1/2 c. Olive Oil
1/3 c. White Wine (or Regular) Vinegar
2 tbsp. (to 3 Tablespoons) Sugar
1 tsp. Celery Seed
1/2 tsp. Dry Mustard
1/2 tsp. Salt
Freshly Ground Pepper, to taste

VEGGIES:
3 stalks Celery Finely Chopped
3 stalks Green Onions, Sliced
1 whole Red Bell Pepper, chopped
1 whole Cucumber, Peeled, Seeded, And Chopped
1 whole Jalapeno (optional), Seeded And Chopped
1 c. (or More If Desired) Chopped Cilantro
2 cans Black-eyed Peas, Drained

Steps:

  • Mix together dressing ingredients. Set aside.Combine all vegetables (except cilantro) with black eyed peas. Pour dressing over the top and gently stir together. Add cilantro and stir gently.Cover and refrigerate for at least an hour. Serve with tortilla chips.

2 cans (15-1/2 ounces each) black-eyed peas, rinsed and drained
2 medium tomatoes, chopped
1 cup chopped green pepper
1/2 cup chopped red onion
4 green onions, sliced
1 garlic clove, minced
1 cup Italian salad dressing
1/4 cup sour cream
1/4 cup minced fresh parsley
Tortilla chips

Steps:

  • In a bowl, combine the first six ingredients. Combine the salad dressing, sour cream and parsley. Add to the pea mixture; toss to coat. Cover and refrigerate for at least 4 hours. Serve with tortilla chips.

1 large tomato, diced
1/2 medium red onion, finely chopped
1 small red bell pepper, finely chopped
1 jalapeno, finely chopped
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

Steps:

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
  • Toss all together with the black-eyed peas and let marinate for at up to 8 hours in the refrigerator before serving.

3 green onions, finely chopped
2 mangoes, diced
3 tomatoes, diced
1 teaspoon garlic powder
2 teaspoons ground cumin
1 lime, juice only
1/4 cup vinegar
1/3 cup olive oil
salt and pepper, to taste

Steps:

  • Combine oil, vinegar, lime juice, cumin, and garlic powder; thoroughly mix.
  • Add peas, tomatoes, mangoes, and green onions and toss gently to coat.
  • Season with salt and pepper to taste.
  • Refrigerate four hours and serve with tortilla chips.

1 cup dried black-eyed peas
2 3/4 cups vegetable broth
1 tablespoon canned jalapeno juice
3 pickled jalapeno peppers, whole
1/3 cup onion, chopped
1 garlic clove
1/4 cup shredded cheddar cheese
1 1/2 teaspoons butter
6 ounces green chilies, chopped, canned
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon hot sauce

Steps:

  • Cook the peas in the broth for 50-55 minutes until soft.
  • Drain peas and put into food processor with the next 4 ingredients. Blend until smooth.
  • Add the rest of the ingredients and blend well.
  • Pour into wax paper lined loaf pan and chill overnight.
  • Serve cold with tortilla or bagel chips.
  • Variation: (my favorite) Fry the mixture into little patties in vegetable oil and serve with a spicy mango salsa while still warm.
