Maple-Roasted Delicata Squash Salad with Spiced Pepitas image

I love roasting delicata squash particularly because the skin is so tender that is does not requiring peeling. This squash is tossed with maple syrup, chili powder and salt, resulting in a sweet, spicy and salty party for your taste buds.

Number Of Ingredients 16

1 delicata squash (about 1 pound 8 ounces)
1 tablespoon pure maple syrup
5 tablespoons plus 1 teaspoon extra-virgin olive oil
1 teaspoon chili powder
Kosher salt and freshly ground black pepper
1/3 cup raw pepitas
1/4 teaspoon hot smoked paprika
2 tablespoons sherry vinegar
1 tablespoon minced shallot
2 teaspoons Dijon mustard
1 small clove garlic, grated
1 small head frisée, cut into bite-size pieces (4 ounces)
1 small head little gem lettuce, cut into bite-size pieces (4 ounces)
1 head Bibb lettuce, torn into bite-size pieces (5 ounces)
1/2 cup pomegranate seeds
1/3 cup goat cheese crumbles

Steps:

  • Preheat the oven to 450 degrees F.
  • Trim and discard both ends of the delicata squash and cut in half lengthwise. Using a spoon, remove the seeds from the squash and discard. Place the squash cut-side down and slice crosswise into 1/4-inch-thick half-moons. Toss the squash with the maple syrup, 1 tablespoon of the olive oil, 3/4 teaspoon of the chili powder, 1/2 teaspoon salt and a few grinds of pepper on a rimmed baking sheet until evenly coated. Spread evenly and roast until tender and beginning to brown, 20 to 22 minutes.
  • While the squash roasts, heat 1 teaspoon of the olive oil in a medium skillet over medium heat. Add the pepitas, hot smoked paprika, remaining 1/4 teaspoon chili powder, 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring, until the pepitas begin to pop, become fragrant and start to brown, 2 to 3 minutes. Remove from the heat and transfer the spiced pepitas to a small heatproof bowl.
  • Whisk together the sherry vinegar, shallot, Dijon, garlic, 1/8 teaspoon salt and a few grinds of pepper in a small bowl until smooth and combined. Slowly whisk in the remaining 4 tablespoons olive oil until emulsified. Taste and adjust the seasoning, if needed.
  • Toss the frisée with both lettuces in a large serving bowl. Add the majority of the spiced pepitas, pomegranate seeds and goat cheese crumbles, reserving some of each for garnish. Evenly drizzle the dressing around the rim of the bowl. Toss to coat evenly. Add the roasted squash and toss to combine. Garnish with the remaining pepitas, pomegranate seeds and goat cheese and serve.

The farmers' markets are full of beautiful fall squash; right now, our favorite is the kabocha squash. It has rich, firm flesh that's not watery. We prepare the squash like we would prepare meat to concentrate the texture and flavor.

2 medium kabocha squash
1/4 preserved lemon rind
3 tablespoons olive oil, divided
Freshly ground black pepper
Salt
2 lemons, preferably Meyer
2 sprigs flat-leaf parsley

Steps:

  • Preheat the oven to 400 degrees F. Cut the squashes in half horizontally. Scoop out the seeds and discard. Dice the preserved lemon rind.
  • Place the squash halves, cut side up, on a rimmed baking sheet. Drizzle the flesh with olive oil, salt, pepper, diced preserved lemon rind, and a squeeze of lemon. Roast uncovered in the oven, 1 hour.
  • Remove the squash from the oven. Cut into large wedges, drizzle with the remaining olive oil and lemon juice, salt, pepper, and chopped parsley. Serve immediately, or use in Pasta with Roasted Kabocha Squash and Pecorino Romano (see recipe).

1/4 cup packed light brown sugar
1/4 cup maple syrup
4 tablespoons (1/2 stick) unsalted butter, melted
2 teaspoons chili powder
1/2 teaspoon cayenne
Kosher salt
1 kabocha squash (about 2 1/2 pounds)

Steps:

  • Preheat the oven to 425 degrees F and line 2 rimmed baking sheets with parchment.
  • Whisk together the brown sugar, maple syrup, butter, chili powder, cayenne and 2 teaspoons salt in a large bowl to combine.
  • Cut the squash in half and trim and discard both ends. Using a spoon, remove the seeds and discard. Place the squash cut-side down and slice crosswise into 1/2-inch-thick wedges.
  • Toss the squash with the maple syrup mixture to coat evenly. Arrange the squash in a single layer on the prepared baking sheets, reserving the excess maple syrup mixture. Roast, flipping the squash and rotating the baking sheets top to bottom halfway through, until golden brown and tender, 24 to 26 minutes. While still hot, loosen the squash with a metal spatula from the baking sheets and flip to avoid sticking. Brush the squash with the reserved maple syrup mixture and transfer to a serving dish. Serve warm or at room temperature.

1 medium kabocha squash
Extra-virgin olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 cup raw pepitas (pumpkin seeds)
1 tablespoon extra-virgin olive oil
1/2 teaspoon granulated garlic
1/2 teaspoon paprika
1/4 teaspoon cayenne
1/4 teaspoon ground cumin
Kosher salt and freshly ground black pepper
One 15.5-ounce can chickpeas, drained
1/4 cup tahini
1/4 cup extra-virgin olive oil, plus more for drizzling
1 teaspoon paprika, plus more for garnish
1/2 teaspoon ground cumin
1 clove garlic, peeled
Kosher salt and freshly ground black pepper
1 tablespoon fresh flat-leaf parsley, finely chopped
Pita chips or toast points, for serving

Steps:

  • For the squash: Preheat the oven to 350 degrees F.
  • Remove the skin from the squash and cut open down the middle. Scoop out the seeds and reserve for later. Cut each half into eighths. Spread out on a roasting pan and drizzle lightly with olive oil. Sprinkle with salt and pepper.
  • For the spicy seeds: Pour the pepitas on a baking sheet and drizzle with olive oil. In a small bowl, combine the granulated garlic, paprika, cayenne and cumin. Mix well and sprinkle over the pepitas. Season with salt and pepper.
  • Place both the squash and seeds in the oven. Roast the squash until tender and caramelized around the edges, 25 to 30 minutes. Remove and allow to cool. Roast the seeds until toasted and crunchy, 12 to 15 minutes. Remove and allow to cool on the baking sheet so they get extra crispy.
  • For the hummus: In a blender, combine the chickpeas with an equal amount (by volume) of the roasted squash pieces. Add the tahini, olive oil, paprika, cumin and garlic. Start the blender on low, then increase the speed, using the blender tamper to push down the ingredients into the blades to get a smooth consistency without having to water down the mixture too much. If you need to, stop and scrape down the sides occasionally. Season with salt and pepper and continue to blend until you have a smooth puree. Add a little water if needed to get the mixture moving.
  • Scrape out the hummus and place into a wide serving bowl. Drizzle with olive oil, sprinkle with paprika and fresh parsley and scatter the spicy seeds around the edge. Serve with pita chips or toast points.

ROASTED KABOCHA SQUASH, HARICOTS VERTS, MUSHROOMS AND PEPITAS

4 cups 1/2-inch-diced kabocha squash
Extra-virgin olive oil
1/2 teaspoon ground cinnamon
Crushed red pepper
Kosher salt
1 pound haricots verts, stem end removed
1 pound oyster mushrooms, pulled into bite-size pieces
1/2 cup pepitas (green pumpkin seeds), for garnish
1 bunch fresh chives, finely diced, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large bowl, toss the squash with olive oil, cinnamon, crushed red pepper and salt. Put the squash on a sheet tray and put in the oven. Roast the squash until very soft, about 30 minutes.
  • Toss the haricots verts with olive oil, crushed red pepper and salt. Put on a sheet tray and roast in the oven for 15 to 17 minutes. Repeat this process with the mushrooms and roast for 12 to 14 minutes.
  • Place the pepitas on a sheet tray and roast for 7 to 8 minutes.
  • When all the veggies are roasted, combine all them. Garnish with the toasted pepitas and chives.

From Just Hungry, but modified to cut the spiciness a bit. I just started getting to know winter squashes, and kabocha has become my favorite. It's fairly small, nicely sweet, and the skin is so thin that you don't need to peel it. This is a really easy way of preparing it.

1/2 small kabocha squash
3 tablespoons light brown sugar (plus more for sprinkling)
1/4 teaspoon cayenne (or hot chili powder)
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 teaspoons soy sauce
1 tablespoon sesame oil

Steps:

  • Preheat the oven to 400°F Line a baking sheet with a silicon baking liner or parchment paper.
  • De-seed and cut the squash into slices about 1/4 inch thick.
  • Combine all the dry ingredients. Toss the squash slices in this until coated thoroughly. Add the soy sauce and toss well again.
  • Spread the slices in a singler layer on the baking sheet and drizzle them with the oil.
  • Bake in the preheated oven for 15 minutes, then turn over, drizzle with more oil and sprinkle more sugar, and bake for an additional 10-15 minutes.
  • Serve hot or at room temperature.
