Keto Shepherd's Pie Recipe (Cauliflower Shepherd's Pie) image

This low carb keto shepherd's pie recipe (a.k.a. keto cottage pie) is pure comfort food bliss! Healthy cauliflower shepherd's pie features flavorful meat sauce, veggies, and a healthier topping.

1 recipe Mashed cauliflower ((2 cups))
2 tbsp Olive oil
1 small Onion ((diced; ~1/2 cup))
1/2 cup Carrots ((diced))
1/2 cup Green bell peppers ((diced))
1 lb Ground lamb ((or ground beef))
1/2 tsp Sea salt
1/4 tsp Black pepper
1 cup Beef bone broth ((or regular beef broth))
1 tbsp Coconut aminos
2 tbsp Tomato paste
1/2 tbsp Italian seasoning

Steps:

  • Make the mashed cauliflower according to instructions here. Set aside.
  • Preheat the oven to 400 degrees F (204 degrees C).
  • Heat oil in a large enameled cast iron skillet over medium heat. Add the onions, carrots, and peppers. Saute for 6-10 minutes, until lightly browned.
  • Push the vegetables to the sides of the pan. Add the ground lamb, breaking apart with a spatula. Season with salt and pepper. Cook for 7-10 minutes, until the ground meat is brown.
  • Stir in the broth, coconut aminos, tomato paste, and Italian seasoning. Bring to a boil, then simmer, uncovered, for about 5 minutes, until most of the liquid evaporates and you have meat in a thick sauce. Remove from heat.
  • Drop dollops of mashed cauliflower over the pan and use a rubber spatula to spread evenly.
  • Bake for 10-15 minutes, until the edges are bubbly.
  • If desired, place under the broiler for 2-4 minutes, until the edges are golden.

4 -6 pieces bacon, chopped
2 lbs ground beef
1/2 cup onion, chopped
salt and pepper
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 egg, beaten
8 ounces cheddar cheese, shredded and divided
16 ounces frozen green beans
16 ounces frozen cauliflower
3 tablespoons butter, divided
1/4 cup sour cream

Steps:

  • In large skillet, fry bacon until crisp; drain well and set aside.
  • In same skillet, brown the hamburger and onion, seasoning with salt and pepper; drain fat.
  • In 8"x12" baking dish, mix hamburger, bacon, onion and garlic powders.
  • Check seasoning for salt and adjust if needed, then stir in the beaten egg and 1/2 the cheese.
  • Spread over bottom of baking dish.
  • Meanwhile, in medium pot, cook green beans according to package directions; drain well then return to pot and stir in 1 tablespoon butter.
  • Season to taste with salt.
  • Spread beans over meat layer. In same pot, cook cauliflower 10-12 minutes until very tender; drain well.
  • Put cauliflower, 2 tablespoons butter and sour cream in food processor.
  • Puree until smooth.
  • Adjust seasoning, if necessary, then spread evenly over green beans.
  • Sprinkle remaining cheese over the top.
  • Bake at 350º for 35 minutes, until hot and bubbly.
