1 pinch garlic powder, or to taste

1 (14 ounce) can artichoke hearts, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix Parmesan cheese, mayonnaise, and garlic powder together in a bowl.
  • Arrange chicken breasts in a 9x13-inch baking dish; top with artichoke hearts and crimini mushrooms. Spread cheese mixture over the artichoke and mushroom layer.
  • Bake in the preheated oven until the chicken no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 boneless skinless chicken breast halves (6 ounces each)
3 teaspoons olive oil, divided
1 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1/2 teaspoon pepper
2 cans (14 ounces each) water-packed artichoke hearts, drained and quartered
1 medium onion, coarsely chopped
1/2 cup white wine or reduced-sodium chicken broth
2 garlic cloves, chopped
1/4 cup shredded Parmesan cheese
1 lemon, cut into 8 slices
2 green onions, thinly sliced

Steps:

  • Preheat oven to 375°. Place chicken in a 15x10x1-in. baking pan coated with cooking spray; drizzle with 1-1/2 teaspoons oil. In a small bowl, mix rosemary, thyme and pepper; sprinkle half over chicken., In a large bowl, combine artichoke hearts, onion, wine, garlic, remaining oil and remaining herb mixture; toss to coat. Arrange around chicken. Sprinkle chicken with cheese; top with lemon slices., Roast until a thermometer inserted in chicken reads 165°, 20-25 minutes. Sprinkle with green onions.

8 ounces uncooked penne pasta
1 cup cubed fully cooked ham
2 teaspoons minced garlic
2 tablespoons olive oil
3/4 pound cooked chicken breast, cut into strips
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 jar (7-1/2 ounces) marinated artichoke hearts, drained and chopped
1/4 cup chopped seeded plum tomato
1 jar (15 ounces) Alfredo sauce
1 cup milk
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. In a large skillet, saute the ham and garlic in oil until garlic is tender. Add the chicken, spinach, artichokes and tomato; cook and stir until heated through. Stir in the sauce and milk; bring to boil. Reduce heat. Drain pasta; stir into sauce and heat through. 1 teaspoon olive oil
1 teaspoon minced garlic

  • Bring a large pot of water to a boil. Cook pasta in boiling water until done. Drain, and set aside.
  • In a large saute pan, heat olive oil over medium high heat; brown the chicken and garlic in oil (about 5 minutes). Remove from the pan, and set aside.
  • Pour the chicken broth into the pan; then add the broccoli and tomato, and cook for about 5 minutes. Stir in the artichoke hearts, mushrooms, red bell pepper, cooked chicken, and pasta; cook for 3 to 5 more minutes, or until hot. Season to taste with salt and pepper.
  • Transfer to a serving bowl, and top with Parmesan cheese and parsley. Serve.

1 (12 ounce) jar marinated artichoke hearts, undrained
2 garlic cloves, minced
6 chicken breasts
1 (10 1/2 ounce) can cream of chicken soup, undiluted
8 ounces sour cream
1/2 cup shredded mozzarella cheese
1/4 cup parmesan cheese
1/4 cup chablis or 1/4 cup water
1/4 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Chop and measure all ingredient out first cooks up quickly!
  • Drain artichokes pouring liquid into a large non-stick skillet and bring to a boil over medium high heat.
  • Add chicken to skillet, cook 10 minutes on each side turning once.
  • Remove chicken
  • Combine soup, sour cream, mozzarella cheese, wine, salt and pepper into skillet, cook until bubbly.
  • Return chicken to skillet, cover and continue cooking over medium heat 5-10 minutes, until chicken is tender.
  • Add artichokes, cover and cook 2 minutes more until thoroughly heated, then sprinkle with Parmesan cheese and serve over Angel Hair pasta or flat noodles!

8 oz boneless skinless chicken breast (sliced)
1 tablespoon olive oil
8 oz frozen artichoke hearts (thawed, drained and chopped)
1/4 teaspoon course ground pepper
1/4 teaspoon garlic salt
1/4 teaspoon dried thyme
1 tablespoon dried shallots
1/4 cup kale pesto
1/3 cup pasta water
1/4 cup grated parmesan cheese (plus additional for topping)
2 tablespoons Greek yogurt
1/2 cup part-skim ricotta cheese

Steps:

  • Cook the pasta according to the package directions, omitting salt.
  • While the pasta is cooking, heat the olive oil in a sauté pan. Add chicken and sauté until browned, breaking into bite-sized pieces as it cooks. Add the artichoke hearts, spices, and pepper; sauté 2-3 minutes until artichoke hearts are warmed. Keep warm over low heat.
  • Drain the pasta, reserving 1/2 cup of water. Add pasta to chicken and artichoke mixture in the sauté pan; increase heat to medium-low and mix together. Add 1/3 cup pasta water, 1/4 cup kale pesto, ricotta, parmesan & yogurt. Stir until everything is incorporated.

This is a great meal for dinner parties because it can be prepped in advance and then placed in the oven when ready. If feeding a crowd, use a bigger baking dish and double the recipe. If you are doubling the recipe in one dish you may not need to double the amount of oil. Try adding just enough oil to cover the chicken.

1 cup chicken stock
2 garlic cloves, minced

1 (12 ounce) bag frozen artichoke hearts, 2 cups (defrosted or not just may need to cook a little longer if you add them frozen)
2 tablespoons parmesan cheese, shredded (more to taste)
1 tablespoon unsalted butter
2 tablespoons olive oil
1 tablespoon parmesan cheese, shredded (more to taste)
1/4 teaspoon salt
1 lb linguine, cooked and drained

Steps:

  • Boil pasta according to directions.
  • In the meantime, melt the 1/4 cup of butter with the 1/4 cup of oil in a small saucepan over medium heat. Add the flour and stir until smooth, about 3 minutes. Blend in the stock, stirring until thickened, about 1 minute.
  • Reduce heat to low. Add the garlic, parsley, lemon juice, salt and pepper. Cook 5 minutes, stirring constantly.
  • Blend in the artichokes and the 2 tbsp of parmesan cheese.

1 lb box (454g) of penne or other pasta (cooked until al dente, then drained and tossed with 1 tablespoon butter.)
2 tablespoons olive or vegetable oil
1 pound chicken breasts ((454g))
Salt and pepper to taste
1 small onion diced
1 red bell pepper diced
4 cloves garlic finely minced
¾ cup chicken broth ((6oz, 170g))
1 ½ cup cream or half and half ((12oz, 340g))
¾ cup finely grated parmesan cheese ((3oz, 85g))
1 batch Easy Marinated Artichoke Hearts drained and chopped (*see note)
1 cup chopped fresh parsley ((1oz, 28g))
1 tablespoon lemon juice or to taste
Salt and pepper to taste

Steps:

  • For quicker, more even cooking, slightly flatten breasts with a kitchen mallet. If they are very thick, slice them in half horizontally before flattening. Season with salt and pepper.
  • Heat a skillet over high heat. When pan is hot, add 1 tablespoon oil.
  • When oil is hot, put chicken breasts in pan and cook until golden brown on both sides and cooked through. Remove chicken from pan and cut into slices.
  • Add remaining tablespoon oil to pan. Add onions and cook until softened.
  • Add red bell pepper and cook until almost softened.
  • Add the garlic. Stir, and cook for about 1 minute.
  • Deglaze pan with broth, scraping bottom to release any bits sticking to the bottom of the pan.
  • Add cream and bring to a simmer. Allow to simmer for about 2 minutes. Turn off heat.
  • Slowly add parmesan while whisking and whisk until melted and incorporated into sauce.
  • Gently stir in chopped artichoke hearts and parsley.
  • Add lemon juice to taste. You may not need the whole tablespoon if the artichoke hearts are lemony enough.
  • Salt and pepper to taste
  • Toss sauce with sliced chicken and hot buttered pasta. Serve.
