Plan ahead the chicken needs to soak in the milk mixture before breading --- you will need garlic powder and fresh garlic for this, do not use fresh garlic for the flour mixture or it will burn while cooking. this recipe may be doubled although you will need to make two separate bowls of breading mixture do not double the amounts into one bowl. --- serve with mashed potatoes and gravy, see my recipe#145064

4 boneless skinless chicken breasts (pounded semi-thin or leave thick see step 6)
1 cup oil (or as needed for frying)
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon fresh ground black pepper
1 1/2 teaspoons seasoning salt
1 teaspoon paprika
1 cup all-purpose flour
1/2 cup dry breadcrumbs
1/4-1/2 teaspoon cayenne pepper (adjust to suit heat level) (optional)
1 large egg
3/4 cup milk
2 tablespoons fresh minced garlic
1 1/2 teaspoons cumin (you may use more if desired)

Steps:

  • In a bowl whisk the egg then whisk in milk, fresh garlic and cumin.
  • Place the chicken in the mixture and refrigerate for 1 or more hours.
  • In a shallow dish combine garlic powder with onion powder, black pepper, seasoned salt, paprika, flour, breadcrumbs and cayenne pepper (if using).
  • Heat 1 cup oil in a heavy skillet to 350 degrees F.
  • Remove the chicken from the egg/milk mixture allowing excess to drip off, then coat in the flour/breadcrumb mixture.
  • Fry the chicken in hot oil about 5-6 minutes per side or until cooked through (if you do not pound the chicken breasts thin you may partially cook the chicken in the skillet then remove to a baking sheet and finish cooking in the oven if desired).
  • Remove to paper towels or a brown paper bag to absorb the oil.

Kittencal's Moist Cheddar-Garlic Oven Fried Chicken Breast image

This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken! Steps:

  • Preheat oven to 350°F.
  • Butter an 11 x 7-inch pan (if using more than 4 breasts use a larger pan).
  • In a bowl, combine melted butter with fresh minced garlic, 1 teaspoon garlic powder and salt.
  • In another bowl, combine the dry breadcrumbs with 1/2 cup finely grated cheddar cheese, Parmesan cheese 1 teaspoon garlic powder and coarse ground black pepper.
  • Dip chicken in butter mixture; then in crumb mixture.
  • Place in prepared pan and bake uncovered for 35-45 minutes or until cooked through, larger breasts may take more time (placing the chicken on a rack in a pan will produce an extra crispy crust).

You may not have your chicken any other way after you taste this! --- browning the chicken in oil firstly adds lots flavor, make certain to bread all the chicken breasts and have them ready on a plate before browning.

6 large boneless skinless chicken breasts
2 large eggs
2 tablespoons Dijon mustard
1 1/2 cups dry breadcrumbs
1 teaspoon garlic powder (if you are a garlic lover add in 1/2 teaspoon more)
1 teaspoon seasoning salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon paprika
1 pinch cayenne pepper (optional)
oil (for frying, use as needed)

Steps:

  • Prepare an ungreased baking sheet/pan.
  • Pat the breasts dry using paper towels.
  • In a shallow dish whisk the eggs with Dijon mustard until well blended.
  • In another shallow dish (I use my 8x8-inch baking pan for this) combine the dry bread crumbs with the garlic powder, seasoned salt, black pepper, paprika and cayenne pepper.
  • Have 1 or 2 plates ready to put the breasts on after breading I just use the ungreasd baking sheet.
  • Dip one chicken breast into the egg/mustard mixture allowing any excess to drip off, then place the breast into the breadcrumb mixture turning to coat with the crumbs and pressing down with hands firmly to adhear the coating to the chicken; place onto a plate (or the prepared baking sheet).
  • Continue with remaining chicken.
  • Cover the bottom of the skillet with oil then heat over medium-high heat.
  • Add in the breaded chicken breasts one or two at a time and brown both sides (about 3 minutes per side or until golden brown, do not cook thoroughly).
  • Transfer to ungreased baking sheet.
  • At this point you may leave the chicken in the pan until ready to bake.
  • Set oven to 400 degrees F.
  • Bake the browned chicken for 30 minutes or until cooked through.

3 lbs chicken
4 sprigs fresh rosemary
10 leaves fresh sage
2 garlic cloves
fresh ground black pepper (20-30 turns pepper mill)
2 eggs
2 tablespoons extra virgin olive oil
3 teaspoons salt
10 ounces flour
2 quarts peanut oil, for deep-frying
1 -2 lemon

Steps:

  • Skin the chicken (optional) and cut it into small serving pieces using a heavy cleaver. Disjoint wings, thighs and drumsticks. Trim wing tips. Halve thighs and drumsticks. Seperate breasts from back and split breasts in half. Cut each half into 4-5 pieces (depending on size). Place all chicken pieces in a large bowl.
  • Prepare the marinade. Mince the rosemary, sage and garlic and add to the chicken pieces. Add the eggs, olive oil, salt and pepper.
  • Mix well, rubbing the chicken with the marinade. Let stand in the refridgerator for 4-6 hours.
  • Place flour on a tray. Dredge the chicken pieces in the flour. When the chicken pieces are completely coated with flour, squeeze the chicken pieces so as to press the flour up against them. You will have a lot of flour left over.
  • Heat the peanut oil in a deep fryer. The oil will have reached the right temperature when you place a small piece of bread in the oil and it sizzles immediately upon contact. Or when a thermometer reads 350°F.
  • Fry the chicken pieces in two batches. Do not overcrowd the fryer. In about 10 minutes the chicken pieces should be ready. Do not overcook the chicken or it will lose its moistness.
  • Take the chicken out of the oil with a slotted spoon and drain on paper towels. Sprinkle with salt.
  • Serve the chicken with lemon wedges.

1 1/2 teaspoons garlic powder
1 cup panko breadcrumbs (can use regular dry breadcrumbs but the coating will not be as crispy)
1/3 cup freshly grated parmesan cheese
2 teaspoons garlic powder (can use more garlic powder)
1/2 teaspoon seasoning salt
1 teaspoon fresh ground black pepper
1/2 teaspoon dried Italian seasoning (do not use more than 1/2 teaspoon or the flavor will be too strong)
1/4 teaspoon cayenne pepper (or adjust to taste)

Steps:

  • Preheat oven to 375 degrees F.
  • Set oven rack to lowest position.
  • Grease a small baking sheet.
  • In a shallow bowl combine melted butter with 1-1/2 teaspoons garlic powder and (if using) 2 teaspoons Dijon mustard.
  • In another bowl combine all breading ingredients (remove about half to another small bowl to add in as needed).
  • Dip the breast into the melted butter turning a few times to coat generously, then coat in the breading mixture pressing down firmly with hands to adhere the coating to the breast (you may need to turn the chicken breast a few time to coat well).
  • Place on baking sheet.
  • Continue with remaining chicken adding in more breading to the bowl as needed to coat the chicken.
  • Bake for about 35-40 minutes or until the chicken is cooked through.

If you are a garlic-lover such as myself you may want to mix in 1 tablespoon fresh finely minced garlic or 1/2 teaspoon garlic powder when melting the butter --- plan ahead the rolled breasts need to be refrigerated for a minimum of 3 hours or up to 24 hours before breading, this will allow for easier handling while breading and firm up the cream cheese mixture --- these are very good!

8 large boneless skinless chicken breasts
1/2 cup melted butter, slightly cooled (might need more)
1 1/2 cups dry breadcrumbs
1/4 cup parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon seasoning salt (optional)
1/2 cup finely grated mozzarella cheese (optional) or 1/2 cup cheddar cheese (optional)
1 (8 ounce) cream cheese (very soft but not melted)
1 cup finely shredded mozzarella cheese (another 1/4 cup won't hurt)
1/2 cup grated parmesan cheese
1/2 teaspoon dried Italian seasoning (rubbed between fingers to release the flavor)
1/2-3/4 teaspoon garlic powder
1/2 teaspoon seasoning salt (or to taste)

Steps:

  • Pound the chicken breasts to slightly flat between two pieces of waxed paper or plastic wrap.
  • In a bowl combine all filling ingredients until very well combined.
  • Spread the filling mixture onto each of the chicken breasts; starting at the short end roll up each breast, don't worry about covering the whole breast with the filling (if desired you may secure each breast with a long toothpick but it is not necessary as after the breasts are chilled they will hold together).
  • Place the breasts on a large plate or platter; cover with plastic wrap and refrigerate for minimum 3 hours or up to 24 hours (the longer the better).
  • Place the melted butter in bowl.
  • In a shallow bowl combine the breadcrumbs with Parmesan cheese, garlic powder and seasoned salt (if using).
  • Gently dip each rolled breast firstly into melted butter then coat in the breadcrumb mixture.
  • Place the coated breasts seam-side down into a 13 x 9-inch baking dish spacing slightly apart.
  • Set oven to 375°F (set oven rack to bottom position).
  • Bake for about 30 minutes (some of the cream cheese mixture might spill out while cooking, just scoop it onto the plate when serving).
  • If using sprinkle finely grated mozzarella or cheddar cheese onto and around the breasts and return to oven for about 3 minutes to melt.

1/4 cup kosher salt, plus
2 tablespoons kosher salt
1/4 cup fresh ground pepper
1/4 cup extra virgin olive oil
1 1/2 tablespoons rosemary, minced, plus
4 medium rosemary sprigs
1 1/2 tablespoons thyme, minced, plus
4 fresh thyme sprigs
1 1/2 tablespoons sage, minced, plus
4 sage sprigs
5 bay leaves, minced, preferably fresh, plus
5 whole bay leaves
3 garlic cloves, minced, plus
1 head garlic, broken into cloves
2 whole chickens
1 quart buttermilk
1 tablespoon hot sauce (Tabasco)
1 teaspoon sugar
grapeseed oil or vegetable oil, for frying
2 cups all-purpose flour
1/2 cup rice flour
1/4 cup garlic powder
1/4 cup onion powder
sea salt, flaky, for sprinkling
lemon, wedges for serving

Steps:

  • Preheat the oven to 200°. In a bowl, whisk 3 tbls of the kosher salt with 2 tbls of the pepper, the olive oil and the minced rosemary, thyme, sage, bay leaves and garlic. Rub the mixture all over the chickens and set them in a roasting pan. Roast for about 2 hours and 30 minutes, until an instant-read thermometer inserted in the inner thighs registers 150°. Let the chickens cool, then cut each into 10 pieces. (You should have 4 drumsticks, 4 thighs, 4 wings and 8 breast quarters.).
  • In a very large bowl, whisk the buttermilk, with the hot sauce and sugar. Add the chicken pieces and toss well. Cover and refrigerate for 1 hour.
  • In a large saucepan, heat 2 inches of grapeseed oil to 375° with the rosemary, thyme and sage sprigs, the 5 whole bay leaves and the head of garlic. When the herbs are crispy and the garlic is golden, transfer to a paper towel-lined plate.
  • Meanwhile, in a large bowl, whisk the all-purpose and rice flours with the garlic and onion powders. Whisk in the remaining 3 tbls of kosher salt and the remaining 2 tbls of pepper.
  • Remove half of the chicken pieces from the buttermilk, letting the excess drip back into the bowl. Dredge the chicken in the seasoned flour, patting it on lightly so it adheres. Fry the chicken over high heat, turning occasionally, until golden and an instant-read thermometer inserted in the thickest part of each piece registers 160°, about 6 minutes for the breasts and 8 minutes for the wings, thighs and drumsticks. Transfer the fried chicken to a paper towel-lined baking sheet to drain. Let the oil return to 375° before you coat and fry the remaining chicken. Transfer the fried chicken to a platter and garnish with the fried garlic and herbs. Sprinkle with flaky sea salt and serve right away. with lemon wedges.

1 whole broiler-fryer chickens, cut up into 8 pieces or 4 chicken breasts
6 -8 cups shortening
1 cup milk
1 egg (beaten)
2 cups all-purpose flour
1/8 teaspoon paprika
1/8 teaspoon baking powder
1/8 teaspoon garlic powder
3/4 teaspoon msg (I did not use, i used Adobo)
2 1/2 teaspoons salt
3/4 teaspoon pepper
1 1/4 cups cold water
1 teaspoon salt
1 teaspoon potassium chloride (Used Adobo) or 1 teaspoon adobo seasoning (Used Adobo)
1 tablespoon msg (monosodium glutamate, I Did not use)
1/8 tablespoon garlic powder
2 tablespoons bottled chicken stock (I used broth, didn't have stock)

Steps:

  • Combine all the marinade ingredients to make the marinade.
  • Trim any excess fat and skin from the chicken pieces and marinate them for a couple of hours. (I used 2 hours).
  • Mix the milk with the egg in a bowl.
  • Combine the other dry ingredients in another bowl.
  • Drain the marinated chicken on paper towels.
  • Dip each chicken piece in the egg and milk, and then coat it in the dry flour mixture.
  • Dip into the egg and milk mixture again then back in the flour. Make sure every piece is well coated.
  • Preheat the shortening in a deep fryer to 350 degrees F.
  • Stack the chicken on a plate until each piece is coated.
  • Drop the chicken pieces into the hot shortening, one at a time with tongs being careful not to splash any of the hot oil to avoid burns. Oven mits are a good idea.
  • Fry 4 pieces of chicken at a time until golden brown.
  • This will take 12 to 15 minutes. Stir the chicken halfway through the cooking time for an even finish.
  • Drain the chicken pieces on wire racks for 5 minutes and serve hot.
