Steps:
- Dans un saladier, battez les œufs avec le sucre, ajoutez l'extrait naturel de vanillé.
- Tamisez et incorporez doucement la farine, la poudre d'amande et la levure chimique. Mélangez. Ajoutez le beurre fondu et continuez de remuer. Laissez reposez 2 h au réfrigérateur.
- Préchauffez le four th. 7 (210 °C). Répartissez la pâte dans des moules à madeleines beurrés. Enfournez 20 min. Renouvelez l'opération jusqu'à épuisement de la pâte.
- Présentez les madeleines dans des petits bols saupoudrées de sucre glace.

- Préchauffez le four à 220°C (thermostat 7-8). Faites fondre le beurre dans une casserole ou dans le micro-ondes. Laissez-le refroidir. Pendant ce temps, coupez finement le zeste de citron. Dans une saladier, cassez les oeufs. Mettez le sucre et fouettez-le tout pour faire mousser. Ajoutez la farine et la levure. Mélangez. Versez le beurre fondu, puis les zestes du citron. Mélangez. Laissez reposer la pâte au moins 30 minutes (facultatif). Remplissez les moules à madeleine aux 2/3 et mettez-les au four à 220°C pendant 5 minutes et baissez le four à 200°C pendant 10 minutes. Les madeleines sont prêtes quand elles sont dorées.

- Preheat oven to 375. Beat sugar and eggs together until thoroughly blended. Add lemon rind and melted butter. Mix to blend. Sift together dry ingredients. Add all at once to egg mixture. Stir just to blend. Allow mix to sit at room temperature for approximately 10 minutes. While mix is resting, generously butter Madeleine molds. Spoon mix into molds, filling approximately 3/4 full. Bake approximately 15 minutes or until edges are golden brown. Turn over immediately onto cooling screen. Wipe out each mold cavity, rebutter and fill again until desired number or all mix is used. Store in airtight container until ready to use.;

- Heat the oven to 210C/190C fan/gas 6½ and butter eight holes of a madeleine tin (if you have a six-hole tin you'll need to bake in two batches). Beat the egg, sugar and honey together using an electric whisk until pale, fluffy and tripled in volume. Add the flour and a small pinch of salt, and finally mix in the melted butter.
- Spoon the mixture into the buttered holes of the madeleine tin and bake for 8-10 mins or until puffed up and golden. Turn out onto a cooling rack while you cook a second batch if using a smaller tin. Best eaten warm from the oven but will keep in an airtight container for up to two days.

MADELEINES
Madeleines are a simple snack that almost everyone, including beginners, can make. Since I'm an avid manga reader, I found this recipe in Kitchen Princess and later developed it into my own version. This is the original, I hope you enjoy.

Steps:
- Mix the egg and sugar in a bowl, stirring well with a whisk.
- Begin melting the butter, preferably in a small pan for about a minute and a half.
- Add flour and baking powder to the bowl from step 1 and mix them together.
- Add melted butter to the bowl (You'll use some in step 4, so save some) and mix.
- Let the mixture sit for 10 to 20 minutes and the dough will thicken, it will then be easier to pour into the madeleine mold.
- Take a brush and put some butter on the madeleine mold and put a little bit of flour in it. This will make it easier to take the cookie out of the mold.
- Pour the dough into the mold.
- Bake for about 20 minutes in an oven preheated at 170 degrees (approx. 340˚F).
- Take them out of the mold and let them cool.
- Enjoy!

- Make the madeleines: Preheat the oven to 425°F (220°C). Set a rack in the upper third of the oven. Generously grease a madeleine mold with soft butter or cooking spray, then dust with flour, tapping the pan upside down to remove excess. Place the pan in the freezer.
- In the bowl of a stand mixer fitted with the whisk attachment (or in a large mixing bowl, if you’re using a hand mixer), mix the eggs and sugar together for 5 minutes until the mixture is pale and thick. Whisk in the vanilla extract and lemon zest.
- With the mixer running at slow speed, drizzle the melted butter into the batter, mixing just to incorporate. Using a spatula, add the reserved dry ingredients a third at a time, folding between each addition until just incorporated. Cover the mixing bowl with plastic wrap and refrigerate the batter for 30 minutes to an hour, or up to overnight.
