Low Carb Tastes Just Like Philly Cheesesteak image

I made this last night for my dad because he is on the Atkins diet. He said it was so great (I tried a bit--yummy!) It is easy too, and isn't egg-based--it has A LOT of meat. It doesn't look the best, but tastes awesome! I didn't measure out the ingredients when I was making this--these are estimates. Do with this however much you want!

Number Of Ingredients 7

2 slices Steak-ums
1/2 onion (about 1/2 c.)
1 tablespoon olive oil
1/4 cup salsa
1/2 cup Egg Beaters egg substitute (or that many eggs)
1/3 cup cheddar cheese
pepper

Steps:

  • Heat oil in a medium skillet.
  • Chop onion and add to oil, cook until almost transparent (over med heat), about 4 minute.
  • Add steak-ums, chopped up; cook until cooked.
  • Remove from heat and drain extra oil and drippings, return to stove top, add salsa, cook for another minute.
  • Add egg beaters and cheddar cheese, mix and cook until thoroughly cooked-- about 5 minute.
  • Sprinkle with fresh ground pepper and serve hot!

perfect for low carb diets, this is a double bonus, as it cooks in the crockpot all day so you can come home to a great meal.

2 lbs chip steak or 2 lbs cube steaks, cut into strips
1 green pepper, cut into strips
1 red pepper, cut into strips
1 onion, thinly sliced
1/2 lb mushroom, sliced more to taste
1 tablespoon olive oil
3/4 teaspoon kosher salt
3/4-1 teaspoon fresh ground pepper
1/4 lb pepperoni, thinly sliced
8 ounces provolone cheese, thinly sliced

Steps:

  • saute mushrooms in olive oil until softened and light brown, about 5 minutes.
  • add to crockpot along with the rest of the ingredients, except the provolone.
  • cook on low for 6 hours.
  • stir well, add to 6 bowls.
  • cover with provolone and add some cooking juices to each bowl to melt the cheese.

  • Before cooking, go ahead and prep the onion and peppers by cutting them into thin slices. Once you start cooking, things will go fast!
  • Bring a large skillet to medium heat. When heated, spray with cooking spray and add steak. Season with onion powder and salt and pepper to taste. Cook for 2-3 minutes, then flip steak and cook for another 2 minutes.
  • Add in the mushrooms and Worcestershire sauce. Add in more salt, pepper, and onion powder if desired at this time as well (the seasonings before hit the steak, this will hit the veggies). Cook for another 2-3 minutes or until everything is cooked to desired consistency.
