Healthy Low Fat Apple and Oatmeal Muffins image

Heathy moist apple oatmeal muffins with a pretty garnish of sliced apple on top. Recipe from Apple & Pear Australia Ltd.

1 1/2 cups quick oats
1 1/2 cups apple juice
2 teaspoons vanilla extract
1 1/2 cups whole wheat flour (or spelt flour)
1/2 cup sugar
2 teaspoons baking powder
2 medium apples, grated
1 teaspoon cinnamon
4 egg whites, beaten to soft peaks
apple, wedges to garnish (with or without peel)

Steps:

  • Soak the oats, apple juice, sugar and vanilla for 30 minutes.
  • Mix in the flour, baking powder, grated apple and cinnamon.
  • Fold in the beaten egg whites; Spoon into 12 muffin tins.
  • Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.
  • Cool in pan for a few minutes, then remove from pan and cool on wire rack.

This is a variation on "Mom's Oatmeal Muffins," posted by Narshmellow. I cut back on the fat and sugar some, and added apples and cinnamon. They came out delicious!

Number Of Ingredients 10

1 1/8 cups whole wheat flour (pastry)
1/8 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup quick oats
1 egg, slightly beaten
1 cup skim milk
3 tablespoons vegetable oil
1 apple, chopped

Steps:

  • Preheat oven to 425 degrees.
  • Mix together the dry ingredients in a big bowl ( this does not include the apples).
  • In a separate bowl, mix the wet ingredients (this also doesn't include the apples).
  • Pour the wet ingredients into the dry, stir until just moist.
  • Add the apples, stir only until they're well distributed.
  • Pour into greased muffin tins, fill almost to the top (these don't rise much).
  • Bake at 425 degrees for 15 minutes.

1 1/2 cups oat bran
1/2 cup whole wheat flour
1/4 cup packed brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup buttermilk
1 egg
1 tablespoon grated orange rind
2 tablespoons orange juice
1 peeled and diced apple
1 cup raisins

Steps:

  • In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
  • Combine buttermilk, egg, orange rind and juice in a separate bowl.
  • Stir wet ingredients into dry ingredients, mixing just until moistened.
  • Stir in apples and raisins.
  • Spoon into greased muffin tins.
  • Sprinkle with wheat germ.
  • Bake at 400 for 18-20 minutes.

1/2 cup brown sugar, packed

Steps:

  • Soak oats in milk for 1 hour.
  • Combine all ingredients in a large bowl.
  • Spoon into a muffin pan that has been lightly greased or sprayed with nonstick spray.
  • Bake at 400 F for 20-25 minutes.
  • Variations: To make Oatmeal Raisin Muffins, Oatmeal Apple Muffins, or Oatmeal Chocolate Chip Muffins, add raisins/chopped apples/chocolate chips to the batter.

⅓ cup tightly packed brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 ½ tablespoons butter, cut into small pieces
2 cups peeled and finely chopped apples
1 teaspoon fresh lemon juice
¾ cup white sugar
½ cup honey
½ cup buttermilk
½ cup oil
2 large eggs
2 teaspoons vanilla extract
1 cup quick-cooking oats
2 cups whole wheat flour
2 ½ teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
  • Toss apples with lemon juice in a large bowl. Mix in sugar, honey, buttermilk, oil, eggs, and vanilla until combined. Stir in oats.
  • Combine whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt in a smaller bowl.
