HEALTHIER EASY SUGAR COOKIES

Healthier Easy Sugar Cookies image

I love this recipe. I could eat at least ten in one sitting which is why I exchanged some butter with non-fat plain yogurt. They still taste great and I feel a lot better about eating so many.

FAT FREE SUGAR COOKIES THAT WORK!

Fat Free Sugar Cookies That Work! image

I HAVE BEEN LOOKING FOR A GOD FAT FREE COOKIE RECIPE AND I FOUND IT!! LOOK NO MORE!these don't necessarily have to be sugar cookies that you are making, these would probably work with molasses, cinnamon, cloves and ginger for a gingersnap or cocoa for a chocolate fudge cookie.

Time 30m

Yield 10 cookies, 10 serving(s)

Number Of Ingredients 9

2/3 cup whole wheat flour (I used a mixture of this and whole wheat pastry flour)
1/2 teaspoon cream of tartar
1/4 teaspoon baking soda
1/8 teaspoon salt, eyeball it
3 tablespoons Splenda sugar substitute, for baking large ones
8 -9 tablespoons fat-free buttermilk
1 tablespoon plain fat-free yogurt
1 1/4 teaspoons vanilla extract
2 teaspoons Butter Buds or 2 teaspoons any other fat free butter flavoring

Steps:

  • Preheat oven to 450°F.
  • combine the flour, baking soda, cream of tartar, and salt in a large bowl. mix throughly with a fork, slightly fluffing the flour to create mild pockets of air in the mixture.
  • Add Splenda and mix again.
  • Add buttermilk (1 tbs at a time), fat free plain yogurt, vanilla and butter flavoring. SOFTLY AND GENTLY mix with a spoon and incorporating all the ingredients together until everything is mixed.
  • bake for about 15-20 minutes until the bottoms are browned (but not burnt) and they look done. (I have a convection oven so times may vary).
  • Note: DO NOT OVER MIX, however do not undermix. I do not know the outcome that this may have, but I have a feeling that it isn't very good!

Time 20m

Yield 13-16 cookies, 13-16 serving(s)

Number Of Ingredients 5

2 7/8 ounces old fashioned oats
2 teaspoons low-fat soy flour
2 teaspoons buckwheat flour
1 teaspoon baking powder
1 (1 g) package artificial sweetener, to taste i use stevia

Steps:

  • It is very essential to use soy flour as it plays important role in thickening the mixture, and the buckwheat flour makes the mixture more dense *they have unique bonding properties).
  • If you don't have buckwheat flour, than you can use 1 egg white instead, but do use soy flour, it is irreplaceable and easy to obtain.
  • Mix the oats, flour's & baking powder.
  • Add at least 50ml (1.5 oz) warm water to start with, and mix until very thick batter is made, than add more water [max. 80ml (3oz) in total] note that more water makes the cookies softer inside and crunchy outside, try 1/2 of the mix with less and the rest with more water and see which one you like better.
  • Preheat oven to 180-200 Celsius (350-400 Fahrenheit).
  • Splash/Flatten on baking paper in very small circles (not more than 1 tablespoon dough per cookie, and bake starting from 15 min until max 25-30 (depending if you like them crunchy or soft, more water requires more baking) you can also experiment & make them bigger, but they will stay more softer inside.

FAT-FREE CHEWY CHOCOLATE COOKIES

Fat-free Chewy Chocolate Cookies image

These are so fudgy and chewy they almost melt in your mouth. I was looking for a low-fat chocolate cookie but never expected to find something this good. These make me feel like I'm in chocaholic's heaven! I found these online, but they're originally from a Karo pamphlet.

1 1/2 cups flour
1/2 cup sugar
1/2 cup unsweetened cocoa

3 egg whites (or 1/4 cup plus 2 tbsp egg beaters)

  • Bake at 350 degrees for 7 to 9 minutes or just until set (cookies will be soft when pressed).
