People always pass on compliments when I take this salad to covered-dish suppers. It's nice on a hot day...with a winter meal...or as a dessert! We live on a small farm where my garden gives me lots of possibilities for fresh food. -Page Alexander, Baldwin City, Kansas

1/2 teaspoon grated orange zest
2/3 cup orange juice
1/2 teaspoon grated lemon zest
1/3 cup lemon juice
1/3 cup packed light brown sugar
1 cinnamon stick
FRUIT SALAD:
2 cups cubed fresh pineapple
2 cups sliced fresh strawberries
2 medium kiwifruit, peeled and sliced
3 medium bananas, sliced
2 medium oranges, peeled and sectioned
1 medium red grapefruit, peeled and sectioned
1 cup seedless red grapes

Steps:

  • Place first 6 ingredients in a saucepan; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Cool completely. Remove cinnamon stick., Layer fruit in a large glass bowl. Pour juice mixture over top. Refrigerate, covered, several hours.

A wonderful fruit salad to make when fruit is at its best! It can be made a day ahead and you can use any fruit that you like.

1 (3 ounce) package cream cheese, softened
8 ounces strawberry yogurt
1 tablespoon sugar
2 teaspoons lemon juice
2 cups Cool Whip Lite
1/4 teaspoon almond extract
2 cups fresh blueberries
3 ripe peaches, peeled and sliced
2 cups fresh strawberries, halved
2 cups green seedless grapes
1 (11 ounce) can mandarin oranges, well drained
2 -4 tablespoons toasted sliced almonds (optional)
1 whole strawberry, for garnish

Steps:

  • In small bowl, combine cream cheese, yogurt, sugar, and lemon juice. Beat at medium speed until smooth. Add whipped topping and almond extract, continue beating until smooth and thick. Refrigerate.
  • In large glass bowl, layer blueberries, peaches and strawberries. Spoon on half of topping mixture. Layer on grapes and mandarin oranges. Spoon on remaining half of topping over fruit to within one inch of edge. Sprinkle with almonds. Garnish with whole strawberries. The salad can be made a day ahead and any fruit combination can be used.

1/2 cup orange juice
1/4 cup lemon juice
1/4 cup packed brown sugar
1/2 teaspoon orange zest
1/2 teaspoon grated lemon, rind of
1 cinnamon stick
2 cups pineapple chunks
1 cup red seedless grapes
2 medium bananas, sliced
2 medium oranges, peeled and sectioned
1 medium grapefruit, peeled and sectioned
1 pint strawberry, sliced
2 kiwi fruits, peeled and sliced

Steps:

  • In a medium saucepan, combine the first six ingredients; bring to a boil.
  • Reduce heat; simmer, uncovered, for 5 minutes.
  • Remove from the heat; cool completely.
  • Layer fruit in a glass serving bowl.
  • Remove cinnamon stick from the sauce; pour sauce over fruit.
  • Cover and chill for several hours.

This is a wonderful fruit salad, I make two bowls of this to serve at my BBQ get togethers and everyone loves it! This can be made hours in advance if desired, you may omit some of the fruits but try to use them all. Cooking time is chilling time.

1 pint fresh blueberries
1 pint fresh hulled strawberries or 1 pint raspberries
2 1/2 cups fresh pineapple chunks
2 cups seeded watermelon, chunks
2 bananas, sliced 1/2-inch thick
2 tablespoons fresh lemon juice
2 kiwi fruits, peeled and sliced
1 cup mandarin orange, drained (or use fresh oranges, chopped)
2 (3 ounce) packages cream cheese, room temperature
1/3 cup confectioners' sugar (icing sugar)
1 1/2 teaspoons fresh lime juice
1 cup whipped cream, whipped
1/4-1/2 teaspoon lime zest

Steps:

  • In a bowl, toss the bananas slices in lemon juice to keep from browning.
  • In an extra large fancy glass bowl, in a layering effect, place the pineapple, blueberries, HALF of the strawberries, oranges, kiwi fruit, watermelon, and the remaining strawberries or raspberries.
  • In a mixer bowl, beat the softened cream cheese until smooth.
  • Add in confectioners sugar, and continue beating.
  • Add in the lime juice; mix to combine.
  • Set the speed to lowest, and add in HALF of the whipped cream; mix until blended.
  • Then add in the remaining whipped cream until blended (still on lowest speed).
  • Pour the whipped dressing all over the fruit in the bowl, and allow to drizzle inside of bowl.
  • Chill for a minimum of 1 hour before serving.

4 cups, less than two pounds strawberries, cut into large pieces
2 cups or 1 pint fresh blueberries, rinsed
3-4 ripe bananas

Steps:

  • Up to a day in advance, rinse and slice the strawberries, and prepare the blueberries by rinsing and picking over for stems.
  • Right before serving, peel and slice the bananas into large bites and place in a medium bowl, and gently fold together with the strawberries and blueberries.
  • Save a few extra blueberries to sprinkle on the top for an added pop of color.
  • If you happen to have leftovers, store them in the fridge as soon as possible to avoid spoiling. Leftovers can be kept two to three days.
