WHOLE ORANGE CAKE (SUPER MOIST)



Whole Orange Cake (super moist) image

Super moist and bursting with fresh orange flavor, this whole orange cake will become a new favorite. Rich, sweet and citrusy. Eat it unadorned or drizzle on an orange buttercream glaze to take it over the top.

2 large seedless oranges (about 184g each)
3/4 cups (170g) butter, cut in chunks (1 1/2 sticks)
1 1/4 cups (250g) granulated sugar ((use an extra 1/4 cup/50g if oranges aren't too sweet))
3 large eggs
2 cups (256g) all purpose flour Note 2
2 teaspoon baking powder
1/4 teaspoon salt (skip if using salted butter)
1 cup icing sugar (also called confectioners or powdered sugar)
2 tablespoon butter, softened
1 orange (use half an orange for fresh orange juice and zest) (other half for decoration )
1/4 teaspoon vanilla extract

Steps:

  • HEAT OVEN TO 350F/177C. Spray 9 inch (23cm) springform pan with oil. Note 1 for other pan options.
  • PREPARE ORANGES: Using a sharp knife, place orange on cutting board and slice off the thin top orange layer all around the orange. Try to get as little of the white pith layer as possible (leaving on some is fine - no need to obsess!). Then slice off the white pith layer and discard. Repeat with second orange. Cut oranges into quarters. Shortcut: If your oranges only have a very thin layer of pith, you can use the whole orange.
  • CREAM BUTTER, SUGAR, EGGS: Place butter, sugar and eggs in food processor bowl. Process for 2 minutes at high speed until fluffy and creamy. Scrape down sides of bowl once or twice. Scoop mixture into medium-large bowl.
  • GRIND ORANGES: Place oranges and orange peels in food processor. No need to clean out processor first. Process until finely blended, about 1 minute. Scrape orange mixture into bowl with butter mixture.
  • FINISH BATTER: Add flour mixture of flour and baking powder. Gently fold into wet mixture just until incorporated. Do NOT over mix or the cake will be dense. Pour batter into prepared pan. Tap pan on counter to level the batter evenly.
  • BAKE: for 45-50 minutes or until cake no longer jiggles when shaken and when cake tester or toothpick is inserted in center and comes out clean. Two 8" round pans will take less time, about 25-35 minutes. Timing depends on size of oranges (amount of liquid in cake) and your oven (all ovens are different and not perfectly accurate on temperatures). Remove from oven and let cool for 10 minutes before removing on pan. Cool completely on cooling rack before frosting.
  • MAKE FROSTING/GLAZE (OPTIONAL): While cake is baking, whisk icing/confectioner sugar, 1/2 of orange juice and orange zest with a fork in a small bowl. Add more orange juice until you get the consistency you like. Note 3 for traditional orange buttercream frosting.
  • DECORATE: Sprinkle orange cake with powdered icing sugar (through a sieve) if not using frosting. If using frosting/glaze, spread it on top of cake letting it slip down the sides if desired. Decorate cake with orange zest strips, orange slices, drained mandarin oranges, a little bit of zest or crushed nuts if you like.

A recipe from Joanne Fluke's Book "Key Lime Murder". I don't like anything Orange, and am not a huge fan of cake, but I do like this cake.

Number Of Ingredients 12

18 ounces yellow cake mix
3 ounces orange Jell-O
1 cup orange juice
1 teaspoon orange extract
1/2 cup vegetable oil
1 teaspoon orange zest, I don't use this (optional)
4 large eggs
1 cup min chocolate chips
2 tablespoons butter, chilled
1 cup semisweet chocolate morsel
1 teaspoon orange extract
2 tablespoons orange juice

Steps:

  • Grease and flour Bundt pan. I use Bakers Joy spray.
  • Dump the cake mix in a large mixing bowl.
  • Mix in orange Jell-O powder.
  • Add the orange juice, orange extract, oil and orange zest.
  • Mix all ingredients together until they are well blended.
  • Add eggs one at a time, mixing after each addition.
  • Beat for 2 minutes on medium speed with electric mixer.
  • Fold in mini chips by hand.
  • Pour cake batter into pan.
  • Bake cake for 45-55 minutes or until side of cake separates from side of pan.
  • Cool on a rack for 20-25 minutes.
  • Loosen the outside edges and middle edges of cake and turn cake onto rack.
  • Let cake cool completely on rack.
  • Frostng:.
  • put butter in bottom of a 2 cup microwave safe bowl.
  • Add the semi sweet morsels.
  • Heat on high for 1 minute.
  • Stir to make sure morsels are melted;repeat at 15 second intervals until they are melted.
  • Add the orange extract and stir in: add the orange juice one teaspoon at a time, stir after each addition.
  • Pour frosting over the ridge of the cake, letting it run down the sides of the cake.

1 1/4 cups sugar
1 cup milk
1/2 cup olive oil
Zest of 1 orange, minced
1 3/4 cups flour, sifted
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 orange
1 1/2 cups orange juice
1 1/2 cups sugar

Steps:

  • Preheat an oven to 400 degrees F. Butter an 8-inch cake pan with 2-inch sides, then dust with sugar and flour.
  • Beat the eggs with the sugar to pale yellow ribbons. Beat in the milk, oil and orange zest. In a small bowl, sift the flour with the baking powder, baking soda, and salt. Add the flour mixture to the egg mixture a tablespoon at a time, stirring well after each addition.
  • Pour batter into prepared cake pan and bake for 45 to 55 minutes or until middle of cake springs back when lightly touched. Remove cake from oven, let cool slightly on a rack, then invert and cool completely.
  • Meanwhile, prepare the syrup: Use a sharp paring knife to cut the orange rind off the orange used for zest and the remaining orange, leaving the bitter white pith on the orange. Cut the skin into very thin strips and reserve. Cut away and discard the white pith, remove the orange supremes, and reserve.
  • In a large saucepan, combine the orange juice, sugar, and thin orange strips. Bring to a simmer and cook for 30 minutes, or until a thick syrup. Strain the syrup and reserve the orange strips, along with 1/2 cup of the syrup. Use a toothpick to poke holes in the top of the cake, then pour the warm strained syrup all over the cake so that it soaks through.
  • Place the remaining 1/2 cup syrup in a small saucepan, bring to a simmer and reduce to a few tablespoons. Use a spatula to spread the thick glaze over the top of the cake. Place cake on a serving platter, and arrange the reserved orange strips and orange supremes on top of the cake.

1 (18 1/4 ounce) box yellow cake mix
1 (1/3 ounce) orange Jell-O (the small box)
1 cup hot water
3 eggs
3/4 cup oil
2 teaspoons orange flavoring
2 cups powdered sugar
orange juice (enough to make into glaze consistency)

Steps:

  • Pre-heat oven to 350 degrees.
  • Dissolve jello in the hot water; let cool, but not thicken.
  • Mix together cake mix, oil, orange flavoring, 3 eggs. Add the orange jello mixture. Mix well.
  • Pour into sprayed 9 X 13 inch cake pan and bake at 350 degrees 25-30 minutes or until done.
  • While cake is baking, combine 2 cups of powdered sugar and enough orange juice to form a glaze. (I'd say 1-3 tablespoons of orange juice). Just make sure you add it slowly!
  • Pour glaze over cake after removing from the oven.

Steps:

  • Preheat oven to 350*.
  • Grease a 10-inch bundt pan.
  • Cream the butter and gradually add the sugar, beating until light.
  • Beat in egg yolks, one at a time, and the orange zest.
  • Add dry ingredients alternately with the orange juice to the batter.
  • Beat the egg whites until stiff and fold them into the batter.
  • Pour batter into the prepared bundt pan.
  • Bake for 30 to 35 minutes, or until sides of cake shrink away from edges of pan and a cake tester inserted in the center comes out clean.
  • Cool for 10 minutes in pan, unmold onto a rack, and drizzle with Orange Glaze while warm.
  • Cool before serving.
  • Orange Glaze: Combine orange juice and sugar in a small saucepan and simmer gently for 5 minutes, stirring occasionally, until a light syrup forms.

This is a very old-fashioned cake, tender and moist, with a nice orange flavor. This came from Reminisce magazine. I have not tried this recipe, but I'm posting it for safe keeping.

1 cup butter, softened
2 cups sugar
5 eggs
1/2 cup orange juice
1 tablespoon grated orange peel
2 1/2 cups self rising flour
1 cup whole milk
1/4 cup butter, softened
3 3/4 cups confectioners' sugar
1/3 cup orange juice
1 tablespoon grated orange peel

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in orange juice and peel. Add flour to the creamed mixture alternately with milk, beating well after each addition.
  • Pour into 2 greased and floured 9"-inch round baking pans. Bake at 350 for 25-30 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes before moving from pans to wire racks to cool completely.
  • In a large bowl, beat butter until light and fluffy. Add the confectioners' sugar, orange juice and peel; beat until smooth. Spread glaze between layers and over the top and sides of cake.
  • Note: As a substitute for each cup of self-rising flour, place 1 1/2 teaspoon baking powder and 1/2 teaspoon salt in a measuring cup. Add all purpose flour to measure 1 cup.
