- Preheat oven to 350°. In a large bowl, combine first seven ingredients. Transfer to a large shallow roasting pan., Brush hens with oil; sprinkle with salt and pepper. Wrap a bacon strip around each hen; secure with a wooden toothpick. Tie legs together. Place, breast side up, over vegetables., Bake, uncovered, 1-1/4 to 1-3/4 hours or until a thermometer inserted in thigh reads 180° and vegetables are tender. Remove hens to a serving platter; serve with vegetables.

- Preheat the oven to 450°F.
- Pat the cornish hen dry (including cavity) with paper towels.
- In a small bowl, combine all dry rub seasoning mixture ingredients. Rub seasoning mixture over both sides and underneat the skin of the hen.
- Season the cavity of the hen with salt and pepper then stuff with one lemon wedge, head of garlic halved, and 3 rosemary sprigs.
- Tuck wing tips under the back of the hen; tie ends of legs together with twine.
- Put the chopped vegetables in a large roasting pan, then drizzle with oil. Season with additional salt and pepper to taste then pour in the dry white wine.
- Put the hens, breast side up, directly on top of vegetables. Make sure the hens are not touching the wine! Brush the hens on both sides with oil.
- Roast the hens and vegetables, uncovered, for about 50-60 minutes (depending on the size) or until the internal temperature reaches 165°F and the vegetables are tender. Rotating the pan halfway through roasting.

- Preheat oven to 450 degrees. Place hens in a roasting pan, breast sides up. Place 2 thyme sprigs and 1 lemon half in cavity of each hen. Loosen skin from breast, and place remaining thyme and the parsley underneath. Squeeze remaining lemon halves over hens. Rub butter all over hens. Season generously with salt and pepper.
- Roast hens, rotating pan halfway through, until skin turns golden brown and an instant-read thermometer inserted into the thickest part of the thigh registers 180 degrees, 45 to 50 minutes. Let stand 10 minutes. Cut hens in half lengthwise. Garnish with thyme sprigs, and serve with lemon wedges.

- Remove giblets from hens if they're present; reserve for future use.
- Rinse hens throughly under running water; pat dry.
- Rub olive oil over both hens.
- Season hens, inside and out, with salt and pepper.
- Season hens with tarragon including the cavities of the birds.
- Rub spice well into the skin.
- Place one teaspoon of garlic into the cavity of each hen.
- Quarter the half of lemon and place one quarter inside of each cornish hen's cavity as well.
- Place hens into a roaster and pour warmed chicken broth into the roasting pan.
- Dot both hens with margarine or butter.
- Cover pan and roast in a 400 degree oven for 50 minutes basting occasionally.
- Remove the cover and allow birds to brown for 10 minutes.
- Let stand 10 minutes before serving.

- Heat oven to 400 degrees.
- Spray a 2 quart glass baking dish with cooking spray.
- Remove and discard neck and giblets from game hen and with kitchen scissors, cut hen in half; place halves, skin side up, in baking dish.
- In a medium bowl, mix together garlic salt, chili powder, ginger, cumin and oil.
- Brush hen halves with 1 tablespoon of the oil mixture, to the remaining mixture in bowl, add the potatoes and bell pepper; toss to coat.

- Rinse and pat dry your hens and place them in an oven safe roasting pan (careful to remove all of the innards).
- Cut the lemon in half and squeeze the juice onto each piece of meat, then place one half into the cavity of the bird. Season the meat with garlic powder, salt, pepper and parsley then spray with cooking spray.
- Add the wine to the bottom of the pan and bake for approximately 60-70 minutes or until the proper internal temperature of 180 degrees F is reached. Remove from the oven and let rest 10 minutes before cutting each bird in half. Serve with gravy if desired.
