KRISPY BUCKEYES
A peanut butter candy with a chocolate coating. They look like buckeyes! This is a fun recipe to make with the kids. They love to mix it up and get their hands in the peanut butter, rolling the balls, and especially dipping it into the chocolate!

Steps:
- Mix confectioners' sugar, peanut butter, rice cereal, butter, and vanilla extract together in a bowl using your hands until dough is firm. Roll dough into balls about 3/4 inch in diameter. Arrange on a plate and refrigerate until set, about 30 minutes.
- Melt chocolate chips and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Place a toothpick into each peanut butter ball; dip 3/4 of each peanut butter ball into the melted chocolate. Return the buckeyes to the plate and refrigerate until chocolate has hardened, 1 hour.

BEST EVER BUCKEYES
Small peanut butter balls that taste even better than Reese's Cups. The taste so good- be careful, they are addictive!

Steps:
- Mix peanut butter, margarine or butter, powdered sugar, and vanilla in bowl (It helps to soften the margarine).
- Shape into 1" balls.
- Refrigerate balls.
- Meanwhile, melt chocolate with a bit of crisco (so the chocolate will harden. Without crisco, chocolate will remain soft.) in double boiler.
- Insert toothpick into refrigerated balls and dip into chocolate, leaving small area resembling a buckeye.
- Cool on wax paper and store in refrigerator or freezer.
BUCKEYES (CRISPY PEANUT BUTTER BONBONS)
I was unaware these were called 'buckeyes' until some midwestern friends informed me of their correct name. They were sort of an ad-lib dessert for a vegan/gluten-free catering job. I kept the recipe when I saw how fast they disappeared.

Steps:
- Cream peanut butter and powdered sugar in bowl of an electric mixer. Add rice cereal and mix until incorporated. (I find that using a whisk attachment, as opposed to the paddle attachment, crushes up the cereal a bit more effectively and results in a better texture.).
- Using a meatballer or a spoon, scoop out bits of the mixture and roll into 3/4" balls. Cover either two dinner plates or a cookie sheet in parchment and space the balls about 1" apart. Place in freezer for 15 minute to harden.
- Melt chocolate in a double-boiler over the stove or on 50% power in your microwave for about 2 minutes, stopping to stir once. Remove peanut butter balls from freezer. Poke one with a toothpick and swirl about 3/4 of the way up the sides in the chocolate mixture. Return it to the parchment and repeat the process for the remaining candies.
- Return tray of completed buckeyes to the freezer for 20 minutes, or until chocolate has hardened. Keep in freezer or refrigerator until serving. If frozen, allow to thaw 5 minutes before serving.

- In a large bowl, beat the peanut butter and butter until blended; gradually beat in confectioners' sugar and salt until smooth. Stir in crispy rice. Refrigerate until firm, 30 minutes. Roll into 1 inch balls and chill again. , Melt chocolate in the microwave. Dip balls into chocolate, allow excess to drip off. Place on a waxed paper-lined pan. Let stand until set.

- In a large bowl, mix the peanut butter, butter, vanilla, Add the icing sugar one cup at a time until your desired consistency has been met. How much confectioners/icing sugar you use will depend on your peanut butter, your butter, the humidity in your house, ETC. Add enough to the mixture until it's a harder dough that you can roll, doesn't stick to your hands too much and will hold it's shape. The dough won't be that sticky, it's a dryer dough but should still roll into balls.
- Roll the peanut butter dough into 1-inch balls and place on a parchment paper-lined cookie sheet.
- Poke a toothpick into the top of each ball (to be used later as the handle for dipping) and place in the freezer until the dough very firm, about 30 minutes.
- Melt the chocolate chips with the shortening in a double boiler or in a bowl set over a pan of barely simmering water. Stir the mixture frequently until smooth and all of the chocolate chips are melted together.
- Dip the now frozen peanut butter balls into the hot melted chocolate by holding onto the toothpick. In order to make them look like real Buckeyes leave a small portion of peanut butter showing at the top as shown in my photos.
- Put each Buckeye back on the cookie sheet. Remove the toothpicks and using your fingertip pat the top of the peanut butter mixture where the toothpick was and smooth it over so there isn't a hole anymore. Refrigerate until the chocolate has set.
- Keep in the refrigerator and between layers of waxed paper to prevent sticking. You can also freeze these for 4-6 weeks.
