Steps:
- In large pot over medium heat melt butter. Add onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Stir in garlic for about 1 minute. Stir in ground beef and cook, stirring and breaking up meat chunks with a spoon. Cook until meat is done, about 7 minutes until no longer pink. Toss herbs and pepper over the meat mixture, add salt to taste, and stir until well mixed.
- Add canned tomatoes with their juices, tomato sauce, tomato paste, and tomato juice. Add sugar to taste. Simmer gently while you prepare the pasta.
- Bring a large pot of salted water to the boil over high heat. Add macaroni and cook until al dente, stirring occasionally. Drain the macaroni and add to the chop suey.
- Serve hot.

- 1. Brown beef in shortening, breaking it with a spoon into small bits. Add onion, celery, tomato puree and spaghetti sauce. Cook, uncovered, over low heat for 20 minutes. 2. Combine crushed cracker crumbs, beaten egg, grated cheese, milk, parsley and salt. Stir cracker crumb mixture into tomato mixture. Pour into a greased 1 1/2 quart baking dish. Bake, uncovered, at 325°F for 40 minutes.

MOM'S AMERICAN CHOP SUEY
First off, let me say....it's bland. That's the way they cooked way back when!!!! Or maybe my mom did cause my dad was a meat & potato man, nothing spicy for him. I spice our's up by adding stuff!! I'm just giving you her recipe for some real comfort food. Four of us kids(oldest being 71 and youngest being 55) still make this. You have to add what you like to it. I can't change her recipe. Too many memories go along with this recipe.

- Heat water to cook spaghetti; then cook al dente and drain Brown meat, onion& green pepper; drain.
- Put spaghetti back into pot.
- To spaghetti pot, add drained chop meat mixture, 2 cans of tomato soup, 2 soup cans water, salt& pepper. Cook on medium until heated through stirring so it doesn't stick.
- This is how mom did it.
- I add alittle cayenne, but that's about it.
- I don't want to change it too much.
- I like the old fashioned memories.
- Kids like this meal.
AMERICAN CHOP SUEY (JUST LIKE MAMA USED TO MAKE)
I've found that the only place in the world that this recipe is called "American Chop Suey" is in and around the Boston area. Everywhere else it is known as goulash. Go into most any diner north of Boston, and "American Chop Suey" is on the lunch menu. This is a one pot meal that is terrific during these budget-conscious times. It is a comfort food that brings back wonderful childhood memories of simpler times. I've told friends that have asked for the recipe that if I give it to them, they have to call it "American Chop Suey", not goulash:).

- In a very large skillet, heat the olive oil. Add the chopped celery and cook a few minutes. Add the cut-up green bell pepper, and cook a few more minutes. Add the onion and continue to cook until celery, peppers, and onions are tender, about 5 minutes. Add the minced garlic and mix into the vegetables. Then add the ground beef, breaking up with a wooden spoon. Continue to cook until the ground beef is browned, about another 5 minutes, mixing the beef up with the vegetables. Sprinkle the mixture with the sugar, basil, oregano, and parsley and mix. Add the stewed tomatoes, juices and all. Add salt and pepper, to taste. Let simmer, covered, stirring occasionally.
- Meanwhile, cook the elbow macaroni, according to the directions on box, in a very large saucepan. But, don't overcook. The macaroni should be al dente, because it will continue to cook a little when added to the beef/vegetable mixture. Drain pasta and put back into the large saucepan in which it was cooked.
- Very carefully, add the beef and vegetable mixture, juices and all, to the drained pasta in the large saucepan. Mix well and keep heated, covered, stirring occasionally, on a very low heat.
- When ready to serve, just put the pot of "American Chop Suey" along with bowls in the middle of the table, so everyone can help themselves. Serve with a basket of good Italian bread and butter.

MY MOM'S AMERICAN CHOP SUEY
My mom used to make this all the time. She gave me the recipe one night when I was trying to use up some hamburg. It is something quick to throw together.

- Cook Elbows according to package directions.
- Drain and set aside.
- In a large skillet, brown the hamburg, onion and garlic together until the hamburg is done.
- Drain off the fat, return to skillet and add in the can of tomatoes.
- Add the oregano and salt, bring to a boil and then lower heat to a simmer.
- Let simmer for 30 minutes to blend flavors.
- After 30 minutes, add the elbows to the hamburg mixture and stir to coat.

- Boil elbow macaroni until just under cooked or al dente and drain.
- Chop onion and green pepper.
- Brown ground beef in a skillet with chopped onion and green pepper. Do not drain all of the grease. It brings out a lot of flavor.
- Combine macaroni, beef mixture, tomato soup, tomato sauce, and diced tomatoes in large pot.
- Simmer on very low heat and add salt, pepper, and other spices to taste. I add a little bit of garlic powder and italian seasoning for more flavor.
- Serve immediately or store for later.
CREAMY AMERICAN CHOP SUEY
I grew up eating the never ending pot of American Chop Suey. My mother would just add more tomatoes and pasta to it until I thought I would gag at the thought of one more dinner of it. Thing is, I wanted to have it when I got older after trying other people's versions, so I found some recipes and glued together this. It is creamy because of the cheese, but if you don't like it, you can have it "regular". Without the kids being little, I now add hot sauce to it to spice it up, but that is not a part of my original recipe.

- Heat 1 teaspoons Cooking oil in deep skillet over medium-high heat until shimmering. Cook ground beef, breaking it up but leave it a bit chunky, until browned. Drain.
- Add 1 Tbls. Cooking oil to pan and cook vegetables until softened, about five minutes.
- Add tomatoes, broth, and meat into pan. Bring to a simmer and cover.
