HEALTHY ZUCCHINI SLICE

A healthy zucchini slice that can be enjoyed as a light lunch, snack or breakfast on the go.

4 Zucchinis, grated (see note 1)
1 cup Wholemeal Flour
1 cup Cheese
1 Brown Onion, finely diced
1/4 cup Olive Oil
1 teaspoon Baking Powder
5 Eggs
Salt + Pepper, to taste

Steps:

  • Preheat oven to 180C / 360F and line baking tray (6x12inches / 15x30cm) with baking paper
  • Whisk eggs in a large mixing bowl. Add flour and baking powder and mix until smooth.
  • Add grated zucchini, onion, cheese, olive oil, eggs, salt and pepper, and mix together until well combined.
  • Pour mixture into tray and place in oven for 35-40 minutes or until fully cooked through and slightly browned on top.
  • Cut into 9 slices and serve on it's own or with some hummus on top!

Steps:

  • Lightly mix 6 ounces ground beef chuck with a big pinch of kosher salt. Form into two equal balls, and then shape into two flat patties. Lay two slices American cheese between them and form the meat around the cheese; make an indentation in the center of the patty. Heat a cast-iron skillet over medium-high heat; sprinkle the skillet with salt. Cook the burger 4 to 5 minutes per side. Serve on a soft bun.

1 cup self-rising flour
1/2 cup oil

2 teaspoons olive oil
1 large onion, finely chopped
4 medium zucchini, grated coarsley
3 slices bacon, chopped finely
1 cup cheddar cheese, grated
3/4 cup self raising flour
1/2 cup vegetable oil
4 eggs, lightly beaten

Steps:

  • grease a 19cm x 29cm slice pan with oil.
  • heat oils in a small pan, cook onion, stirring until soft, you will know this when it goes a bit white and see through.
  • combine onion with remaining ingredients in medium bowl.
  • mix well.
  • spread mixture into prepared pan.
  • bake in moderate oven 35 minutes or until golden on top and firm.

6 large eggs
1 Cup flour
1 tsp baking powder
150g onion (large)
1 Cup grated cheese
Bacon 100g
500g zucchini/courgette

Steps:

  • Whisk eggs
  • Add flour and baking powder and whisk. Don't worry about a few lumps, they will disappear during cooking
  • Finely dice the onion, add to the eggs (you do not need to precook anything, the onions will go lovely and sweet)
  • Finely slice the bacon, add to the eggs,
  • Grate the zucchini and add to the eggs, along with the grated cheese
  • Mix everything together
  • Pour into a loaf lined with baking paper
  • Bake at 180 degrees celsius (360 f) for around 40-50 mins until golden
