CHERRY-LIME RICKEY

2 cups pitted fresh or frozen cherries, plus pitted frozen cherries, for serving
1 cup sugar
3/4 cup frozen limeade concentrate (half of a 12-ounce can)
1/2 cup fresh lime juice, plus lime wheels, for serving
Seltzer, for serving, optional

Steps:

  • Combine the cherries, sugar and 1 cup water in a medium saucepan over high heat. Bring to a boil and reduce to a simmer. Carefully smash the cherries with a potato masher, then simmer the mixture until slightly reduced and dark red, about 10 minutes. Let cool for 10 minutes.
  • Strain the mixture through a strainer into a heatproof container, pressing on the cherry solids to extract all the juice. There should be about 1 3/4 cups of syrup. Let cool for 30 minutes.
  • Combine the cherry syrup with the limeade and lime juice in a pitcher and stir well. There will be about 3 cups total.
  • To serve: Either stir in 3 cups water if you want a still drink, or mix equal parts of the drink mix with seltzer in a glass. Serve over ice with frozen cherries and lime wheels.

Steps:

  • Prepare simple syrup by boiling 1 cup sugar and 1 cup water until sugar dissolves.
  • Cool.
  • Add lime juice.
  • Add bitters to taste.
  • If desired tint a delicate green color.
  • Pour over ice in tall glasses.
  • Add corbonated water.
  • Garnish with thin slices of oranges or a cherry.

Steps:

  • Gather the ingredients.
  • In a pitcher or ​a measuring cup with a spout, mix the lime juice and simple syrup.
  • Fill 4 glasses with ice.
  • Divide the sweetened lime juice mixture between the glasses (about 3 ounces each).
  • Fill the rest of the glass with seltzer water (about 3 ounces).
  • Stir with a swizzle stick or a long spoon.
  • Garnish with a lime wedge or two.

  • Combine the lime juice and chamomile simple syrup in a large (16- to 18-ounce) tumbler and stir to combine. Taste and add more lime juice or syrup, if you'd like.

3 ounces gin
1 cup crushed ice

Steps:

  • Put the cherries, lime, and sugar into a large rocks glass. Muddle the fruit and sugar by pressing them with a pestle or a wooden spoon until juicy and fragrant. Add the gin and crushed ice. Cover with a cocktail shaker and shake vigorously, or stir, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.) Serve.

Juice of 1/2 lime
2 ounces Grape Simple Syrup, recipe follows
Ginger ale or sparkling water, for finishing
1/2 cup grape jelly

Steps:

  • Combine the lime juice and Grape Simple Syrup in a highball or wine glass. Top off with some ginger ale or sparking water. Add ice, then stir and serve immediately.
  • Combine the jelly and 1/2 cup water in a medium saucepot. Bring to a simmer over medium-low heat and stir until the jelly is dissolved. Let simmer until syrupy, 3 to 4 minutes. Remove from the heat and cool completely.

2 tablespoons lime juice
2 tablespoons orange juice
4 drops orange or lemon bitters
1 cup club soda, chilled
Optional: Orange peel and fresh mint leaves

Steps:

  • Fill 2 tall glasses three-fourths full with ice. Add half the simple syrup, lime juice, orange juice and bitters to each glass. Top each with 1/2 cup club soda; stir. Garnish as desired.
