I grabbed this during my raid of my mother's cookbook shelf on my last trip back to the States. This one comes from a Reader's Digest booklet called 'Attack Diabetes With Food'. I am curious to see how the prunes work in the mixture.

Number Of Ingredients 7

1 lb skinless boneless turkey breast
3/4 cup brown rice or 3/4 cup basmati rice
1/4 cup prune butter (pureed prunes)
1 tablespoon Dijon mustard
salt, to taste
1/2 teaspoon rubbed sage
1/2 teaspoon dried rosemary, minced

Steps:

  • Cut turkey breast into large chunks.
  • Place in food processor and pulse until coarsely ground.
  • Transfer ground turkey into medium bowl.
  • Add rice, prunes, mustard, salt, sage, and rosemary. Stir just to combine.
  • Shape mixture into twelve 2-inch patties.
  • Spray broiler pan with nonstick cooking spray.
  • Preheat broiler.
  • Place patties on pan and broil 4 inches from heat, turning once until cooked through, about 3 minutes each side.

Are you on a Renal diet? Maybe your doctor has told you to restrict sodium for some other reason? Do you miss eating breakfast sausage? I know I did until I found this recipe in the "Kidney-Friendly Comfort Foods" cookbook. Hope everyone enjoys them as much as I do!

1/2 cup onion, finely chopped
2 tablespoons olive oil
2 teaspoons dried sage
1 teaspoon fresh ground black pepper
1 tablespoon sugar or 1 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes
1 pinch ground cloves
1 teaspoon fresh thyme, finely chopped
1 large egg yolk
2 lbs ground lean pork

Steps:

  • Cook onion in the olive oil over moderately low heat.
  • Stir occasionally until onions begin to soften and brown.
  • 8-10 minutes.
  • Cool for 10 minutes.
  • In a small bowl, combine the sage, pepper (red and black), sugar, cloves and thyme.
  • Place the egg yolk, pork, and reserved onion in a large bowl and then add the mixed spices.
  • Mix well.
  • Form into 16 patties, 2 ounces each.
  • Pan fry the patties in a large skillet over medium high heat for 5 minutes on each side or until the internal temperature reaches 160 degrees.

  • In a medium bowl, use your hands to mix the ground pork and the spices. Shape the mixture into eight balls, then press on each ball to form patties, 2 oz each, 1/2-inch thick.
  • Gently press your thumb into the middle of each patty to create a shallow dimple. This helps the patties hold their shape while they cook.
  • Heat the oil in a large (14-inch) nonstick skillet over medium-high heat, about 2 minutes. Swirl to coat.
  • Place the patties on the skillet (you might need to cook them in two batches). Cook them until they are browned and cooked through, about 2 minutes per side. Their internal temperature should reach 165 degrees F. To check with a thermometer, insert the thermometer sideways into the patty, pushing it into the middle.
