2 medium leeks, thinly sliced
1 tablespoon fresh parsley, minced
3/4 cup tomatoes, chopped
3 ounces montrachet or 3 ounces feta, crumbled
2 tablespoons olive oil

Steps:

  • Melt butter in large skillet over medium-low heat. Add leeks; saute until tender, about 10 minutes.
  • Season with salt and pepper.
  • Stir in parsley.
  • Cool.
  • Spread leek topping evenly over pizza shell; sprinkle tomatoes over.
  • Top with cheese. Drizzle 1 tablespoon oil over.
  • Bake about 10 minutes at 450 F.
  • Remove from oven and brush crust with olive oil.

Extra-virgin olive oil, for drizzling
6 slices thick-cut bacon, cut into 1-inch pieces
3 leeks, rinsed well to remove grit and thinly sliced
1 loaf store-bought frozen bread dough, thawed and left to rise according to package instructions
5 small red potatoes, sliced paper thin with a mandoline or sharp knife
Kosher salt
1 pound fresh mozzarella, sliced thin
4 ounces goat cheese, crumbled
1/3 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 475 degrees F. Drizzle a baking sheet with olive oil.
  • In a skillet, fry the bacon over medium heat until cooked but not crisp; remove and set aside. Pour off most of the grease but do not clean the skillet. Return the skillet to the stove and turn the heat to medium low. Add the leeks and saute until soft, about 3 minutes.
  • Pull or roll the bread dough into a rectangle and place on the oiled baking sheet. Drizzle the dough with olive oil. Arrange the potatoes in a single layer all over the crust, slightly overlapping the edges. Sprinkle the potatoes lightly with salt, then lay the mozzarella slices in a single layer on top of the potatoes. Arrange the leeks on top of the cheese. Sprinkle the fried bacon pieces over the top, followed by a generous addition of crumbled goat cheese, grated Parmesan and freshly ground black pepper.
  • Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, 11 to 13 minutes. Cut into squares and serve immediately.

PIZZA WITH LEEKS, TOMATO AND GOAT CHEESE

If you have a set of clay tiles or a baking stone, place it on the oven rack while preheating the oven. It will absorb the heat, and putting a pizza pan or baking sheet directly on top will ensure a crisp crust.

Yield Makes 1 Pizza

Number Of Ingredients 12

3/4 cup warm water (105°F. to 115°F.)
1 1/2 teaspoons dry yeast
1 tablespoon olive oil
1 teaspoon salt
1 1/2 cups (or more) all purpose flour
1 1/2 tablespoons butter
2 medium leeks (white and pale green parts only), thinly sliced
1 tablespoon minced fresh parsley
Yellow cornmeal
3/4 cup chopped seeded peeled tomato
3 ounces soft fresh goat cheese (such as Montrachet), crumbled
2 tablespoons olive oil

Steps:

  • Place warm water in large bowl; sprinkle yeast over and stir to blend. Let stand until yeast dissolves, about 10 minutes. Whisk in oil and salt. Stir in 1 1/2 cups flour. Turn out dough onto floured surface; knead until smooth and elastic, adding more flour if dough is sticky, about 10 minutes. Lightly oil large bowl. Add dough, turning to coat. Cover with plastic wrap. Let dough rise in warm area until doubled, about 1 hour.
  • Punch down dough. Turn out onto floured surface; form into ball. Cover with towel; let rest 30 minutes.
  • Melt butter in large skillet over medium-low heat. Add leeks; sauté until tender, about 10 minutes. Season with salt and pepper. Stir in parsley. Cool.
  • Preheat oven to 500°F. Sprinkle 12-inch-diameter pizza pan or baking sheet generously with cornmeal. Roll out dough on lightly floured surface to 11-inch round. Transfer to prepared pan. Spread leek topping evenly over dough; sprinkle tomato over. Top with goat cheese. Drizzle 1 tablespoon oil over. Bake pizza until crust is golden and crisp, about 12 minutes. Remove from oven; brush crust rim with 1 tablespoon oil. Cut into wedges.

Tomato & Goat Cheese Crostata image

I'll always remember making my first crostata. It was from my friend Johanne Killeen's cookbook Cucina Simpatica. Johanne and her late husband George Germon started Al Forno restaurant in Providence; 40 years later, it's still one of my favorite places - and I just adore Johanne's cookbook. Her apple crostata is both elegant and earthy, a flaky, buttery crust filled with sweet apples. It's divine! Over the years, I've played around with lots of other sweet crostatas, like one with a raspberry-rhubarb filling (it's in my book Cooking for Jeffrey), but I also love savory crostatas. I make this tomato and goat cheese version with the same flaky crust (minus the sugar), a layer of creamy goat cheese on the bottom and big slices of gorgeous heirloom tomatoes on top. The trick is to bake it on an upside-down sheet pan: Because there are no sides on the pan to block the heat, the tart browns more evenly. This crostata, served with a salad, is a perfect summer lunch!

1 cup all-purpose flour
Kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
3 tablespoons ice water
4 tablespoons (1/2 stick) unsalted butter
4 cups chopped leeks, white and light green parts, spun dry (4 leeks)
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
1 pound heirloom tomatoes, cored and sliced 3/8 inch thick (see Cook's Notes)
Good olive oil
4 ounces creamy fresh goat cheese, crumbled
1 egg beaten with 1 tablespoon milk, for egg wash
Chopped fresh basil leaves and chives

Steps:

  • For the pastry, place the flour and 1/2 teaspoon salt in the bowl of a food processor fitted with the steel blade and pulse to combine. Add the diced butter and toss carefully with your fingers to coat each piece of butter with flour. Pulse 12 to 15 times, until the butter is the size of peas. While pulsing, add the ice water all at once through the feed tube. Pulse to combine, stopping just before the dough forms a ball. Turn the dough out onto a well-floured board and form it into a disk. Wrap in plastic and refrigerate for one hour.
  • Meanwhile, preheat the oven to 450˚ F. Heat the 4 tablespoons butter in a large (12-inch) sauté pan over medium to medium-high heat. Add the leeks, thyme, 1 teaspoon salt and 1/2 teaspoon pepper and sauté for 8 minutes, until the leeks are tender and starting to brown. Set aside. Place the tomatoes on a plate, sprinkle them with salt and pepper and drizzle lightly with olive oil. Set aside.
  • On a floured board, roll the dough into an 11-inch circle, then place it on a sheet of parchment paper. Turn a sheet pan upside down and transfer the paper to the inverted pan. Spread the leeks on the pastry, leaving a 1 1/2-inch border. Crumble the goat cheese evenly on top. Arrange the tomatoes over the goat cheese, overlapping the slices because they will shrink. Turn the edges of the pastry up and over the tomatoes, crimping so they lie flat. Brush the pastry with the egg wash. Bake for 25 to 30 minutes, until the pastry is nicely browned. Allow to cool on the pan for 5 minutes, sprinkle lightly with the fresh herbs and salt, cut in wedges and serve warm.

SAUTEED LEEKS WITH PROSCIUTTO AND GOAT CHEESE OVER CAPELLINI

12 ounces capellini pasta
2 teaspoons olive oil
1/2 cup diced prosciutto
4 leeks, rinsed and chopped
Salt and ground black pepper
1/2 cup reduced-sodium chicken broth
1/2 cup crumbled goat cheese

Steps:

  • Cook pasta according to package directions. Drain and set aside.
  • Meanwhile: heat oil in a large skillet over medium heat. Add prosciutto and saute 1 to 2 minutes. Add leeks and saute 3 to 5 minutes, until tender. Season, to taste, with salt and black pepper. Add chicken broth and cooked pasta and simmer 2 minutes to heat through. Remove from heat and sprinkle goat cheese over top just before serving.

320g pack ready-rolled shortcrust pastry
500g leeks , very thinly sliced
25g butter
4 thyme sprigs , leaves picked
300ml milk
¼ fresh nutmeg , grated
4 eggs
125g log soft goat's cheese , half chopped, the rest sliced
1 tbsp roughly chopped hazelnuts (not the pre-chopped ones)
tomato salad , to serve

Steps:

  • Heat oven to 200/180C fan/gas 6. Line a non-stick tin (24cm x 20cm x 3cm deep) with baking parchment. Unravel the pastry and use it to line the tin. It should fit almost perfectly except for a slight overhang at the ends. If there are any cracks in the pastry, gently press them together with your fingers, then prick the base. Line with more baking parchment, fill with baking beans and bake for 15 mins. Remove the paper and beans and bake 5 mins more to dry the base.
  • Meanwhile, in a large non-stick frying pan, fry the leeks in the butter with most of the thyme until soft - about 8 mins. Tip into a bowl and pour in the milk, then add the nutmeg, some seasoning and the eggs. Beat until well mixed, then stir in the chopped goat's cheese.
  • When the pastry case comes out of the oven, tip in the leek mixture, arrange the sliced cheese on top and scatter over the hazelnuts and the remaining thyme. Return to the oven for 25-30 mins until the filling is set. Trim away the excess pastry at the ends if you like and serve warm or at room temperature with a tomato salad.

Steps:

  • Preheat the oven to 400°F.
  • Heat the oil in a large non-stick frying pan, add the onion, pepper and zucchini and saute over a medium heat for 4-5mins. Add the herbs and season with black pepper. Cook for a further 2 mins or until lightly browned and tender. Remove from the heat.

4 tablespoons butter
1 tablespoon olive oil
2 cups finely diced leeks (white part only - about six medium leeks)
1 cup finely chopped onion
2 large pinches saffron threads
Salt to taste
Cornmeal
1/2 recipe basic pizza dough
6 ounces Boucheron goat cheese, rind removed and cheese crumbled
6 halves imported sun-dried tomatoes in oil, drained and cut in julienne slivers, or 16 pitted Italian black olives, coarsely chopped

Steps:

  • Heat butter and oil in a skillet. Add leeks and onions and saute over low heat, covered, until the vegetables are very tender but not brown. Stir them from time to time as they cook.
  • Crumble saffron into skillet, add salt and mix. Cover and continue to cook 10 more minutes, stirring a few times.
  • Preheat oven to 425 degrees. Dust a large baking sheet with cornmeal.
  • Divide dough into four equal portions. Shape each into a circle about 6 inches in diameter with a rim of about 1/2 inch and place on baking sheet. Spread each circle of dough with the saffron-flavored leek mixture.
  • Sprinkle crumbled goat cheese evenly over each pizza, then arrange strips of sun-dried tomatoes like spokes of a wheel over the cheese. If using olives, sprinkle the pieces in a circular pattern on each pizza.
  • Bake on the bottom level of the oven until lightly browned and the cheese has melted, about 20 minutes. Serve at once.

This is my version of a fabulous pizza I had at the Flatbread Pizza Company. It's one of my absolute favorites and I even make it on the grill when it gets too hot to turn on the oven in the summertime. It also makes a great appetizer if sliced into small pieces. Using the combination of the non stick foil and the oven rack ensures a crispy crust that wont get stuck to the pan.

1 lb pizza dough (store bought)
1 large onion, sliced and caramelized
2 tablespoons minced garlic
1/4 cup extra virgin olive oil
1 1/2 cups shredded mozzarella cheese
4 ounces goat cheese
1/3 cup sliced roasted red pepper
1/4 cup kalamata olive, pitted and chopped
1 tablespoon oregano
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Line a large edgeless pan or pizza stone with non stick foil.
  • Stretch out pizza dough.
  • Mix olive oil, garlic, salt and oregano together and spread on the dough.
  • Cover dough with mozzarella cheese and then top with the goat cheese, peppers, caramelized onions and olives.
  • Bake for 12 minutes (pizza should slide right off, if not bake another minute) and then slide pizza directly onto the oven rack and bake for another 5 minutes.
  • Remove from oven when golden brown.
