These healthy fruit and yogurt parfaits are incredibly easy to make and are the perfect make-ahead grab-n-go breakfast.

3/4 cup yogurt ((plant-based, plain yogurt, or Greek yogurt))
1/2 cup mixed berries ((blueberries, strawberries, raspberries))
1 teaspoon maple syrup
1 tablespoon granola
1/2 tablespoon coconut flakes ((optional))

Steps:

  • Wash the berries, and if some are too big, chop them into smaller pieces.
  • Add 2-3 tablespoons of yogurt to a mason jar.
  • Add half of the chopped fruit.
  • Add the remaining yogurt.
  • Top with the rest of the mixed berries, granola (see notes), maple syrup, and coconut flakes.
  • Seal the lids and store them in the refrigerator for up to 3-4 days.
  • When you are ready to eat the yogurt parfaits, simply remove them from the fridge, mix, and enjoy.

1 cup fresh or defrosted frozen strawberries in juice
1 pint fresh blackberries, raspberries or blueberries
1 cup good quality granola

Steps:

  • Layer 1/3 cup vanilla yogurt into the bottom each of 4 tall glasses. Combine defrosted strawberries and juice with fresh berries. Alternate layers of fruit and granola with yogurt until glasses are filled to the top. Serve parfaits immediately to keep granola crunchy.

peeled and chopped fruit
1 1/2 plain whole milk yogurt
8 ounce jars

Steps:

  • Add a few tablespoons of fruit to the bottom of your mason jars, then proceed with the yogurt, and finally more fruit. The number of layers you create is totally up to you, based on how "meaty" you'd like your Fruit and Yogurt Cups. I recommend leaving a bit of room on the top of the yogurt cups so you can add granola, muesli, or nuts/seeds before enjoying. Seal the jars.
  • Store the Fruit and Yogurt Cups in the fridge for up to 3 days (or longer, think about the lifespan of your fruit).
  • To enjoy, top the cups with granola, muesli, nuts/seeds, and/or a drizzle of honey or maple syrup.
