1/2 c brown sugar
3 T bourbon
1/4 c low sodium soy sauce
2 T fresh lime juice
2 t grated, peeled ginger
1/4 t fresh ground pepper
2 garlic cloves, crushed
4 (6 oz) salmon fillets about 1 in thick
OR
4 T brown sugar
4 T bourbon
3 T low sodium soy sauce
1 T grated & peeled fresh ginger
2 T fresh lime juice
1/4 t fresh ground pepper
3 garlic cloves, minced
4 (7 oz) salmon fillets

Steps:

Marinate 12 hrs or overnight, turning once.

This marinade is loosely based on the salmon I had at Longhorn Steak House. It is absolutely the best marinade I have found for salmon.

2 tablespoons Bourbon
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons lime juice
1 teaspoon minced garlic

Steps:

Mix all ingredients together.
Pour over salmon and let chill for 2 hours.
Grill or broil salmon as desired.

ACCORDING TO LONGHORN PREP COOK - no quantities given so estimated for 4 salmon

1/3 c Canola oil
1/3 t powdered or 1 t minced Garlic
1/2 t Ground pepper
1/8 Morton salt
1/3 c Brown sugar
1/3 - 1/2 c Soy sauce

Steps:

Mix all ingredients together. Pour over salmon, seal in plastic bag or dish. Refrigerate & let chill for 12 hrs or overnight.
