LEMON & THYME TURKEY BURGERS
These low-fat turkey burgers are flavoured with onion and herbs, wrapped in a single rasher of streaky bacon for added flavour - a surefire family hit

Steps:
- Heat oven to 200C/180C fan/gas 6. Heat the oil in a small pan, add the onion, fry for a few mins until lightly browned and soft, then cool. Mix the turkey with the lemon zest, thyme, parsley, onion and seasoning until well combined.
- Shape the mixture into 4 burgers and wrap a rasher of bacon around each. Put in a roasting tin, bake for 20-25 mins, then pan-fry for a few mins on each side to crisp up the bacon. Serve in a bun with lettuce, sliced tomato, tomato sauce and vegetable chips (recipe below).

My mom used to cook these juicy burgers in butter or a little bacon fat. I do all of my sauteing in olive oil or nonstick cooking spray, yet my turkey burgers taste just as delicious as Mom's.

- In a large bowl, combine the first nine ingredients. Crumble turkey over mixture and mix well. Shape into six patties. , In a large nonstick skillet, cook patties in oil in two batches over medium heat until a thermometer reaches 165° and juices run clear. Serve on rolls with lettuce and tomato.

- Place turkey breast and thigh in a shallow container in the freezer for 30 minutes to facilitate grinding. Attach the food grinder, with the coarse plate, to the grinder. Set to speed 4 and run turkey through the grinder into a large bowl. Sprinkle with lemon zest, lemon juice, thyme, salt and pepper; mix together with your hands. Freeze for 30 minutes, then run through the grinder one more time into a bowl. Add bread crumbs and mix together with your hands. Form into 8 patties, each about 1 inch (2.5 cm) thick, creating a slight depression in the middle of each one to ensure even cooking.
- In a large skillet with a lid, heat a thin layer of oil over medium heat. Add 4 of the patties. Cover and cook, flipping once, until no longer pink inside, about 4 minutes per side. Top each patty with cheese, if desired. Cover and cook until just melted. Transfer to a plate and keep warm. Repeat with remaining patties.

- In a large bowl, mix together the ground turkey, bread crumbs, lemon zest, lemon juice, thyme, salt, and pepper. Form into two (2) patties the same size as the bread you are serving it on, place on a plate, cover with plastic wrap, and refrigerate until ready to grill.
- In a large frying pan with olive oil, sautonion until almost caramelized. Add bell pepper and sauttill heated through and softened. Sprinkle with a little salt and pepper. Remove from heat and set aside.
- Preheat barbecue grill; brush and oil the grates. Grill turkey patties approximately 5 to 6 minutes on each side or until internal temperature reaches 165 degrees F. on your meat thermometer. Top each turkey patty with cheese slices during the last few minutes of cooking to melt.
- While the turkey patties are cooking, cut open the bread the size you want for this open face sandwich, then cut in half for two servings, and butter each half. Grill bread slices, opened end down to form grill marks, or toast in toaster.
