This is a traditional cider drink that was made and enjoyed on Twelfth Night (January 16-17) in Elizabethan England. It is said that it gets its name from the whiteness of the roasted apples as they fluff out of their skins while they cook. I haven't made it yet, but I cant let go of the recipe every time I go to clean out my recipe box.

4 pints real ale (Newcastle or similar)
2 -3 large apples
1 cup hard alcoholic cider (such as Woodchuck or Hornsby's)
1 cinnamon stick
3 cloves
sugar

Steps:

  • Preheat oven to 180°C: 350°F: Gas 4.
  • Core the apples and bake in 350 degree oven for about 40 minutes until very soft.
  • Squeeze all of the pulp from the apples and discard the skins then fluff the puree with a fork.
  • Heat the ale and cider with the cinnamon stick and cloves.
  • Add the apple puree and sugar to taste.
  • Serve immediately.

4 cups apple juice
2 cups orange juice
2 tablespoons orange rind, grated
1 cinnamon stick
1/2 cup honey
2 tablespoons lemon juice
Cool Whip Topping

Steps:

  • Simmer all ingredients except the cool whip.
  • Cool if you wish to serve that way or serve warm.
  • Top with a dollop of "wool" (cool whip) whether hot or cold.
  • Enjoy!

Number Of Ingredients 10

knob of butter , for frying
1 onion , finely chopped
2 garlic cloves , crushed
1 tsp ground cinnamon
2 tsp ground coriander
3 lamb shanks
4 carrots , peeled and cut into small chunks
2 sticks celery , cut into small chunks
750ml water or low sodium vegetable stock
750g sweet potatoes , peeled and cut into large chunks

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Melt the butter in a big ovenproof casserole dish. Brown the lamb shank on all sides for a few minutes and then remove from the pan. Gently cook the onion for 7-8 mins until well softened, adding a little more butter if necessary. Add the garlic and cinnamon and cook for a further minute.
  • Return the lamb shank to the pan, along with the carrot and celery. Pour in the water or veg stock (bear in mind water is better for baby). Bring to the boil, then put on the lid and transfer to the oven. Cook for 2 - 2 1/2 hours until the lamb is very tender.
  • Meanwhile wrap the sweet potatoes in tin foil and roast in the oven for 45 mins to 1 hour until completely tender. Scoop out the insides and mash with a little butter. For baby, shred the meat into small pieces and serve with the soft vegetables and mash. Serve everyone else with a whole shank and some veg, spoon over a little of the cooking liquor and put a dollop of mash on the side.

3 (12 ounce) bottles dark beer
1/2 cup firmly packed brown sugar
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 350f and place apples and butter in a baking dish Bake 30 minutes (you can do a batch or two of the apples ahead so you have them on hand when you want to do the Lamb's Wool Drinks).
  • In a large saucepan combine, apples, beer, brown sugar and spices.
  • Heat until just hot& serve.
