KOREAN BBQ ESSENTIALS PART 2: AMAZING SPRING ONION SALAD image

The perfect accompaniment to any grilled meat. Upgrade your Korean BBQ with my spring onion salad, Ssamjang and Sesame Oil Dipping Sauce.

Spicy Spring Onion Salad
2 tbsp Korean Apple Vinegar
1 tbsp Soy Sauce
2 tbsp Korean Red Pepper Powder
2 tbsp Granulated Sugar
1 tbsp Roasted Sesame Seeds
1 tbsp Sesame Oil
200g Spring/Green Onions, thinly sliced
Mild Spring Onion Salad
1 tbsp Sesame Oil
3 tbsp Apple Vinegar
2 tbsp Granulated Sugar
½ tbsp Fine Sea Salt
1 tbsp Roasted Sesame Seeds
200g Spring Onions, thinly sliced

Steps:

  • Spicy Spring Onion Salad
  • Pour the apple vinegar, soy sauce, Korean chili powder, sugar and roasted sesame seeds in a bowl and mix them thoroughly.
  • In a separate bowl, add the sesame oil and the sliced spring/green onions. Mix well.
  • Pour the vinegar mixture into the mixing bowl. Mix them well and enjoy these gorgeous salads with your BBQ meat.
  • Mild Spring Onion Salad
  • Mix the sesame oil, apple vinegar, fine sea salt, granulated sugar and roasted sesame seeds in a bowl.
  • Add the sliced spring onions and mix them thoroughly. Enjoy these salads with your BBQ meat.

CHARRED SPRING ONIONS

This incredibly easy and healthy side dish makes a delicious addition to a barbecue feast, with plenty of smoky flavour

2 bunches of spring onions (about 20)

Steps:

  • If your barbecue hasn't already been heated, light and heat until the ashes turn grey, or heat a griddle pan. Wash the spring onions and pat dry. Trim off the ends, then place the onions directly on the barbecue or in a hot griddle pan.
  • When the spring onions have softened and blackened, take off the heat and move to a hot spot on the barbecue top to keep warm before serving.

This sharp side salad of spring and red onions finished with Korean chilli flakes and toasted sesame oil is perfect with barbecued dishes

Yield Serves 2-4 as a side

Number Of Ingredients 4

4 spring onions , cut into long, thin strips
¼ small red onion , thinly sliced
½ tbsp toasted sesame oil
1 tsp gochugaru chilli flakes (see tip)

Steps:

  • Put the spring onions and onion in a large bowl of iced water and soak for at least 5 mins (or up to 2 hrs) in the fridge, until the spring onions curl up.
  • When ready to serve, drain well, spin in a salad spinner or pat dry, then transfer to a medium bowl. Add the sesame oil, gochugaru and a pinch of salt, then toss to coat. Serve immediately.
