauce brightens the dish, as do tender leaves scattered on top. Fill out your feast with any combination of steamed rice, roasted potatoes, green beans or salad.

- Remove salmon from the refrigerator. Heat oven to 325 degrees.
- Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
- Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
- Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.

Serve wilted spinach, roasted new potatoes and a glass of stout or full bodied Chardonnay, like Cave Spring or Penfold's Koonunga Hill.

- Marinate the 2 salmon fillets in mixture of 1/3 cup maple syrup and 1/4 cup of soy sauce for at least 2 hours in the refrigerator.
- Remove from refrigerator, spoon out marinade into a saucepan and reduce over medium-low heat until you're left with about half the original volume (about 10 minutes).
- Broil the fillets in a lightly oiled pan for about four minutes, skin side up.
- Flip the fillets over and brush the flesh side liberally with the reduced marinade.
- Sprinkle sesame seeds over top and broil for another 4 minutes or until the surface is caramelized and the salmon is no longer translucent in the centre.

This came from TOH. DH loves this recipe. Actually it is 2 recipes, salmon and sauce. I have frozen the patties, uncooked. I have also used leftover salmon instead of canned. This goes great with a raisin pilaf and the one I use has a matching oven temperature of 375 degrees.

- Preheat oven to 375 degrees and start your water boiling for step 6.
- In a bowl, combine the cornflakes, milk, eggs, butter, onion, garlic salt, pepper, and salmon.
- Divide into 4 equal portions.
- Place four greased 8 ounce custard cups in a 11 X 7 X 2 inch baking dish.
- Fill cups with salmon mixture; gently press down with a spoon until flattened.
- Fill baking dish with boiling water to a depth of 1 inch.
- Bake, uncovered, for 30 minutes or until a meat thermometer reads 160 degrees.
- For cheese sauce: in a medium sized saucepan, melt butter over medium heat.
- Stir in flour until smooth; gradually add the milk.
