BEEF ENCHILADA CASSEROLE
Beef Enchilada Casserole is layers of seasoned ground beef, corn tortillas, enchilada sauce, and cheese. It makes a great family friendly Mexican dinner. It is like having authentic beef enchiladas without all the work!

Steps:
- Preheat the oven to 350°
- In a large skillet brown and crumble the ground beef, drain any excess grease.
- Add the onions, garlic and salt saute for about 5 minutes until the onions are slightly softened. Stir in the 3 tbsp water, 2 tsp chili powder, 1 tsp cumin.
- If using the cilantro, stir it in now. Remove the pan from the heat.

KAREN'S CASSEROLE
This is one of my favorite comfort foods, and a Thanksgiving staple. Luckily it is also simple enough to cook any time. My best friend first made it with chicken, to delicious results. It was originally a vegetarian recipe created by my mother, made to go with Worthington "Chic-ketts." It will also work with Worthington "Tender Bits" or other soy chicken products.

Steps:
- Preheat oven to 350 degrees F.
- In large pan, brown onion, celery, mushrooms, and chicken in the butter.
- Remove from heat and add all other ingredients except paprika, mix well.
- Place in a greased 2-quart casserole dish. May seem a bit watery, this will go away after it's baked.
- Top with paprika, to taste. I do a solid coating so the top is entirely red.
- Bake for 35-40 minutes. Top should be slightly browned and casserole a bit bubbly.

ENCHILADA CASSEROLE
The inclusion of tempeh adds a good measure of protein to this spicy enchilada casserole. You can replace the Cheddar cheese with Monterey Jack if you like. Serve with sour cream and salsa!

- Preheat oven to 350 degrees (175 degrees C). Lightly oil a 9x13 inch baking dish.
- In a medium bowl, combine the beans, garlic, onion, chile peppers, jalapeno pepper, and tempeh. Pour enchilada sauce into a shallow bowl.
- Dip three tortillas in the enchilada sauce, and place them in the prepared baking dish. Be sure to cover the bottom of the dish as completely as possible. Place 1/2 of the bean mixture on top of the tortillas, and repeat. Drizzle the remaining sauce over the casserole, and sprinkle with olives and shredded cheese.
- Cover, and bake for 30 minutes. Uncover, and continue baking for an additional 15 minutes, or until the casserole is bubbling and the cheese is melted.

- Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. Repeat layers once, then top with remaining tortillas, meat and cheese. , Bake, uncovered, 30 minutes or until bubbly., Freeze Option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

KAREN'S ENCHILADA CASSEROLE
This is a wonderfully easy recipe for a yummy dish that was passed on to me by my mother-in-law. My husband can eat these leftovers for breakfast, lunch, and dinner (if there is any left)! I usually serve this with Spanish rice, corn, and a salad with ranch dressing.

- Set oven temperature to 350 degrees.
- In a medium saucepan, saute onion in oil until tender. Add the ground beef, cooking until well browned and crumbly.
- Add the enchilada sauce and green chilies. Continue cooking over medium heat until sauce is heated through.
- In the meantime, tear or cut tortillas into large bite-sized pieces.
- Begin layering by adding a few tablespoons of sauce to the bottom of a 13x9in baking pan.
- Dividing everything in thirds, layer the casserole in three layers as follows: tortillas, meat sauce, cheese, olives.
- Place in the oven until cheese is melted thoroughly, usually about 15 minutes. After the cheese melts, you can place the casserole under the broiler for a few minutes to get a nice crusty cheese layer on top. Yum!
- Let cool for 5 minutes before cutting. Add a dollop of sour cream to each piece, if desired, and serve!

- Heat olive oil in a large skillet over a medium heat. Add onions and cook until translucent, about 5 minutes.
- Add ground turkey or ground beef and continue cooking over medium heat until meat is browned and nearly cooked through. Add spices, chili powder, salt and pepper and continue cooking until meat is done. Check seasoning, adding more if desired.
- In a 13" X 9" baking dish, pour a little of the enchilada sauce in the dish to moisten the bottom. Begin by layering in this order: 6 tortillas, on the bottom of the dish, overlapping to fit. Add 1/2 meat mixture, 1/3 cheese and about 1/3 of the green enchilada sauce. Repeat. Finish by topping with six more tortillas, remaining sauce and 1/3 of the grated cheese.
