1/4 cup brandy
1/4 cup Cointreau liqueur or 1/4 cup Curacao
1/4 cup slivered almonds (toasted gives more flavor)
2 cups fresh pineapple, diced
1 apple, diced (use a sweet variety)
1 1/4 cups bananas, sliced (use firm bananas)
1 cup fresh strawberries (halved or quartered)
1/2 cup sweet cherries, pitted
1 small orange, peeled and sliced
sugar, to taste

Steps:

  • In a bowl combine brandy and liqueur; add fruit and nuts then mix lightly.
  • Add sugar to taste, chill until serving.

1/3 cup pineapple
1/3 cup peach
1/3 cup mango
3 cups vodka
2 cups sugar
1/4 cup water
1 teaspoon glycerin (optional)

Steps:

  • In a quart jar, add fruit, 1 cup sugar, and vodka. (I use frozen berries as the freezing process breaks down the cell walls, allowing you to get more juice).
  • Seal jar tightly, and place in a dry, dark place for about 2 weeks.
  • After two weeks, strain the liquid using a double layer of cheese cloth. Gently squeeze the fruit, getting as much juice as possible.
  • In a fresh quart jar, add the second cup of sugar, glycerin, water to top and the strained liquid. Seal and store again in a dark place until sugar is dissolved.
  • Once the sugar has all dissolved, bottle the resulting liqueur in a fresh bottle and let age for roughly 3 months.

1/4 cup sugar
1 tablespoon lemon juice
whipped cream (optional)

Steps:

  • If necessary, peel fruits and cut into bite-size pieces to make 4 cups.
  • Combine wine, sugar, and lemon juice.
  • Pour wine mixture over fruits; stir gently to mix.
  • Cover; refrigerate for 1 to 2 hours.
  • To serve, top with dollop of whipped cream, if desired.
