Labskaus (Corned Beef, Potatoes, and Onions) image

A traditional meal served in the northern part of Germany. Simple, yet sophisticated.

1 small onion (chopped)
4 tsp butter or margarine (divided)
1 lb potatoes (peeled and quartered (about 4 medium))
1/2 cup milk
1 cup beef broth
10 oz corned beef (or 1 can, chopped)
1 in small can of sliced pickled beets
1 tbsp pickled beet juice
9 Rollmops (pickled herring wrapped around a gherkin pickle)
3 eggs
dash of salt
dash of pepper

Steps:

  • Cook the potatoes in salted water until soft. Brown the onions in 2 tsp butter for 3 minutes and remove from heat. Brown the corned beef cubes in the same pan until warmed through. Chop 5 beet slices small, reserving the rest.
  • Drain the potatoes and add the milk. Mash the potatoes with a potato masher. Add enough broth to moisten the potatoes. Fold in the browned onions, chopped corned beef, chopped beets and the beet juice. Season with salt and pepper.
  • Using a skillet, melt 2 teaspoons butter and fry the 3 eggs. Salt and pepper to taste.
  • Divide the Labskaus onto 3 pre-warmed plates. Arrange one fried egg on top of each mound of Labskaus, add the Rollmops, the reserved pickled red beets and spicy German pickles and serve at once.

Panackelty - My Grandma's Baked Corned Beef and Potatoes image

My grandma's recipe, an easy and tasty way mid-week meal made with corned beef, potatoes and onions - simple and packed with flavour. Panackelty is a corruption of the word Pan Haggerty; Panackelty is a baked dish consisting of meat, usually corned beef, bacon or lamb chops, and root vegetables (mainly potatoes and onions) which is left to bake throughout the day in a pot on low heat. Originating in the Sunderland area of North East England, the dish was a favourite of working-class families and was traditionally eaten on Monday as the leftover meat and vegetables from the previous day's meal could be used. A local version of the popular dish of Shepherd's Pie or Cottage Pie. I have a vegetarian recipe for this recipe, Recipe #423399. Historical Note: The families of miners and shipyard workers would often prepare this meal as it could be slow cooked by a housewife during the day while she continued with other household tasks. A hungry worker coming home would also be especially satisfied with the high in fat and carbohydrate content of the dish. There are endless interpretations of the dish, with different families using different ingredients. Other popular panackelty concoctions will include bacon, sausages, black pudding, beef stock, and occasionally pork or lamb chops and additional vegetables such as carrots. The vegetarian version is called Pan Haggerty, and it is thought that the meat version is a corruption of that word.

1 (340 g) can corned beef, sliced
1 large onion, peeled and thinly sliced
3 -4 large potatoes, peeled and thinly sliced
2 beef bouillon cubes (dissolved in 3/4 pint of water)
salt and pepper

Steps:

  • Layer onions, corned beef and potatoes in an ovenproof dish, finishing with a top layer of potatoes, seasoning with salt and pepper between each layer. (My grandma used an old oval enamel dish). Pour over the oxo stock and cover with a lid or foil.
  • Cook in the pre-heated oven, (Gas mark 5/190C/380F) for an hour, removing the lid/foil for the last quarter of an hour, continue baking until the potatoes are browned and cooked.
  • Serve hot with fresh green vegetables.

This is a family favorite. My grandfather started making for my dad when he was a little boy- a Norwegian dish that always pleases the whole family and leaves us begging for more. I realize that it may be confusing that there are no amounts listed. This is a "to taste" recipe. And the amounts are equal if you have a 3 lb roast then you use 3 lbs of potatoes. When mashing them together add milk/pot liquor to your preference of consistency. Also the seasonings you add should be to your taste i.e. garlic, salt, pepper, butter or other spices YOU like. Adapt this recipe to your taste and make it YOUR dish! I am now making amounts for those who are totally confused.

3 lbs corned beef
3 lbs potatoes
1 large onion (chopped)
2 garlic cloves, peeled and left whole
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup butter
1 cup milk

Steps:

  • Using the pound for pound corned beef to potatoes wash off any seasoning on corned beef, use any juice on a none seasoned corned beef in the boiling water. with onion and garlic.
  • Figure 20 minutes per pound for cooking.
  • Cook at a low boil, high boil will produce a tough roast.
  • Boil beef with salt and pepper until half way through cooking time.
  • Remove meat. Cut off all the fat and dispose; dice meat into small tiny pieces and put back into pot. i have actually chopped it up a little more in my food processor.
  • Wash, peel, and dice potatoes; add to the pot, continue to low boil until potatoes are done.
  • Be careful not to over cook potatoes.
  • Drain well over a large bowl to reserve juices (pot liquor).
  • In another large bowl mash potatoes and beef together adding milk, butter, and salt and pepper to taste. and making sure all are blended well and you have a smooth texture.
  • If additional liquid is needed, you can use some of the reserved "pot liquor" instead of more milk.
  • **TIP** For breakfast; fry up some like hash and have with eggs.
  • Its great!
