MANDARIN ORANGE SAUCE FOR CREPES
This sauce goes beautifully with crepes. Not too sweet, and super quick and easy to make. I used the crepe recipe posted by MizzNezz (recipe #18410). I coat the crepes with the sauce and fold into quarters.

Steps:
- Heat oranges, juice, sugar, vanilla and rum over med to high heat.
- In a small bowl, stir together cornstarch and water.
- When orange mixture comes to a bowl, stir in cornstarch mixture.
- Cook stirring constantly until thick.

Steps:
- PLACE eggs, water and oil into blender container; cover and process by pulsing several times. Add pancake mix; process until smooth. SPRAY a 10-inch nonstick skillet with no-stick cooking spray. Heat pan over medium-high heat. Pour 3 to 4 tablespoons batter into preheated skillet, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is set. Turn to brown second side. Turn out crepe onto a plate. Repeat with remaining batter to make eight 8-inch crepes. SPREAD each crepe with 1 tablespoon marmalade; roll up. Place remaining 1/2 cup marmalade in a microwave-safe bowl. Heat on HIGH (100% power) 30 to 45 seconds or until melted; cool slightly. Add drained Mandarin oranges; mix gently. Serve crepes topped with Mandarin orange sauce; sprinkle with powdered sugar.

Steps:
- Crepes.
- Using a blender put all dry ingredients in first.
- Turn on a slow speed and add eggs, and then slowly add milk, orange juice, vanilla, and orange zest.
- Turn up the speed and mix well until smooth and no lumps.
- Put a teaspoon of oil in a hot 8" or 9" pan (use medium setting). Let the oil and pan heat.
- Holding the pan above the burner, pour ¼ cup of batter into center of pan as you rotate the pan to evenly spread the batter all around.
- Cook for about 30 seconds until the bottom is browned in a speckled pattern.
- Flip over and brown the other side.
- Roll up in the pan and put on a plate.
- Repeat with the rest of the batter.
- Sauce.
- Mix ½ cup orange juice and 1 tsp of cornstarch in a bowl. Stir.
- Add to pan and heat until thickened, stirring occasionally.
- Pour over top of crepes.
- Optional: Include other fruits and/or whipped cream.
MANDARIN FRESH CREPES
Steps:
- Heat a round flat pan on medium heat, over stove.
- Mix pancake mix and water. Spoon 1/2 Tbsp. of butter onto hot pan until melted. Pour batter onto pan forming two medium sized golden-pancakes.
- Spoon remaining butter onto pan until melted. Pour remaining batter forming two other medium sized golden-pancakes.
- In a small bowl mix room temperature cream cheese, mandarin oranges, and sugar.
- Divide cream cheese filling into fours. Spoon the cream cheese filling towards the edge of each pancake and roll gently applying pressure so that the cream cheese filling spreads throughout the pancake. When complete, top crepes with whipped cream and enjoy!

MANDARIN ORANGE SAUCE
A quick and easy sauce to serve with a scoop of ice cream, a piece of sponge cake or fruit cake, or cheesecake. Also good over pancakes, french toast, or crepes. Garnish with a dollop of whipped cream and a maraschino cherry if you like. Use fresh peaches in place of the oranges or use canned peaches with some of the juice. You can serve individual servings in wide-mouth wine glasses for pretty presentation. A great last minute dessert. I keep an angel food cake in the freezer and a couple cans of mandarin oranges in the pantry for this dessert for unexpected company.

- Stir the sugar and cornstarch together in heavy-bottom saucepan.
- Drain the mandarin oranges over a 2-cup measuring cup. Add water up to the 1-1/3 cup mark.
- Add liquid mixture to sugar and cornstarch in saucepan. Stir over medium heat until thickened. Remove from heat.
- Add the butter and one half of the can of undiluted orange juice. (Make the rest into orange juice for drinking).
- Add the mandarin oranges and stir gently.
- Heat gently over low heat for a couple of minutes, if desired, stirring occasionally.

- Whisk 1 cup sugar, butter, water, 1/4 cup lemon juice, and egg yolk together in a heavy-bottomed saucepan over medium heat. Bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Cover sauce to keep warm.
- Beat cream cheese, 1/4 cup mandarin orange juice, 1/4 cup sugar, 2 tablespoons lemon juice, and vanilla extract in a bowl using an electric mixer until well blended; mixture will be a bit lumpy.
- Blend milk, flour, and eggs together in a bowl using an electric mixer. Set a greased crepe pan over medium heat. Ladle batter in until just covering the bottom of the pan. Cook until top dries, about 3 minutes. Flip and set aside; repeat with the remaining batter.
