Steps:
- Heat oven to 375°F. Spray 36 mini muffin cups with cooking spray.
- In large bowl, stir cookie mix, ground almonds, butter and cream cheese until soft dough forms.
- Shape dough into 36 (1 1/4-inch) balls. Press each ball in bottom and up side of muffin cup.
- Bake 12 to 15 minutes or until golden brown. Cool completely in pan, about 30 minutes.
- Remove cookie cups from pan. Fill each with about 1 1/2 teaspoons lemon curd.
- In small bowl, mix frosting and whipped topping until well blended. Pipe or spoon 1 rounded teaspoon frosting mixture on top of each filled cookie cup. Top each with lemon peel and almonds. Store covered in refrigerator.

Steps:
- Beat butter, cream cheese, flour, and almond extract together until well-combined.
- Cover dough, and chill until firm.*
- Preheat oven to 400 F. Grease and flour a 24-cup mini muffin tin.
- Divide chilled dough between the mini muffin cups, pressing dough into the bottom and up the sides.
- Divide fruit filling between cookie cups.
- Bake for about 10-15 minutes, or until tassies are light golden brown.
- Let cool in pan before removing.

- Preheat oven to 350°. Cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in vanilla. In another bowl, whisk flour, cornstarch and salt; gradually beat into creamed mixture. Steps:
- Blend butter and cream cheese together; stir in flour. Cover; chill 1 hour.
- On lightly floured surface, roll dough to 1/8 inch thickness. Cut in 3 inch rounds with scalloped cookie cutter. Pat rounds in 1 3/4 inch muffin pans. Bake tart shells at 400 degrees F (200 degrees C) for 10 to 12 minutes. Cool in pans.
- To Make Filing: Grate 1/2 teaspoon lemon peel; set aside. In saucepan combine 3 well-beaten eggs, 1 1/4 cups sugar, 1/3 cup lemon juice, and 1/4 cup butter or margarine. Cook and stir over low heat till thick, about 15 minutes.
- Remove from heat; stir in lemon peel. Chill. Spoon a rounded teaspoonful of filling into each shell. If desired, top with toasted slivered almonds. Chill.

- Preheat oven to 350F. Make tassie pastry (#59854) and line mini muffin cups with pastry.
- Beat the eggs, sugar, butter, lemon zest and lemon juice in a bowl.
- Stir in the coconut.
- Divide among 24 mini muffin cups or tassie cups.
- Bake for 20-25 minutes.
- Immediately, and very carefully using the tip of a pointed knife, gently knudge out each tassie out of its cup and transfer to a rack to cool.

- 1. Beat 1/2 cup butter and cream cheese together until light and fluffy.
- 2. Add flour and beat until crumbly.
- 3. Shape dough into ball.
- 4. Preheat oven to 350 degrees F.
- 5. Spray 1 3/4" mini-muffin pans with oil.
- 6. Pinch off pastry, 1 Tbsp. at a time and press into prepared pans.

- In a large bowl cream together maple syrup and palm shortening until smooth. Add almond flour, arrowroot and salt and work into the mixture with a fork adding 1 teaspoon of water until a soft dough forms.
- Pinch and press dough firmly across the bottom and halfway up the sides of a greased 12 cup mini muffin pan with your fingers. Prick bottom of dough with a fork and place pan into freezer 10 minutes to chill or in fridge until needed.
- Preheat oven to 350 degrees F. Bake shells for 10-12 minutes or until golden around the edges. Set on a wire rack to cool completely. Meanwhile make the filling.
