Made with lasagna noodles, pepperoni, marinara sauce, and mozzarella cheese, Pepperoni Pizza Lasagna Roll Ups are a delicious and easy weeknight meal favorite and perfect for family dinner!

16 lasagna noodles (cooked until tender (be careful not to overcook or they will fall apart))
1 24- ounce jar of marinara sauce (any flavor)
1 15- ounce container of ricotta cheese
2-2 1/2 cups shredded mozzarella cheese
1 6- ounce package pepperoni slices
1/2 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/2 tsp. Italian Seasoning
optional: fresh parsley

Steps:

  • Start by boiling your noodles in a large pot until they are tender, but don't overcook them or else they'll fall apart when you start assembling. Drain and set aside.
  • Preheat oven to 350 degrees. Lightly spray a 13×9 glass baking dish with cooking spray.
  • Spread an even layer of pizza sauce in the bottom of the dish.
  • Lay your lasagna noodles out on a large cutting board or or large baking sheet.
  • In a medium bowl combine ricotta cheese, onion powder, garlic powder, and italian seasoning and mix until smooth.
  • Use a small cookie scoop and spoon out 1 scoop of ricotta cheese mixture onto each lasagna noodle. Use an offset spatula or spoon to spread evenly on each noodle.
  • Lay about 8-10 pepperoni slices along the length of the noodle on top of the ricotta cheese mixture. Carefully roll up the noodles tightly and place seam side down in your prepared baking dish.
  • Pour remaining pizza sauce over the rolls. Sprinkle shredded mozzarella cheese on top.
  • Bake for 15-20 minutes in oven until cheese is completely melted, and it is a bubbly light golden brown.
  • Sprinkle with fresh parsley or more Italian seasoning if desired and serve with my incredible cheddar garlic biscuits and salad for a delicious meal!

Steps:

  • Cook noodles according to package directions. , Meanwhile, in a Dutch oven, cook the sausage, mushrooms and onion over medium heat until meat is no longer pink; drain and transfer to a large bowl. Stir in the pasta sauce, brown sugar, fennel seed, tarragon, 1/8 teaspoon salt and pepper flakes if desired., In the same pan, cook pepperoni for 4-5 minutes or until lightly browned; remove to paper towels to drain., In another large bowl, combine the mozzarella, ricotta, 1 cup Parmesan, eggs, 4 tablespoons parsley, basil, pepper and remaining salt. , Drain noodles. Spread 1 cup meat sauce in a greased 13x9-in. baking dish. Spread 1/4 cup cheese mixture over each noodle; top with 3 or 4 pepperoni slices. Carefully roll up; place seam side down in prepared dish. 1 egg
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese

Steps:

  • Cook lasagna noodles al dente.
  • In a skillet over medium heat, cook beef, sausage, onion, salt, and pepper until fully cooked.
  • Add spinach and 1 cup of marinara sauce, and let simmer. Remove from heat.
  • In a bowl, combine ricotta, Italian seasoning, and egg.
  • Spread mixture over each lasagna noodle, then top with meat mixture. Roll up tightly and place in a disposable casserole dish.
  • Let cool completely, then freeze up to 4 days.

1/3 pound ground beef
2 tablespoons chopped onion
1 garlic clove, minced
1 can (15 ounces) crushed tomatoes
1/2 teaspoon salt

Dash cayenne pepper
1-1/4 cups 4% cottage cheese, drained
1/4 cup grated Parmesan cheese
1 large egg, lightly beaten
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

6 lasagna noodles, cooked and drained

Steps:

  • In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. 1 tbsp. olive oil
1 tsp. kosher salt, plus more for the noodles
10 lasagna noodles (not no-boil)
1 large egg
2 c. ricotta cheese
1/2 tsp. Italian seasoning
1/4 tsp. garlic powder
1/4 tsp. grated lemon zest
1/4 tsp. onion powder
Pinch of red pepper flakes
Black pepper, to taste
2 c. grated provolone cheese
4 oz. sliced pepperoni
1 1/2 c. jarred marinara sauce

Steps:

  • Preheat the oven to 375˚. Bring a large pot of water to a boil. Add the olive oil and a dash of salt. Add the noodles and cook according to the package directions until al dente. Drain and lay them flat on a foil-lined baking sheet; set aside.
  • Combine the egg, ricotta, Italian seasoning, garlic powder, lemon zest, onion powder, red pepper flakes, 1 teaspoon salt and a few grinds of pepper in a medium bowl; stir well. Stir in 1 cup provolone, then stir in three-quarters of the pepperoni (quarter the pieces if they're large).
  • Assemble the lasagna: Spoon 1/2 cup marinara sauce into the bottom of a 9 1/2-inch deep-dish pie plate. Spread 1/3 cup of the ricotta filling on each noodle and roll it up. Arrange 9 of the rolls seam-side down in a circle in the pie plate; nestle the last roll in the center. Spoon the remaining 1 cup marinara sauce on top, sprinkle with the remaining 1 cup provolone and top with the remaining pepperoni.
  • Bake until the cheese is melted, bubbling and browned in some spots, about 30 minutes. Let stand 10 minutes before serving.

20 lasagna noodles
Kosher salt
2 tablespoons olive oil
1 medium onion, diced
1 cup finely chopped mushrooms (about 3 ounces)
1 green bell pepper, diced (about 1 cup)
3 cloves garlic, minced (about 1 1/2 tablespoons)
2 pounds ground beef
Freshly ground pepper
1 28-ounce can diced tomatoes
1 6-ounce can tomato paste
4 tablespoons minced fresh parsley
4 tablespoons minced fresh basil
1 30-ounce container whole-milk ricotta cheese (about 3 1/3 cups)
1 pound mozzarella, grated (about 3 1/2 cups)
1 cup grated parmesan cheese
2 large eggs

Steps:

  • Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain, rinse with cold water to cool and lay flat on a sheet of foil. Set aside.
  • Make the sauce: In a large pot, heat the olive oil over medium-high heat. Add the onion, mushrooms, green pepper and garlic and saute 4 to 5 minutes, until the vegetables are starting to soften. Remove the veggie mixture from the pan, then add the ground beef to the pan and cook, stirring occasionally, until it's totally browned. Drain the excess fat, then add 1/2 teaspoon each salt and pepper, the diced tomatoes, tomato paste, the veggie mixture and 1 tablespoon each parsley and basil and stir to combine. Let the mixture simmer over low heat, 30 minutes.
  • Make the filling: Combine the ricotta, 1/2 cup mozzarella, 3/4 cup parmesan, the eggs, 1/2 teaspoon each salt and pepper and the remaining 3 tablespoons each parsley and basil. Stir to combine.
  • Assemble the lasagna: Spoon a thin layer of sauce onto the bottom of a 9-by-13-inch pan or five 6-inch disposable foil loaf pans. Spread 2 to 3 tablespoons ricotta filling on each lasagna noodle, then roll them up so that the cheese is on the inside of the roll. Lay them sideways in the pan(s). (Four roll-ups will fit in each loaf pan, or you can fill a 9-by-13-inch pan.) Top with the remaining sauce and plenty of grated mozzarella and parmesan.
  • If you're making the roll-ups right away, place the pan(s) on a baking sheet and bake at 375 degrees F for 20 minutes, until hot and bubbly.

By simply rolling up lasagna noodles and cheese and standing the pasta roll-ups on their sides, you can transform a traditional pasta dish into a work of art.

17 lasagna noodles
5 tablespoons extra-virgin olive oil, plus more for drizzling
1 small yellow onion, finely chopped
1 tablespoon tomato paste
2 cloves garlic, finely chopped
One 15-ounce can crushed tomatoes
1 bay leaf
1 tablespoon fresh parsley leaves, finely chopped
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 pound whole milk ricotta (about 2 cups)
One 8-ounce block part-skim mozzarella
1/2 cup grated Parmesan
1 tablespoon chopped fresh basil, plus more whole leaves for serving
2 large eggs

Steps:

  • Bring a large saucepan of generously salted water to a boil. Add half the noodles, dropping each in separately, and cook, stirring gently, until pliable but still firm, about 4 minutes. Lift the noodles out of the water with a slotted spoon then lay them on a sheet of foil in a single layer, not touching. Lightly drizzle the noodles with 1 tablespoon olive oil then rub them all over to coat well. Repeat with the remaining noodles and 1 tablespoon olive oil.
  • Heat 2 tablespoons of the olive oil in a medium saucepan over medium-low heat Add the onion and cook, stirring occasionally, until completely soft and starting to caramelize, about 20 minutes. Stir in the tomato paste and garlic and cook, stirring until lightly caramelized, 1 to 2 minutes. Add the tomatoes, bay leaf and 1 cup water and bring to a boil over high heat. Reduce the heat to maintain a simmer and cook, stirring occasionally, until the sauce is slightly thickened, about 10 minutes. Discard the bay leaf. Carefully puree the sauce in a blender until smooth and return it to the pot. Stir in the parsley and season with salt and pepper.
  • Preheat the oven to 375 degrees F. Shred half of the mozzarella on the large holes of a box grater. Add it to a large bowl, along with the ricotta, Parmesan, basil, eggs, 1 teaspoon salt and the 1/2 teaspoon pepper and stir to combine. Divide the ricotta mixture among the noodles, putting 2 to 3 tablespoons in each, and spread into an even layer. Reserve the remaining piece of mozzarella.
  • Lightly grease a 9-inch springform pan with the remaining 1 tablespoon olive oil and spread 1/2 cup of the sauce over the bottom. Cut each lasagna noodle in half lengthwise then roll each noodle strip into a pinwheel. Rotate the pinwheels so the frilly ends are on top, then transfer them to the prepared pan in a snug, even layer. Pour the remaining sauce over the noodles, using the back of a spoon to spread it evenly over the top and into any gaps.
  • Cover the pan with foil and bake until the noodles are tender and the lasagna is warmed through and bubbling, about 30 minutes. Remove the pan from the oven. Tear the remaining mozzarella into pieces and scatter them over the noodles. Return the lasagna to the oven until the mozzarella is just melted, 5 minutes. Let cool 10 minutes before unmolding. Carefully remove the sides of the pan, top with basil leaves and serve immediately.
