LOW CARB "DOUGHNUT" MUFFINS

Low Carb "Doughnut" Muffins from Laura Dolson, your Guide to Low Carb Diets. These muffins are meant to taste like doughnuts. I found this recipe on a low carb site.

1 cup flax seed
1 cup almond meal
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 teaspoons nutmeg
1 teaspoon cinnamon
1 cup artificial sweetener (I use about 1/3 cup but am writing the recipe as written)
1/2 cup butter, melted (again about 1/3 cup)
4 eggs, beaten
1/2 cup buttermilk, plus
2 teaspoons buttermilk
2 tablespoons butter, melted
1/2 cup powder Splenda sugar substitute
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350.
  • Butter muffins pan.
  • Mix flax meal, almond meal, baking powder, salt, nutmeg, cinnamon and sweetner well (If using dry sweetner add in this step, if using liquid sweetner add in next step).
  • Add eggs, 1/2 cup melted butter, buttermilk and sweetner.
  • Mix well.
  • Fill muffin cups a bit over half way.
  • Bake for about 20 minutes, until the tops are golden brown.
  • Cool until you can handle them, then dip the tops in the remaining melted butter followed by the splenda/cinnamon mixture.
  • Note: The last step can be omitted altogether as they are quite sweet enough.

These individual sugar-dipped cupcakes are baked not fried but taste just as delicious and are best straight from the oven

140g golden caster sugar , plus 200g extra for dusting
200g plain flour
1 tsp bicarbonate of soda
100ml natural yogurt
2 large eggs , beaten
1 tsp vanilla extract
140g butter , melted, plus extra for greasing
12 tsp seedless raspberry jam

Steps:

  • Heat oven to 190C/170C fan/gas 5. Lightly grease a 12-hole muffin tin (or use a silicone one). Put 140g sugar, flour and bicarb in a bowl and mix to combine. In a jug, whisk together the yogurt, eggs and vanilla. Tip the jug contents and melted butter into the dry ingredients and quickly fold with a metal spoon to combine.
  • Divide two-thirds of the mixture between the muffin holes. Carefully add 1 tsp jam into the centre of each, then cover with the remaining mixture. Bake for 16-18 mins until risen, golden and springy to touch.
  • Leave the muffins to cool for 5 mins before lifting out of the tin and rolling in the extra sugar.

  • Preheat oven to 350°F. Line muffin pan with mini muffin liners. In a small bowl, combine cinnamon sugar coating ingredients and whisk to evenly mix. Set aside.
  • In a large bowl, whisk together almond flour, sweetener, baking powder, cinnamon and nutmeg. In a separate bowl, whisk together eggs, vanilla, butter and milk.
  • Add about 1 tbsp batter to each muffin mold (filling them about 2/3 full). You do not want to overfill because it will cause the tops of the muffin to spread out and flatten. Bake for about 15 minutes or until edges of the muffins turn a dark brown and center is fully cooked.
