There are all kinds of King Ranch chicken recipes out there, but this one is the ''BEST OF THE BEST" in my house. This is truly a scrumptious dish and your family and friends will love you for it. It does take some preparation time, but it's worth the time and effort.

Number Of Ingredients 16

1 (4 1/2 lb) roasting chickens
2 celery ribs, cut into 3 pieces each
2 carrots, cut into 3 pieces each
2 1/2-3 teaspoons salt
2 tablespoons butter
1 medium onion, chopped
1 medium green bell pepper, chopped
1 garlic clove, pressed
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
2 (10 ounce) cans diced tomatoes and green chilies, drained
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder (see note)
3 cups grated sharp cheddar cheese
12 (6 inch) fajita-size corn tortillas, cut into 1/2-inch strips

Steps:

  • If applicable, remove giblets from chicken, and reserve for another use. Rinse chicken.
  • Place chicken, celery, carrots, and salt in a large Dutch oven with water to cover. Bring to a boil over medium-high heat; reduce heat to low. Cover and simmer 50 minutes to 1 hour or until chicken is done. Remove from heat. Remove chicken from broth; cool 30 minutes. Remove and reserve 3/4 cup cooking liquid. Strain any remaining cooking liquid, and reserve for another use.
  • Preheat oven to 350°. Melt butter in a large skillet over medium-high heat. Add onion, and sauté 6 to 7 minutes or until tender. Add bell pepper and garlic, and sauté 3 to 4 minutes. Stir in reserved 3/4 cup cooking liquid, cream of mushroom soup, and next 5 ingredients. Cook, stirring occasionally, 8 minutes.
  • Skin and bone chicken; shred meat into bite-size pieces. Layer half of chicken in a lightly greased 9x13-inch baking dish. Top with half of soup mixture and 1 cup Cheddar cheese. Cover with half of corn tortilla strips. Repeat layers once. Top with remaining 1 cup cheese.
  • Bake at 350° for 55 minutes to 1 hour or until bubbly. Let stand 10 minutes before serving. You'll want to make extra because it truly is even better the next day.
  • Chili Powder Note: 1 teaspoons chili powder and 1/8 teaspoons ground red pepper.

1 chopped green bell pepper
1 chopped onion
2 tablespoons vegetable oil
2 cups chopped cooked chicken
1 can cream of chicken soup
1 can cream of mushroom soup
1 can diced tomato and green chiles
1 teaspoon chili powder
1/4 teaspoon salt
2 pinches garlic powder
2 pinches pepper
12 corn tortillas, torn into 1-inch pieces
2 cups grated Cheddar cheese

Steps:

  • In a large skilled over medium-high heat, sauté bell pepper and onion 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.
  • Layer one-third of torn tortillas in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice. Bake at 350°F for 30 to 35 minutes.

King Ranch casserole is a Texas version of lasagna. If you love chicken and chiles, cheese and peppers, you will love this casserole. My family sure did!

Number Of Ingredients 22

6 T butter or olive oil, plus more to grease the pan
1 1/2 c chopped onion
1 c chopped red bell pepper
1 jalapeno pepper, seeded and chopped
1 can green chilies, drained OR 1 c chopped poblanos OR BOTH!
2 chopped garlic cloves
1 T chile powder (I like ancho)
1 T ground cumin
1 t kosher salt
1 /2 t fresh ground black pepper or more to taste
3/4 t smoked paprika
1/4 c flour
1 3/4 c chicken stock (I use Better Than Bouillion and make my own)
1 t liquid hickory smoke or more to taste
1 10 oz can Ro-Tel tomatoes with green chiles, drained OR 1 14 oz can diced tomatoes, drained, and 1 4 oz can of green chiles
1 1/2 c sour cream
5 c shopped or shredded cooked chicken
1 c fresh cilantro, chopped
2 c shredded Monterey Jack cheese (I like the Jalapeno Jack version)
2 c shredded sharp Cheddar cheese
18 corn tortillas, cooked until crisp or tostada shells from the grocery
Cooking Spray for the tortillas

Steps:

  • Melt the butter or oil in a large skillet over medium high heat. Add the onions and peppers and cook until lightly browned, 8 to 10 minutes.
  • Add the garlic, chile powder, cumin, salt, pepper and smoked paprika. Stir for 1 minute.
  • Sprinkle the flour over the veggie mixture and cook stirring constantly for 1 minute. Slowly whisk in the stock and bring to a boil. Boil until mixture thickens, which could take 1 - 2 minutes. Remove from heat and stir in liquid smoke, drained tomatoes and sour cream. Add chicken and cilantro and stir until blended. (Feel free to make this the day before if you want to do this in stages.)
  • Combine cheeses together in a large mixing cup.
  • Spray corn tortillas with cooking spray and bake in a 400 degree oven for about 5 minutes. You will have to do this in two batches. (Or try buying tostada shells and let me know how they work!) when finished baking, turn the oven temperature down to 375.
  • Grease the bottom of a 13 x 9 baking dish. Cover with 6 tortillas, overlapping slightly. Top with 1/2 the chicken mixture and 1/3 of the cheese mixture. Repeat the layers once, adding 6 more tortillas, the chicken and the cheese. Top with remaining tortillas and the cheese.
  • Coat a sheet of aluminum foil with cooking spray or oil and cover the baking dish. Bake for 20 minutes.
  • Uncover the casserole and bake for 10 to 15 minutes more or until golden and bubbly.
  • Let casserole stand for 10 minutes to cool slightly. Garnish with more cilantro or pickled jalapenos!

1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter
3 to 5 tablespoons ice water
FILLING:
12 bacon strips, cooked and crumbled
1/2 cup shredded pepper jack or Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. Bake 5 minutes longer; remove from oven and cool on a wire rack. Reduce heat to 375°., Sprinkle bacon, cheeses and onion over crust. Beat remaining ingredients until blended; pour over top. Bake until a knife inserted in center comes out clean, 30-35 minutes. Let stand 10 minutes before cutting.

Kim says I dont layer this casserole, I just mix it all together and sprinkle the cheese on top and then bake it. It's just as good and quicker. Also, you can use the healthier versions of soups and chips to make it less fattening and nobody will ever know. I found this recipe at Obesity Help. This recipe was posted by kimhouse. My family wasn't crazy over this recipe, but I posted it for safe keeping. When I made this recipe I took Kim's advice and mixed eveything together. I baked my chicken instead of boiling it. I was out of Rotel so I used petite diced tomatoes and a can of green chilies. I used canned chicken broth. I could only find 11 1/2oz bag of corn chips. I felt 16oz of cheese was to much so I used 8oz and mixed this in with everything.

  • Boil chicken until done and cut into small chunks. Be sure to save 1 cup broth when chicken has finished cooking or use canned broth.
  • Mix cream of chicken, cream of mushroom, Rotel tomatoes and chicken broth; heat on stove.
  • Layer 1/2 of chicken, 1/2 broth mix, 1/2 of chips, 1/2 of onion, 1/2 cheese and repeat above.
  • Bake 35-40 minutes at 350 degrees in 9 1/2 x 13 inch greased pan.

8 flour tortillas, ripped into 1/4ths
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can Ro-Tel tomatoes
4 ounces Velveeta cheese, cut into bite size chunks

Steps:

  • Preheat oven to 350 degrees.
  • Put chopped chicken, cream of mushroom soup, Ro-tel tomatoes, and chunks of Velveeta into a bowl; stir them together.
  • Spray baking pan with Pam, and then cover the bottom of the pan with half of the tortilla triangles.
  • Pour half of the mixture in your bowl on top of the tortillas and spread it around so that it covers all of the tortillas.
  • Put remaining half of tortillas on top of the mixture.
  • Pour the rest of the mixture from your bowl on top of the second layer of tortillas and once again spread it around onto all of the tortillas.
  • Cover top of baking pan with foil and let the casserole cook for 30 minutes.

1 rotisserie chicken, deboned and shredded
corn tortilla
4 ounces sharp cheddar cheese

  • Slice mushroom and onions and saute with butter until onions are clear and mushrooms are begin to get soft. Add garlic and saute for 1 extra minute.
  • Drain Rotel tomatoes and chilies and add into saute with 1 tsp chili powder.
  • Stir in cream of chicken soup and rotisserie chicken and heat through. Line 13x9 inch casserole dish with corn tortillas. Pour half of the filling over and top with another layer of tortillas. Finish with the rest of the filling and cheeses.
  • Cook at 350 for 20-30 minutes until bubbly.
