MY KOREAN DIPPING SAUCE



My Korean Dipping Sauce image

This is my own version of dipping sauce. The best version is my mom's, but since she never measures and is too swift in the kitchen to get down the exact proportions (she always gives me amounts like it should be THIS much in your palm) what am I supposed to do with that kind of measuring system? This is the next best thing and second best is just as good, right? ;-)

6 tablespoons soy sauce (I use Kikkoman)
3 tablespoons water
1 tablespoon rice vinegar or 1 tablespoon cider vinegar
1 tablespoon sesame oil
1 tablespoon granulated sugar
1/4 teaspoon ground black pepper
1 garlic clove, crushed
1 bunch green onion, chopped
1 tablespoon korean red pepper paste (Gochujang) (optional) or 1/2 jalapeno pepper, sliced (optional)

Steps:

  • Mix all ingredients together and let sit for at least 2 hours in the refrigerator before serving to let the flavors blend.
  • This will be heavy in the green onion department, so if you don't want as much, cut it down a little, but we love them and the green onions are what all of us go for first.
  • This is great with any kind of steamed or fried dumpling (like Chinese dumplings or Korean mandu).

KOCHUJANG SAUCE

This sauce is used in a few Korean dishes; most notably in Bi Bim Bap, but can also be used as a dip for vegetables, a flavouring for soups and stir-fry and as a marinade for grilled or barbecued tofu. I am new to Korean food, but we have a young Korean girl staying with us for 5 months, so I have been trying Korean recipes. She gave my Bi Bim Bap and 8 out of 10! A Korean friend of mine also tried my Kochujang Sauce and told me that my recipe was better than hers. I found this recipe on asiarecipe.com under the Korean sauces heading. Kochujang is a thick, miso-like paste made of soybean paste, red pepper powder and glutinous rice flour. Some brands are hotter than others.

2 tablespoons korean red chili paste (kochujang)
2 small garlic cloves, finely minced
1 tablespoon rice vinegar or 1 tablespoon cider vinegar
1 tablespoon soy sauce
1 teaspoon sesame oil
2 teaspoons sesame seeds, toasted
2 scallions, finely shredded on diagonal
2 teaspoons sugar (or other sweetener)

Steps:

  • Mix all ingredients together well.
  • Keeps a long time in the refrigerator.
  • This recipe also multiplies well.
  • If making Kochujang Sauce for Bi Bim Bap; double this recipe for 4 servings.
  • I usually quadruple the recipe so I always have some on hand in the fridge.

1 head red leaf lettuce
4 green onions (white part only)
¼ cup soy sauce
5 tablespoons water
2 teaspoons white sugar
¼ cup distilled white vinegar
2 tablespoons sesame oil
1 tablespoon red pepper flakes

Steps:

  • Wash, rinse and dry lettuce leaves; cut into bite-size pieces and place in a salad bowl. Slice the white parts of the green onions lengthwise into long thin strips (if they curl as you slice them, they are perfectly thin); add the sliced onions to the salad bowl.
  • In a small mixing bowl, whisk together the soy sauce, water, white sugar, vinegar, sesame oil, and red pepper flakes.
  • Directly before serving, pour the dressing over the lettuce and green onions in the salad bowl and toss to coat.
