I adopted this recipe during the Recipezaar abandoned account recipe adoption. This is a delicious pie with an easy, no fuss crust. The crust is tender and flaky at the same time and the flavor is just the perfect amount of sweetness! 1/3 cup shortening
1/3 cup butter
2 cups flour
1/3 cup boiling water
1/2 teaspoon salt
1/2 teaspoon baking powder
7 granny smith apples
1 teaspoon cinnamon
1 1/2 tablespoons butter
3/4 cup sugar

Steps:

  • Crust: Mix shortening, 1/3 cup butter and flour.
  • Add boiling water, salt and baking powder.
  • Mix well.
  • Separate into 2 balls; place between 2 pieces of wax paper; roll.
  • Filling: Peel, core and slice apples.
  • Lightly mix cinnamon and sugar with the apples.
  • Heap into pastry lined pie pan and dot with 1 1/2 tablespoons butter.
  • Cover with topping crust; slit to allow steam to escape.
  • Bake at 425°F for 15 minutes then reduce temperature to 350° and continue baking 45-60 minutes.

There are chunks of apple in every bite. The cake is moist and has a wonderful buttery cinnamon flavor. Walnuts give the cake a nice crunch. But that glaze ... sweet and buttery it takes the cake over the top.

CAKE
2 stick(s) margarine
2 cup(s) sugar
2 large eggs
2 1/2 cup(s) all-purpose flour
2 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1/8 teaspoon(s) salt
2 teaspoon(s) cinnamon
3 cup(s) finely chopped apples
1 cup(s) chopped walnuts
2-3 tablespoon(s) milk
GLAZE
3/4 cup(s) sugar
1/2 cup(s) margarine
1/4 cup(s) buttermilk
1 tablespoon(s) light corn syrup
1/4 teaspoon(s) baking soda
1 teaspoon(s) real vanilla extract

Steps:

  • Cream margarine and sugar in a bowl.
  • Mix in eggs one at a time.
  • In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Mix dry ingredients into the butter/sugar.
  • Fold in the chopped apples, walnuts, and milk.
  • Grease and flour a 9x13 pan. Spread apple cake batter evenly in pan.
  • Bake at 350 degrees for 50 minutes to 1 hour, or until a toothpick comes out without raw batter on it.
  • While the cake is baking, combine all the glaze ingredients except the vanilla in a medium pan. Stir and cook to a rolling boil. Remove from heat and add 1 teaspoon of vanilla.
  • Pour and spread glaze over hot cake as soon as the cake is removed from the oven.
  • Let cake cool completely before serving. The longer it sits, the better it gets!

CREAM IN A LARGE BOWL OR STAND MIXER:
2 stick margarine
2 c sugar
ADD:
2 large eggs
IN A SEPARATE BOWL, COMBINE:
2 1/2 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/8 tsp salt
2 tsp cinnamon
ADD DRY INGREDIENTS TO THE MARGARINE MIXTURE. MIX IN:
3 c finely chopped apples
1 c chopped walnuts
2-3 Tbsp milk
GLAZE
3/4 c sugar
1/2 c margarine
1/4 c buttermilk
1 Tbsp light corn syrup
1/4 tsp baking soda
1 tsp real vanilla extract

Steps:

  • 1. Follow the above steps to make the cake batter. 2. Grease and flour a 9x13 pan Spread apple cake batter evenly in pan. 3.
