MANGO MOUSSE

- In a high speed blender, combine the mango with the orange juice, lime juice and condensed milk. Puree until very smooth, about 1 minute.
- Meanwhile, in a medium-sized bowl, beat the cream with an electric mixer on high until soft peaks form.
- Pour one quarter of the mango puree mixture into the beaten cream, and using a spatula, fold the mango into the cream very gently. You don't want to deflate the cream, so take your time and scrape around the bowl and down the middle to fold the mixture together.
- Repeat with the remaining mango puree, one quarter of it at a time, until everything is incorporated.
- Divide the mixture between 4 small glasses, and refrigerate at least 4 hours (or overnight) before serving. To garnish: extra dollop of whipped cream and a few diced mango pieces and a mint leaf.

MANGO FLOAT
You'll want the ripest and juiciest mangoes to really do justice to this popular Filipino dessert. Made of layered whipped sweetened cream, graham cracker crumbs and fruit that's chilled overnight (think icebox cake), it's an easy no-bake dessert you can learn by heart.

- Combine the cream, sweetened condensed milk and vanilla extract in a large bowl. Beat with a hand mixer until double in volume, about 4 minutes.
- Spread a scant 2 cups of cream in an 8-inch square baking dish, followed by 1/2 cup graham cracker crumbs and a third of the mangoes. Continue alternating layers for a total of 9 layers, ending with mango. Chill at least 8 hours and up to overnight.
MANGO WHIP
Steps:
- Pre-chill both the whole mangoes and the evaporated milk.
- Peel and dice the mangoes into small cubes. Place most of the diced mango in a blender or food processor and puree to a smooth, silky consistency. Reserve a small portion of the diced mango for garnish.
- Pour the pre-chilled, non-fat evaporated milk into a pre-chilled mixing bowl and whip at medium-high speed to the consistency of semi-stiff peaks.
- At this stage, gently add the mango puree and mix on slow speed for about 30 seconds, incorporating the two ingredients thoroughly. This step may also be done by hand, folding the mango puree into the whipped milk for a firmer overall consistency.
- Place a small portion of the reserved, diced mango in the bottom of each individual serving glass. They spoon in the Mango Whip. Chill the filled glasses for at least 15minutes before serving. Garnish with a small sprig of mint.
MANGO MOUSSE
Top each serving with extra mango if desired.
