ROASTED, SMASHED AND LOADED POTATOES



Roasted, Smashed and Loaded Potatoes image

1 pound small red bliss potatoes
6 tablespoons garlic-infused olive oil, divided
Kosher salt and freshly cracked black pepper
1/2 cup finely grated Parmigiano-Reggiano
1/2 cup sour cream
1/4 cup sliced scallions

Steps:

  • Preheat the oven to 450 degrees F. Adjust the oven racks to the top and bottom positions.
  • Place the potatoes on a sheet pan, pour 3/4 cup water over the potatoes and cover tightly with foil. Bake on the bottom rack until tender, about 30 minutes. Remove from the oven, drain any remaining water and let rest 8 minutes.
  • Drizzle 3 tablespoons oil over the potatoes, making sure they are evenly coasted. Space the potatoes evenly on the sheet pan and, using a potato masher, flatten the potatoes to about 1/2 inch thick (about 1/2 the length of your thumb to the first joint). Sprinkle with salt and pepper. Drizzle the remaining 3 tablespoons olive oil over the potatoes and roast on the top rack for 15 minutes. Remove from the oven and sprinkle with the cheese. Roast on the bottom rack until golden brown, about 20 minutes. Remove from the oven and top with the sour cream and scallions. Serve immediately.

2 whole garlic bulbs
1 tablespoon canola oil
8 bacon strips
3 green onions, chopped
4 pounds small red potatoes
2 cups sour cream
1-1/2 cups shredded cheddar cheese, divided
1/3 cup butter, softened
1/4 cup 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
Minced chives, optional

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off garlic bulbs. Brush with oil. Wrap each bulb in heavy-duty foil., Bake at 425° for 30-35 minutes or until softened. Cool for 10 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. In the same skillet, cook onions in reserved drippings for 2 minutes or until tender; set aside. Crumble bacon., Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and transfer to a large bowl., Mash potatoes. Squeeze softened garlic over top. Stir in the bacon, onions with drippings, sour cream, 1 cup cheese, butter, milk, salt and pepper; combine. Spoon mixture into a greased 13x9-in. baking dish; top with remaining cheese., Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted. Garnish with chives if desired.

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.

Here's a new twist on new potatoes. I've been seeing and hearing about smashed potatoes and decided to try my hand at it. I was not disappointed. I watched a video some time ago by Rachael Ray (I think) that inspired me to make these. Hers were simply smashed, seasoned and fried. I decided to "load" mine. These were a big hit for lunch today with our Slow Cooker Pulled Pork BBQ sammies. Hope you enjoy! Photo's are mine.

4 medium new red potatoes
2 or 3 tablespoon(s) white truffle olive oil, enough to coat bottom of pan
- kosher salt to taste, or a coarse salt
- ground pepper to taste
- sharp chedder, shredded
4 slice(s) fried bacon, crumbled, optional
- sour cream, optional
- chives

Steps:

  • Boil potatoes until just tender, about 15 to 20 minutes depending on size of potato; drain water off.
  • Heat white truffle oil over a medium heat in a 10-inch or larger frying pan until hot.
  • With the back of a spatula, press potatoes flat being careful to not flatten to much (be careful in handling, you don't want to burn your hands); transfer potato patties to frying pan. Sprinkle with salt and pepper to taste.
  • Fry to a golden brown on both sides (flipping only once). Once you flip, season with salt and pepper again.
  • Place about a tablespoon of shredded cheese on each smashed potato. Once cheese begins to melt, transfer to serving plate. If desired, add bacon and a dollop of sour cream; spinkle with chives. Serve!

3 pounds potatoes, or more to taste, peeled and cut into chunks
½ cup butter
1 (16 ounce) container sour cream
8 ounces shredded Cheddar cheese
½ chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
  • Place potatoes into a large pot of lightly salted water; bring to a boil, reduce heat to medium-low, and simmer until tender, about 20 minutes. Drain potatoes and return them to the pot.
  • Mash butter into the potatoes with a potato masher or electric hand mixer until melted completely into the potatoes; add sour cream and continue to beat until combined. Crumble bacon into the potato mixture; add Cheddar cheese and chives and stir. Season potatoes with salt and pepper.

3 lbs. all-purpose potatoes, peeled and cubed
1-1/2 cups shredded cheddar cheese (about 6 oz.), divided
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 cup sour cream
3 green onions, finely chopped (optional)
6 slices bacon, crisp-cooked and crumbled

Steps:

  • Preheat oven to 375 degrees. Spray 2-quart shallow baking dish with nonstick cooking spray; set aside.
  • Cover potatoes with water in 4-quart saucepot; bring to a boil over high heat. Reduce heat to low and cook 10 minutes or until potatoes are tender; drain and mash.
  • Stir in 1 cup cheese, Hellmann's® or Best Foods® Real Mayonnaise, sour cream, green onions and 4 strips crumbled bacon. Turn into prepared baking dish and bake 30 minutes or until bubbling.
  • Top with remaining 1/2 cup cheese and bacon. Bake an additional 5 minutes or until cheese is melted. Garnish, if desired, with additional chopped green onions.

  • Heat oven to 350°.
  • Mix first six ingredients in mixer on medium speed until smooth and creamy.

1kg new potatoes
3 tbsp olive oil

Steps:

  • Cook the potatoes in a pan of boiling salted water for 15 mins, or until cooked through but not falling apart. Drain well. Drizzle 1½ tbsp oil into a shallow roasting tin or baking tray (about 30 x 20cm - a Swiss roll tin works well). Tip the potatoes into the tin and toss in the oil. Squash the potatoes down using a potato masher or fork - the smashed potatoes should fill the tray and be joined at the edges like jigsaw pieces. Will keep chilled for up to a day.
  • Heat the oven to 190C/170C fan/ gas 5. Drizzle the potatoes with the remaining oil and season with sea salt. Bake for 40 mins until deeply golden and crunchy.

  • Wash your potatoes, if necessary, and poke a few times with a knife. Place on to a microwave safe plate and microwave until mostly cooked, about 10 minutes. (You can also boil them to this point, if you prefer. Allow to dry before placing in skillet).
  • Preheat oven to 425° Place 1 Tbsp. oil in bottom of skillet and brush a bit up the side. Sprinkle the bottom of the pan with 1 tsp. of kosher salt. Place pre-cooked potatoes in to skillet and place in the oven for about 10 minutes, or until very tender. Remove skillet from oven and, using a potato masher, smash each of the potatoes, until quite thin. Place a small pat of butter on top of each potato and season with salt and pepper. Brush the outside of the potatoes with the remain 1/2 Tbsp. of oil. Return to the oven for another 5-10 minutes or so, or until they crisp up. Remove from oven again and top with crumbled bacon and shredded cheese. Return to the oven until the cheese is melted and bubbly.
