This recipe is from the La Leche League International Cookbook. I always have this in the frige for whipping up fabulous biscuits. Look for recipes to use this mix by searching for "LLL Baking Mix". If your concerned about a milk allergy leave out the milk powder. Recipe may be doubled.

8 cups flour (white, whole wheat, whole wheat pastry or Cornell Mix)
5 tablespoons baking powder
1 tablespoon salt
1 cup powdered milk
1 1/2 cups butter or 1 1/2 cups fat
1/2 cup nutritional yeast (optional)

Steps:

  • Mix dry ingredients.
  • Cut in oil or butter with fingers to make fine crumbs.
  • Store in a tightly covered container in refrigerator.

2 cups pecans, toasted and finely diced
4 cups unbleached white flour
1 1/2 cups whole wheat flour
2 cups cornmeal (pref. stone-ground rather than degerminated)
1/2 cup buckwheat flour
1/2 cup wheat germ
1 1/2 cups dry buttermilk
1/2 cup soy flour
4 tablespoons baking powder
2 tablespoons baking soda
2 tablespoons sea salt
1 1/4 cups canola oil (or some other mild tasting vegetable oil)

Steps:

  • In a 4-quart mixing bowl, combine all ingredients except the canola oil.
  • Stir oil into dry ingredients and mix well.
  • Store in large air-tight container or several smaller ones in fridge or freezer.

2 1/4 cups flour
1/3 cup nonfat dry milk powder
1 tablespoon sugar
1 tablespoon double-acting baking powder
1 teaspoon salt
6 tablespoons vegetable shortening

Steps:

  • In a food processor or large mixing bowl combine all the dry ingredients.
  • Pulse to mix the ingredients or turn your mixer on low to mix well, 1 T at a time add the shortening-mixing well after each addition.
  • This will keep for 6 weeks in your fridge, 4 weeks on the shelf.
  • To make a pourable crust combine 2/3 cups baking mix with 2 eggs and 1 cup of milk.
  • Mix well.
  • For biscuits, muffins or pancakes follow the directions in recipe#16813.

3 cups La Leche League baking mix (recipe available at Recipe Zaar)
3 -4 tablespoons brown sugar or 3 -4 tablespoons melted honey
1 cup milk or 1 cup water
1 egg
3 -4 tablespoons melted butter or 3 -4 tablespoons oil
1 cup fruit (optional)
1/2 cup chopped nuts or 1/2 cup seeds (optional)
1 tablespoon cinnamon (optional)

Steps:

  • Beat together sugar, milk, melted butter and egg.
  • Stir into Mix just until moisted.
  • Fold in fruit and/or nuts.
  • Fill greased muffin cups and bake at 425 for 20 minutes.

This is from the La Leche League International Cookbook. When I am in a rush I just cut them into squares so I don't have to roll them out more than once. When the mood hits I will use whatever cookie cutters strike my fancy...my daughters love when I do that. I enjoy experimenting with adding different herbs, spices and spice mixes. Here's how I got my daughters to eat salmon salad sandwiches (once thought to be an impossible task!). I added Lemon Mrs. Dash and dry dill to the biscuit mix, then cut them out with an angel cookie cutter. I filled the cooked biscuits with a salmon and mayonnaise mixture and called them "Flying Pink Angel Sandwiches". They are now a favourite!

  • Roll or pat out to 1/2 inch thickness and cut into biscuits.
