LAUGHING COW MASHED POTATOES
I love mashed potatoes and was looking for a way to make them healthier. What I discovered is that those little Laughing Cow Light Cheese Wedges make an awesome substitute for butter and the taste of the potatoes is wonderful. Recently, my SIL was here and she raved about these potatoes and I had to share my secret with her. I calculated the points for these on the WW website and the points value per serving is 3.

Steps:
- Scrub and cut potatoes into 1" chunks.
- Place in a medium sauce pan and cover with water.
- Bring to a boil and reduce heat.
- Simmer about 15 minutes or until tender.
- When potatoes are cooked drain off some of the water and reserve.
- Add cheese wedges to potatoes and mash, adding reserved potato water as necessary.

THE BEST MASHED POTATOES
This is our go-to recipe for classic mashed potatoes, made with plenty of butter and cream. To make them fluffy and flavorful, be sure to simmer them slowly and add plenty of salt to the cooking water. And don't skip the step of steaming the excess water off; leaving too much moisture in the potatoes causes them to be loose and gluey.

- Put the potatoes in a large pot and cover with cold water. Generously salt the water and bring to a boil over high heat. Then lower the heat to medium and gently simmer until the potatoes are completely tender when pierced with the tip of a knife, about 30 minutes.
- Drain the potatoes well and return them to the pot. Place the pot over low heat and let any residual water steam off, about 2 minutes. Mash the potatoes well with a potato masher. Fold in the butter with a spatula until melted, and then fold in the cream. Season with salt and pepper.

Steps:
- In a large pot add potatoes, 1 tsp garlic and enough water to cover potatoes.
- Boil until potatoes are easily pierced with a fork, approximately 10 minutes.
- Drain potatoes and place back in same pot.
- Add butter and mash until butter is melted.
- Add in cream, sugar, steak seasoning, garlic powder, and remaining 1 tsp crushed garlic.
- Mix until smooth using an electric mixer.

ANOTHER MOCK MASHED POTATOES (MASHED CAULIFLOWER)-LOW CARB
I saw this recipe made on the new low carb cooking show on Food Network. I tried the recipe tonight and it is really so good - this is my spin on the recipe. This time, I omitted the rosemary and used raw minced garlic, but you may also use a few cloves of roasted garlic if you prefer. This version is different from many others as there is no sour cream and no mayonnaise. Real comfort without all that starch. (Note: Smart Balance is a lower calorie, cholesterol reducing butter substitute).

- Bring a medium-large pot of water to boil.
- Cut cauliflower into smaller pieces, add to the pot,and boil until fork tender,approximately 6 minutes; drain well.

COWBOY MASHED POTATOES
These are soooo good! Do not be afraid of the jalapeno, they do not end up at all spicy. (in fact, I often add more then one!) You will never go back to boring mashed potatoes again! I got this recipe from allrecipes, and was shocked that it has not been posted here.

Steps:
- Place potatoes, carrots, jalapeno pepper and garlic cloves in a large pot. Cover with water, and bring to a boil over high heat. Cook 15 to 20 mins or until potatoes are tender. Drain water from pot.
- Stir in butter. Mash this mixture using a potatoe masher until the butter is melted, and the potaotoes have reached the desired consisistency.
- Mix in cheese, corn, salt and pepper to taste.
