Homemade Skinny Chocolate Cake image

Be still my chocolate loving heart, a moist chocolate cake made from scratch with only three tablespoons of oil in the entire treat! Top this with some chocolate syrup and fresh raspberries and oh my, what a chocolate dessert!

1 1/2 cups sugar
3 tbsp canola oil
4 oz unsweetened apple sauce
1 egg
2 egg whites
1 cup HOT coffee
3/4 cups unsweetened cocoa powder
2 tsp vanilla extract
1 cup fat free milk
2 cups cake flour (not self rising)
1 package instant chocolate pudding (not sugar free)
1 tsp salt
1 tsp baking powder
1 1/2 tsp baking soda
1/4 cup plain fat free Greek yogurt
spray oil

Steps:

  • Preheat oven to 325°F.
  • Lightly spray and flour your cake pan.
  • In a large bowl combine flour, dry chocolate pudding mix, salt, baking powder and baking soda and set aside. (dry ingredients)
  • In a medium bowl, combine HOT coffee with the cocoa powder until it dissolves. Slowly add milk and vanilla extract. Set aside. (wet ingredients)
  • In a stand mixer on low speed combine the sugar and oil; mix to combine well.
  • Add the applesauce until mixed through. Then add eggs and egg whites until incorporated.
  • Starting with the dry ingredients, slowly add a little of the dry, then a little of the wet ingredients, alternating between wet and dry until all the ingredients are mixed in.
  • Last step is to add the Greek yogurt and just stir to combine.
  • Pour into the cake pan and transfer to oven.
  • Depending on the pan you use, (I used a 13 x 9-inch pan) bake for 40 minutes or until toothpick inserted comes out clean. Cupcakes will be closer to 25-30 minutes.

1 teaspoon vanilla
1 tablespoon instant decaffeinated coffee
2 (2 1/2-ounce) jars prune baby food
1-ounce semisweet chocolate chips, melted
2 teaspoons almond extract
2 egg whites

Steps:

  • Preheat oven to 350 degrees. Spray 2 round cake pans with non-stick cooking spray and sprinkle with flour. Sift together all the dry ingredients in a large mixing bowl. In a small bowl, mix applesauce, milk, vanilla, coffee, prunes, chocolate, almond extract and egg whites. Fold into the dry ingredients. Bake for 40 minutes.

I have JUST eaten this, I made it out of next to nothing, just things I had in. It is low fat - Skinny Cow Hot Chocolate Powder and Skimmed Milk, no Butter etc... And it tasted great! Makes a 3x8 rectangular tray. Crispy on the outside but moist inside it is like a brownie cake... though not quite as good!

1 cup flour
1/2 cup icing sugar
1 pinch baking powder
5 tablespoons of skinny cow hot chocolate powder
2 eggs
3 tablespoons milk
1 tablespoon water
1/2 cup icing sugar
3 tablespoons of skinny cow hot chocolate powder
1 drop peppermint extract

Steps:

  • Blend flour, 1/2 cup hot chocolate powder and icing sugar together.
  • Beat in the eggs. Add the milk and water (you might need a little extra milk if the mixture is too thick, should be the consistency of an average cake mix.
  • Pour into a tray and bake in the oven on 5 for 15-20 minutes, until you can put a fork into the cake and feel it is firm.
  • In another bowl, or jug, mix 1/2 cup of icing sugar with 3 tablespoons of hot chocolate powder, add a few teaspoons of warm water and stir to make a very light icing syrup, add a drop of peppermint flavouring for that extra kick.
  • Serve both together and enjoy a low in saturated fat dessert, or late night snack.

Steps:

  • Preheat oven to 390 degrees F. (180 C).
  • Grease baking pan with a little bit of the margarine.
  • Mix the rest of the margarine with sugar and 1 whole egg until mixture is unified.
