2 tablespoons extra-virgin olive oil
1 medium yellow onion, chopped
1 (8 ounce) package sliced cremini mushrooms
2 celery stalks, thinly sliced
2 carrots, thinly sliced
2 tablespoons minced garlic
2 teaspoons chopped fresh sage
¼ teaspoon cayenne pepper
1 dried bay leaf
2 pounds bone-in chicken thighs, skin removed
8 cups unsalted chicken broth
½ teaspoon salt
½ teaspoon ground pepper
2 cups chopped stemmed lacinato kale
2 tablespoons fresh lemon juice

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add onion, mushrooms, celery and carrots; cook, stirring occasionally, until the vegetables start to brown slightly, about 6 minutes. Stir in garlic, sage, cayenne (if using) and bay leaf; cook, stirring constantly, for 1 minute. Stir in chicken, broth, salt and pepper.
  • Bring the mixture to a boil over medium-high heat. Reduce heat to medium; simmer, undisturbed, until the chicken is fork-tender, about 20 minutes. Transfer the chicken to a plate to cool slightly, about 5 minutes.
  • Meanwhile, stir kale into the soup; return to a simmer over medium heat. Simmer, undisturbed, until the kale is tender, about 5 minutes. Remove from heat.
  • Remove and discard bones from the chicken; shred the chicken. Stir lemon juice and the shredded chicken into the soup.

3 cups broccoli florets
2 cups cauliflower florets
2 medium zucchini (sliced)
1 large red onion (diced)
2 14.5 oz canned diced tomatoes, in juice
4 cloves garlic minced
2 large carrots (peeled & diced)
1 large red bell pepper
1 large green bell pepper
3 tbsp tomato paste
2 bay leaves (fresh or dry)
2 tsp Italian seasoning

Steps:

  • In a large pot drizzle in the olive oil, and turn the heat to medium
  • Once the oil is nice & hot, add in the onions and cook for 2 minutes.
  • Add in the garlic, and cook for about 1 more minute.
  • Add in the carrots, and bell peppers. Stir and cook for 3 minutes.
  • Now add in the tomato paste, and pour in the tomatoes with juice, and broth.
  • Stir the ingredients, then add in the bay leaves and seasonings.
  • Simmer for 8 - 10 minutes.
  • Toss in the broccoli , cauliflower, and zucchini.
  • Simmer until tender.
  • Fish out the bay leaves.
  • Serve & enjoy!

4 bone-in chicken thighs, skin removed

1 (32 fluid ounce) container chicken stock

2 cups chopped fresh green beans
2 cups frozen riced cauliflower, thawed and drained
2 cups finely chopped broccoli
½ (8 ounce) can tomato sauce
2 teaspoons chicken soup base (such as Better Than Bouillon®)
1 large bay leaf

Steps:

  • Heat oil in a 6-quart Dutch oven over medium-high heat. Add chicken thighs and sear, 2 to 3 minutes per side. Remove and set aside.
  • Add carrots and celery to the pan. Reduce heat to medium and cook until softened, about 10 minutes. Add onions and cook until translucent, about 5 minutes. Reduce heat to low and add chicken stock, water, green beans, riced cauliflower, broccoli, tomato sauce, soup base, bay leaf, salt, and pepper. Add chicken thighs and simmer until no longer pink at the bone and the juices run clear, 30 to 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

500 g skinless chicken breasts
3 carrots, chopped
4 celery, chopped
1 parsnip, chopped
1 leek, chopped
1 cup green beans, chopped
2 tablespoons parsley, chopped finely
1 garlic clove, crushed
3 -4 tablespoons chicken stock
8 cups water
salt & pepper

Steps:

  • Bring water to boil.
  • In the meantime, cut up all the vegetables into small cubes.
  • Cut the chicken into 1cm cubes.
  • Add the vegetables and garlic and stock and boil on high heat for 5 minutes, reduce heat and simmer for 15 minutes.
