Number Of Ingredients 9

1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon salt, optional
1/4 teaspoon ground mustard
1/4 teaspoon pepper
1/4 teaspoon Worcestershire sauce
1-1/2 cups whole milk
2 cups shredded cheddar cheese
Bread cubes, ham cubes, bite-size sausage and or broccoli florets

Steps:

  • In a small saucepan, melt butter; stir in flour, salt if desired, mustard, pepper and Worcestershire sauce until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add the cheese; cook and stir until cheese is melted. , Transfer to a fondue pot or 1-1/2-qt. slow cooker; keep warm. Serve with bread, ham, sausage and/or broccoli.

1 tablespoon all-purpose flour
¾ cup lager beer
1 tablespoon minced garlic
2 teaspoons Worcestershire sauce
1 ½ teaspoons mustard powder

Steps:

  • Mix Cheddar cheese and flour together in a bowl.
  • Bring beer to a light boil in a fondue pot; add garlic, Worcestershire sauce, and mustard powder and stir. Gradually stir cheese mixture into beer mixture. Reduce heat to low; cook and stir mixture until cheese is melted, about 5 minutes.

8 ounces shredded sharp Cheddar cheese
8 ounces shredded Swiss cheese
2 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 clove garlic, halved
1 (12 fluid ounce) can or bottle beer
1 dash hot pepper sauce (such as Tabasco®)

Steps:

  • Combine Cheddar cheese, Swiss cheese, flour, salt, and black pepper in a bowl.
  • Rub cut side of garlic clove around bottom and sides of fondue pot.
  • Pour beer into fondue pot and slowly bring to a simmer over medium-low heat, about 5 minutes.
  • Gradually stir cheese mixture into beer, adding small amounts at a time, until cheese is melted and blended, 10 to 15 minutes.
  • Stir hot pepper sauce into cheese mixture.

2 tablespoons canola oil
1 tablespoon finely minced onion
3 tablespoons all-purpose flour
1 1/4 cups milk
1/3 cup ale or 1/3 cup non-alcoholic beer
1/2 teaspoon celery salt
1/4 teaspoon hot pepper sauce
1 1/2 cups shredded aged cheddar cheese
2 cups lightly packed cubed dark rye bread (1-inch) or 3 cups assorted fresh vegetables

Steps:

  • Heat oil in medium saucepan over medium-low until hot. Add onion; cook 3-4 minutes until softened, stirring frequently.
  • Stir in flour; cook 1 minute, stirring frequently. Slowly whisk in milk and ale til smooth. Whisk in celery salt and hot pepper sauce.
  • Increase heat to medium; bring to a boil. Boil 2 minutes til slightly thickened, sitrring constantly.
  • Remove from heat; slowly stir in cheese until melted. (Fondue can be prepared to this point up to 1 day ahead. Cover and refrigerate. Reheat gently over medium-low heat, stirring constantly).
  • Place in fondue pot on low heat or heat-proof ceramic pot or bowl over candle warmer.

3/4 cup low-fat milk or 3/4 cup nonfat milk
1 cup shredded cheddar cheese
1/4 cup chopped onion
chunky French bread, cubed (dipper)

Steps:

  • Heat cream cheese with milk in fondue pot or saucepan on low heat.
  • Stir until it is smooth.
  • Add in the cheddar cheese; keep stirring!

1 (15 1/2 ounce) can white beans, rinsed, drained
1 (12 ounce) bottle dark beer, can use other beer
1 cup extra-sharp cheddar cheese, grated
1 cup reduced-fat sharp cheddar cheese, grated
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce (to taste)

Steps:

  • In a food processor fitted with a metal blade, combine the beans and 1/4 cup ale; puree, scraping the side of the bowl as needed, 4 minutes, until very smooth.
  • In a medium saucepan, combine bean puree and the remaining ale.
  • Bring to a boil over medium heat, then reduce heat to simmer.
  • Add the cheese in handfuls, stirring constantly, until the cheese melts.
  • Stir in the dry mustard, Worcestershire sauce and hot sauce.
  • Transfer to a warm fondue pot and serve with bread cubes and vegetables of choice.
