The Ultimate Healthy Banana Muffins image

The ultimate healthy banana muffins are incredibly moist, dairy free and naturally sweetened with ripe bananas and honey. This easy, healthy banana muffin recipe comes together in one bowl in just 30 minutes with options to add a delicious crunch from walnuts! The perfect healthy breakfast or snack that's freezer-friendly, too.

3 VERY overripe bananas, mashed (about 1 1/3 cup mashed banana, make sure they are almost all the way brown)
⅓ cup honey
1 large egg, at room temperature
½ tablespoon vanilla extract
¼ cup olive oil
1/4 cup unsweetened vanilla almond milk (or milk of choice)
Dry ingredients
1 ¾ cup whole wheat pastry flour*
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Mix-ins
½ cup chopped walnuts, plus ¼ cup chopped walnuts for sprinkling on top of muffins

Steps:

  • Preheat the oven to 350 degrees F. Line a muffin pan with liners and spray the inside of the liners to prevent sticking.
  • In a large bowl, mix together mashed bananas, honey, egg, vanilla, olive oil and milk until well combined. Add in whole wheat pastry flour, baking soda, cinnamon and salt and use a wooden spoon to mix together until the batter is just combined. DO NOT overmix. Fold in ½ cup chopped walnuts.
  • Divide batter evenly into muffin liners, sprinkle each muffin with chopped walnuts. Bake for 20-25 minutes or until the toothpick comes out with just a few crumbs attached.
  • Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.

1 1/4 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1/2 teaspoon kosher salt
3 very ripe medium bananas, mashed (about 1 1/4 cups)
3/4 cup sugar
1/2 cup plain soy milk yogurt
1/2 cup vegetable oil
1 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a 12-cup muffin tin with paper liners and set aside. Whisk the flour, baking soda and salt together in a medium bowl. Whisk the bananas, sugar, yogurt, oil and vanilla together in another medium bowl. Gently fold the wet ingredients into the dry ingredients with a rubber spatula until the batter just comes together (it's okay if there are lumps).
  • Spoon about 1/4 cup of the batter into each lined muffin cup and bake until a tester inserted in the center comes out clean, about 30 minutes. Cool the muffins in the pan on a wire rack for 30 minutes, then remove muffins from pan and transfer to a rack to cool completely. Store the muffins in an airtight container at room temperature for up to 5 days.

1 cup white sugar
½ cup brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground nutmeg
1 teaspoon salt
2 cups mashed ripe bananas
1 cup canola oil
1 cup coconut milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.
  • Mix flour, white sugar, brown sugar, cinnamon, baking powder, baking soda, nutmeg, and salt together in a large bowl. Stir bananas, canola oil, and coconut milk together in a separate bowl; mix banana mixture into flour mixture until just combined. Fill muffin cups with batter.
  • Bake in the preheated oven until a tooth pick inserted in the center of a muffin comes out clean, 30 to 35 minutes.

Goes great with coffee (YUM!) **After trying these after they cooled, they are VERY moist. Still very tasty, but moist. I'll play with the recipe to correct that a little. I am new to the vegan scene, so suggestions are welcome! ;0)**

2 mashed bananas
1 tablespoon unsweetened applesauce
1 teaspoon vanilla
1/2 cup sugar
1 dash salt
1 teaspoon baking powder
1 tablespoon flax seed meal
2 tablespoons water
2 tablespoons rice milk
1/2 cup whole wheat flour
1/4 cup all-purpose flour

Steps:

  • Mix the flours, salt, and baking powder in a small bowl and set aside.
  • Mix the water and flax seed meal together in a small bowl and set that aside.
  • In a larger bowl, mash the bananas.
  • Add the applesauce, vanilla, sugar, flax seed mixture, and milk. Stir well.
  • Add the dry ingredients to the wet and mix, just until combined.
  • Divide batter into a muffin pan that has been sprayed with non-stick cooking spray.
  • Bake at 350 for about 25 minute.

1/4 cup egg substitute
2 tablespoons unsweetened almond milk
3/4 cup white flour
1/4 cup chopped pecans (any nut you prefer)

Steps:

  • Preheat the oven to 350 degrees and spray muffin pan with non-stick cooking spray.
  • Place all the ingredients but flour and pecans in a medium-sized mixing bowl and mix until the batter is smooth.
  • Add flour to the wet ingredients. Once the batter is smooth add chopped pecans.
  • Cook for 10 minutes or until golden brown. Oven temperature might vary.
