LEMON PINEAPPLE JELLO WITH PINEAPPLE WHIPPED CREAM TOPPING
Lemon Pineapple Jell-O with Pineapple Whipped Cream Topping is a light and refreshing slice of vintage wonderfulness! The deliciously sweet and citrusy stuff can be served as a salad or a dessert and served with or without the chopped walnuts on top.

Steps:
- Heat 2 cups of water to boiling by microwaving in a large glass bowl for 4-5 minutes. Stir in contents of the Jell-O package until it dissolves. Separate the pineapple juice from the crushed pineapple by draining the juice into a small saucepan and setting aside for later.
- Add marshmallows to the hot lemon Jell-O and stir until dissolved, then stir in the crushed pineapple. Stir in 2 additional cups of cold water, and pour into a large rectangular glass dish. Transfer the Jell-O to the fridge and allow to set completely, about 3-4 hours.
- While the Jell-O is setting up in the fridge, prepare the pineapple whipped cream topping by whisking the beaten egg, flour, and 1/4 cup sugar with the reserved pineapple juice in a small saucepan and heating over medium-low heat, whisking constantly, until the sauce begins to thicken, about 4 to 6 minutes. Remove from heat and cool completely.
- In another bowl, beat the heavy cream with an electric mixer on high speed, gradually adding the additional 2-3 tablespoons of sugar and vanilla, until whipped cream forms and holds its shape when beaters are removed.
- Fold the cooled pineapple juice mixture into the whipped cream until combined, then spread over the completely set Jell-O. Sprinkle with the chopped walnuts and refrigerate until ready to serve.

- In medium sauce pan mix jello and water stir just until mixed.
- Add pineapple and cream cheese.
- Cook over medium heat until cream cheese is dissolved (it will not look very good but it is okay).
- When cream cheese is completely melted, pour into a 9x13-inch pan Chill overnight.
- Top with thawed Cool Whip. Sprinkle with nuts (if desired).

CREAMY PINEAPPLE LEMON JELLO
Steps:
- Mix pudding with milk as directed on package.
- Add sour cream and beat until smooth.
- Drain pineapple and reserve juice.
- Dissolve jello in boiling water. Add the reserved pineapple juice to jello and let it cool.
- Mix jello mixture with pudding and stir until smooth. It is much easier to get the mixture to incorporate smoothly with a whisk. Fold in pineapple and chill in the refrigerator until set. You can pour the jello into a large bowl and scoop it out after it is set, but if you pour the jello into individual parfait dishes, it will set up much faster.

- Dissolve Jell-O in hot water, place in a 9 x 13" dish and refrigerate. When beginning to set, add pineapple, bananas and marshmallows. Return to refrigerator.
- Topping: Combine water/pineapple juice, sugar, cornstarch, egg, and butter. Mix well, making sure cornstarch is dissolved, and heat until thickened.

- Drain pineapple, reserving juice. Dissolve gelatin in water; add pineapple. - Prepare jello according to package directions.
- Pour it in a 9x9 pan.
- When jello begans to set, add drained crushed pineapple.
- Beat cream cheese.
- Prepare 1 pk. dream whip according to recipe on package then add beaten cream cheese.
- Spread over jello mixture after it has set up.
- Combine in sauce pan, sugar and cornstarch; add pineapple juice and beaten eggs, cook until thickened, about 5 to 8 minutes.
- Let cool, then pour over top of whipped topping.

- In large bowl, mix gelatin and boiling water until gelatin is completely dissolved.
- In 2 cup measuring cup, mix reserved pineapple liquid and enough cold water to make 2 cups. Stir into gelatin mixture.
- Refrigerate until thickened but not set; about 45 minutes.
- Stir pineapple into thickened gelatin mixture. With rubber spatula, fold in 3 cups of the whipped topping.
- Tear angel food cake into 1-inch pieces, placing half of the pieces in ungreased 13x9-inch glass baking dish.
- Spoon half of gelatin mixture evenly over cake pieces. Repeat layers.
- Cover tightly with plastic wrap, refrigerate until set, about 1 hour.
- Cut dessert into serving pieces; place on dessert plates. Top each with about 2 tablespoons strawberries and about 1 tablespoon remaining whipped topping.
