Mandarin Chicken - This healthy Chinese recipe inspired by take out from Panda Express. Chicken breast chunks coated in a sweet/salty brown glaze made of orange juice, brown sugar, and soy sauce.

4 boneless skinless chicken breasts, ( chopped into bite-sized chunks)
1 tbsp. canola or vegetable oil
1/4 cup orange juice
1/4 cup soy sauce
2 tbsp. brown sugar
2 tbsp. water
1 tbsp. corn starch
1/4 tsp. ground black pepper
optional: sliced green onions, (sesame seeds)

Steps:

  • In a large skillet over medium-high heat, add the oil and the chicken. Stir the chicken to coat it in the oil. Let the chunks of chicken cook until they start to brown on a couple of sides, stirring occasionally (about 5-7 minutes).
  • In the meantime, add the orange juice, soy sauce, brown sugar, water, corn starch, and black pepper in a bowl. Stir or whisk until well combined and corn starch is dissolved.
  • Pour the sauce over the browned chicken and stir to coat. Once sauce has come to a bubble, reduce the heat to a simmer. Let the chicken and sauce simmer for 10 minutes, or until chicken is cooked through.
  • Serve hot. Sprinkle with optional green onions and/or sesame seeds.

¼ cup all-purpose flour
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
2 tablespoons olive oil
2 tablespoons butter
⅓ cup hoisin sauce
⅓ cup orange juice
1 (11 ounce) can mandarin oranges, drained
1 tablespoon chopped green onions
¼ cup chopped cashews

Steps:

  • Place flour in a small bowl. Dredge chicken in the flour to lightly coat.
  • Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear. Set aside, and keep warm.
  • Stir hoisin sauce and orange juice into the skillet, and scrape up the browned bits. Mix in mandarin oranges, green onions, and cashews, Return chicken to the skillet. Continue cooking until all ingredients are heated through.

This is very similar to the Mandarin chicken served in the malls, except I use white meat chicken. Boneless chicken thighs are what the restaurant uses. It's quick, easy and delicious. Sometimes I'll make this, then a quick trip to the local Chinese take-out for vegetable lo mein and eggrolls for a cheap, tasty Chinese meal that's almost homemade. You'll be amazed at how authentic this tastes! *Note: I have adjusted the amount of sugar to reflect comments written in reviews. If you like it sweet, use the full 2/3 cup.

1 whole boneless skinless chicken breast, cut into 4 equal pieces (1lb)
vegetable oil cooking spray
2/3 cup sugar (or less, according to taste)
1/4 cup soy sauce
1 tablespoon lemon juice
1 tablespoon vegetable oil
1/2 teaspoon minced fresh garlic
1/2 teaspoon minced fresh ginger
1/4 cup water
4 teaspoons cornstarch

Steps:

  • Spray chicken breasts with vegetable oil spray.
  • Grill chicken breasts 4-6 minutes per side or until done (chicken should be brown in spots).
  • Chop chicken into bite size pieces, set aside.
  • Combine sugar, soy sauce, lemon juice, oil, garlic and ginger in a small saucepan.
  • Heat over medium until sugar is dissolved, stirring often.
  • Bring to boil.
  • Combine cornstarch and water.
  • Add to sauce pan, stirring often.
  • Reduce heat and simmer 4-6 minutes or until sauce thickens.
  • Pour chicken into a large frying pan over medium heat.
  • Heat until chicken sizzles, then reduce heat and pour sauce over the chicken.
  • Heat through.
  • Serve over white rice.

Roasted chicken breast halves basted with orange juice and wine, and cooked with mandarin segments and green seedless grapes. Just y-u-m-m-y for those who love citrus flavourings. I've only made this once, but I intend to experiment by varying the citrus flavourings: by substituting some or all of the orange juice for lemon or lime juice, or a blending of several citrus juices. And knowing how well rum blends with orange juice, I have considered using rum next time in place of the wine. That would make it even more of a dinner party dish! Adapted from a truly terrific book (when it comes to recipe books, I rate as 'terrific' a book in which LOTS of the recipes appeal to me, AFTER I've purchased the book, not just one or two) Rodale's "Terrific Chicken: 100 Great Meals in Minutes". Not all one hundred appeal to me but I've so far found several that I'm really glad to have found, and that I'll certainly be making again, and there are several others that I look forward to making. This recipe was from a section called 'Weekend Fare'. I do hope that other citrus lovers enjoy this recipe.

1/3 cup dry white wine or 1/3 cup chicken broth
1/3 cup frozen orange juice concentrate, thawed
1/4 cup sweet orange marmalade
1/2 teaspoon ground ginger

Steps:

  • Preheat the oven to 350ºF.
  • Stir the wine, thawed orange juice concentrate, marmelade and ginger together in a 13x9-inch baking pan.
  • Add the chicken, turning once or twice so that both sides are well-coated.
  • Place the baking pan in the oven and bake the chicken, basting occasionally with the pan juices, for 35 minutes or until the juices run clear.

1 (85 g) package ramen noodles
2 tablespoons sesame seed oil
2 cups onions, roughly chopped

2 teaspoons garlic, minced

1 cup carrot, julienne
2 cups cubed cooked chicken breasts
1 tablespoon freeze dried basil
1 teaspoon salt
1 teaspoon fresh ground black pepper
2 (170 ml) cans mandarin oranges, drained

Steps:

  • In a medium saucepan, bring water to boil. Add noodles, cover and remove from heat. Allow 10 - 15 minutes for softening, then drain. Set aside.
  • In a large skillet, heat oil. Add onions and sambal olek. Saute until onions are slightly transparent.
  • To the onions add red peppers, carrots and garlic. Continue to saute until peppers are just beginning to soften.
  • Add chicken, basil, salt and pepper. Stir until chicken is heated through.
  • Add orange pieces and the drained noodles. Toss gently until heated through.

1/2 cup orange juice
1 1/2 tablespoons cornstarch
1 cup low sodium chicken broth
1/4 cup white vinegar
1/2 cup granulated sugar

2 large chicken breasts, cut into bite-sized pieces

  • In a measuring cup, mix orange juice with cornstarch; set aside. In a mixing bowl, combine broth, vinegar, sugar and soy sauce; whisk to combine and set aside.
  • In a large skillet over medium-high heat, add canola and sesame oil. When hot, add chicken and season with white pepper and sea salt; sauté for 3 minutes or until no longer pink. Add ginger and garlic; sauté for 1 minute. Add hoisin sauce, stir well before adding chestnuts and red peppers; cook for 2 minutes.
  • Stir in the broth mixture and bring to a boil. Reduce heat to medium and simmer for 10 minutes. Stir in orange juice/cornstarch mixture until the sauce thickens. Add mandarin orange segments and gently incorporate into the mixture. Cook enough to warm up the orange segments; serve over a bed of white rice and garnish with green onions and sesame seeds. Makes 3-4 servings.
