- Preheat oven to 375°. In a Dutch oven, heat oil over medium heat. Add lamb and onion; cook and stir until meat is no longer pink. Stir in flour until blended. Gradually add broth. Bring to a boil; cook until thickened, 1-2 minutes, stirring to loosen browned bits from pan. Add carrots, leeks, 1 Tbls. parsley, rosemary, salt, pepper and thyme. , Spoon into a greased 13x9-in. or 3-qt. baking dish. Cover with potato slices; brush with 2 tablespoons melted butter. Bake for 1 hour; brush the potatoes with remaining butter. Return to oven; bake until the meat is tender and potatoes are golden, 30 minutes to 1 hour longer. Cool briefly; sprinkle with remaining parsley., Freeze option: Before adding parsley, cover and freeze the baked, cooled casserole.To use, partially thaw in refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Reheat, covered, until a thermometer reads 165°, about 1 hour. Sprinkle with parsley.

ITALIAN BAKED LAMB & POTATOES
This dish for all its simplicity is phenomenal. So easy and so much flavour - to bring the most out lamb, try this baked wonder. It's a triumph.

Steps:
- Preheat oven to 400ºF/200ºC
- Drizzle a little oil into the bottom of a deep ovenproof pot or dish (around 9-10")
- Arrange some of the potato slices in one layer and scatter over a little of each cheese and a few pieces of the tomatoes and garlic.
- Arrange a couple of the chops in one layer.
- Season with a little salt & pepper and then scatter over more potatoes, tomatoes, garlic and cheeses.
- Repeat the process with another layer of chops, then finish off with more tomatoes, garlic, cheeses and salt & pepper.
- Top the whole thing with another layer of potatoes and then scatter over a generous layer of cheeses. Add around 1/4 cup water (you can also use dry white wine if you have some). Drizzle over a generous guzzle of olive oil (about 1/3 cup). You CAN reduce this if you like, but this is how much the Italian Nonnas use!
- Cover in foil and then bake for 1hr 15 mins.
- After that time, remove the foil and bake for a further 30 minutes.
- Serve with salad or crusty bread.

GARLIC & HERB ROAST LAMB ON BOULANGèRE POTATOES

- Heat oven to 190C/170C fan/gas 5. Cut small pockets into the skin and flesh of the lamb by piercing it with the point of a sharp knife. Stuff each pocket with a slice of garlic and a few leaves of rosemary, or scatter with thyme. Put in a roasting tin, season well with salt and freshly ground black pepper, then cover with foil.
- Peel and thinly slice the potatoes, rinse under the cold tap and pile into a large ovenproof dish or roasting tin. Toss with the onions, remaining slices of garlic and a good scattering of herbs.
- Heat the stock and butter together, then pour over the potatoes. Cover the dish with foil and bake in the oven with the lamb for 1 hr. Uncover, put the lamb on top of the potatoes and roast uncovered for 45 mins more. Allow the lamb to rest before carving, for about 15 mins. Leave the potatoes in the oven (covered, if starting to brown too much) until ready to serve.

LEMON & ROSEMARY TRAYBAKE LAMB

- Whisk the lemon zest and juice with 1 tbsp olive oil, the garlic, chopped rosemary leaves and seasoning. Add the lamb cutlets, toss to coat, then set aside to marinate for 30 mins if you have the time. Heat oven to 220C/200C fan/gas 7.
- Toss the potatoes with ½ tbsp olive oil and some seasoning. Tip into a large, shallow roasting dish and put in the oven for 15 mins.
- Remove the dish and shake to loosen the potatoes, then top with the peppers, lemon slices, rosemary sprigs and tomatoes. Drizzle with the remaining oil and some seasoning. Return to the oven for 10 mins.
- Place the lamb cutlets on top of the veg. Scatter over the olives and capers. Cook for a final 10-12 mins, turning the lamb halfway until it is just pink. Serve straight from the dish.
