  • Make the simple syrup: Combine the water and sugar in a medium microwave-safe bowl. Heat in the microwave for 2 minutes at 100% power. Stir until the sugar is dissolved. If granules remain, heat at full power in 1 minute intervals thereafter until the sugar is melted. Add vanilla extract if using. Transfer the bowl to the refrigerator to cool. If you don’t have a microwave, the simple syrup can be made in a saucepan on the stove top.
  • Cook the Boba: Bring the water to a boil in a large pot over high heat. Add the boba and cook for 7 minutes, stirring gently until the pearls float to the surface of the water. Cover the pot with a lid and cook for 3 more minutes. Remove the pot from the heat source and let it stand for 5 minutes. Drain the boba with a colander, and rinse them in cool water for 20 seconds. Remove the simple syrup from the refrigerator and transfer the boba to the simple syrup. Let stand until completely cool, about 1 hour.
  • Make bubble tea: Put as little or as much boba as you like in the bottoms of two 16-ounce glasses. Add a handful of crushed ice to each glass. Pour tea over the crushed ice until it reaches halfway up the glass (you may have a little leftover tea – it depends on how much ice you use). Top with mango nectar and two tablespoons each light cream. Serve immediately with bubble tea straws or with spoons.

  • Rinse out the pot and boil 5 cups of water. Once at a rolling boil, add tapioca pearls. Cook on high heat for twenty minutes, stirring once every 10 minutes. Lower to a simmer and cook until it reaches your desired texture (it should be soft and chewy), about another 5-10 minutes, again stirring every 10 minutes. Remove from heat and let sit in the water for 30 minutes. Drain and rinse with cold water. Add to the jar with simple syrup and let sit to soak up the sugars while you make the passionfruit tea.
  • Half the passionfruits and strain pulp over a mesh sieve to get the juice. You’ll get about 1/4 to 1/3 cup of juice depending on how juicy your passionfruit is. If you don’t mind eating the pips (they have a similar texture to a raspberry seed), then you can simply blend the entire pulp together and add that to your bubble tea.
  • If you don’t want to make a simple syrup, just add 3 tbsp sugar to your black tea once you brew it so it’ll dissolve in the hot tea. Otherwise use maple syrup, simple syrup, or simply any liquid sweetener of your choice.

Switch off the KEEP WARM MODE ( light should not be on in the keep warm mode). Now press START. After the pressure cooking is done. Press CANCEL . Wait for NPR (natural pressure release) leave the quick release switch in the SEAL position for "THREE" minutes. Then do QPR (quick pressure release) by moving quick release switch from SEAL TO VENT to release any remaining pressure.
  • After the steam is released, open the lid of the instant pot. Remove the tea bags and discard them. SCOOP OUT THE BOBA PEARLS in a bowl and mix well with the mentioned quantity of honey and refrigerate ( Boba - honey mixture) it for "TEN" minutes ( this allows the Boba pearls to absorb the honey). Now add condensed milk to the pressure cooked tea and stir well ( If you want to have black bubble milk tea without flavoring it with fruit puree , then stop here and serve it as Boba milk tea with refrigerated Boba pearls and ice cubes). For flavored mango milk tea , proceed adding the mango puree to the tea and condensed milk mixture, stir well , mango flavored milk tea is ready now.
  • Spoon about three tablespoons ( or add to your preference) of refrigerated tapioca pearls (soaked in honey) in a glass. Add ice cubes and pour in the mango milk tea mixture , use the straws specially made for Boba teas. Serve immediately for best taste.
