1 teaspoon lavender or 1 teaspoon wildflower honey
1 1/2 cups balsamic vinegar
1 tablespoon fresh lavender leaves
2 tablespoons extra virgin olive oil
salt & freshly ground black pepper
1 teaspoon fresh lavender flowers

Steps:

  • In a medium saucepan, cook the honey over moderate heat until bubbling. Add the vinegar and lavender leaves and simmer over moderately low heat until reduced to 3/4 cup, 8 to 10 minutes.
  • Strain and let cool slightly. Whisk in the oil and season with salt and pepper. Add the lavender flowers just before serving.

1 tablespoon finely minced shallot
1 -2 teaspoon sugar
2 teaspoons freshly grated lemon zest
1 teaspoon dried lavender (food grade) or 2 teaspoons fresh lavender (food grade)
1/2 teaspoon salt
1/4 teaspoon mustard powder
1/4 teaspoon ground pepper
1 teaspoon dried thyme leaves

Steps:

  • In a blender, puree the vinegar, shallots and lemon.
  • While still running, add the sugar, lavender, salt, mustard, and pepper. Slowly pour in olive oil.
  • Transfer dressing to a jar and stir in the thyme leaves.
