MAPLE PECAN GRANOLA
[ Recipe VIDEO below ] Maple Pecan Granola is hearty, satisfying and wholesome with less sugar than most pre-packaged granola. It's so easy to make homemade with a few simple ingredients. This recipe is vegan and optionally gluten free. NOTE: Due to a few notes I've received regarding baking time for this recipe, be sure to use an external oven thermometer for best out come and/or start watching the granola during the last 20 minutes of baking. The granola should be golden and fragrant when done.

- Line a sheet pan with parchment paper and set oven to 275F (135C). Place a baking rack in the center of the oven.
- In a mixing bowl, add the rolled oats, pecans, coconut, sunflower seeds, salt, cinnamon, and chocolate chips (optional). Set aside.
- In a spouted measuring cup, combine the melted coconut oil, maple syrup and vanilla bean paste. Stir. You will see separation. If the coconut oil solidifies, gently rewarm it in the microwave to keep it in a liquid state.
- Pour wet ingredients into the dry. Using a wooden spoon or your hands, mix throughly, ensuring that each, individual dry ingredient gets some wet on it. Press the granola into the pan, in one even layer.
- Place the pan in preheated oven and bake at 275F (135C) for 1 hour. Check the granola. At this point it should be slightly golden and fragrant. Rotate the pan, turn the oven up to 300F (148C), and bake for an additional 20-25 minutes OR until golden and fragrant ---> keep an eye on the granola during the last 20 minutes of baking due to oven temperature variation - it should be golden when done. Do not stir the granola, or clustering will be greatly reduced.
- Remove from the oven. The granola will be golden and soft to the touch. It will firm up as it cools. Allow the granola to cool completely in the pan before transferring to a storage container. Doing this will ensure crunchy clusters. If desired, toss in your favorite dried fruit such as chopped Turkish apricot, sour cherries, cranberries or raisins.
- Store in a covered container, at room temperature, for up to three weeks. Granola can also be frozen for up to one month.

GREEN BEANS WITH MAPLE-PECAN BUTTER

Steps:
- Cook beans in large pot of boiling salted water , uncovered, until crisp-tender, 3 to 4 minutes. Using large slotted spoon, transfer beans to colander set in bowl of ice and cold water to stop cooking, then drain well. Return water to boil and repeat with remaining beans.
- In small heavy skillet over moderate heat, heat 1 teaspoon oil until hot but not smoking. Add pecans and toast, stirring constantly, until light brown and fragrant, about 3 to 4 minutes. Remove from heat and set aside.
- In electric mixer fitted with paddle attachment, whip butter until smooth, about 1 to 2 minutes. Add maple syrup and pecans, stirring by hand to incorporate. Set aside.
- In 10-inch skillet over moderately high heat, heat 2 tablespoons canola oil until hot but not smoking. Add half green beans and sauté until hot, about 3 to 5 minutes. Transfer to large bowl and repeat with remaining beans and oil. Add maple-pecan butter and toss to combine. Sprinkle with salt and pepper and serve immediately.
MAPLE BAKED BEANS
Taken ages ago from the website ' About ' when looking for recipes using maple syrup - I have not made these but certainly intend to have a go .Preparation time does not include soaking the beans. UPDATE - I have since made this recipe and the flavours are very mild - too mild for me so you might want to be a bit heavy handed - I also added a can of diced tomatoes and cooked them for an extra hour.

Steps:
- Place beans in large saucepan and cover with cold water.
- Bring to the boil and simmer 2 minutes.
- Remove from heat and stand covered for 1 hour.
- Drain and reserve liquid.
- In a small bowl combine syrup, sauce, onion salt and mustard.
- Place 1/2 the beans in a 1 quart casserole dish.
- Top with diced pork or bacon.
- Add remaining beans.
- Pour maple syrup mixture over beans.
- Add 1 1/2 cups of reserved bean liquid.
- Cover and bake at 300 degrees for 2 hours.
- Stir occasionally and add more reserved liquid id need be to keep beans moist.

POTENT MAPLE BAKED BEANS

- Wash and pick over beans. Put beans and water in saucepan, cover. Bring to a boil. Boil for 2 minutes.
- Remove from heat and let stand 1 hour.
- Return to heat, bring back to a boil, lower heat and simmer, covered, for 40 minutes.
- Drain beans thougha colander set over a bowl. Reserve 2 1/2 cups of the cooking liquid and set aside.
- Put bacon in ovenproof casserole or bean pot. Cover with cooked beans.
- In a bowl, combine onion, salt, mustard, syrup, rum and 2 cups of reserved cooking liquid.
- Pour mixture over beans.
- Cover and bake in a 325 degree oven for 3 hours, adding the last 1/2 cup cooking liquid during the last 30 minutes of cooking.
- Remove from oven.
- Combine brown sugar and melted butter. Drizzle over beans.
- Bake, uncovered, for another hour or until liquid has evaporated.
