A very old Estonian dessert recipe that was made for special occasions in days past. This makes a cake-like barley bread. Posted for ZWT4.

Ingredients

1 pint sour cream
1 egg
1/2 teaspoon salt
3 tablespoons sugar
1/4 cup butter, melted
1/2 cup whole wheat flour
1 cup barley flour
1/2 teaspoon baking soda
2/3 cup carrot (grated finely)
2 tablespoons butter, for sauteing
1 cup plain yogurt
3 tablespoons sugar
1/3 cup cranberries
2/3 cup whipping cream

Steps:

Saute grated carrot in butter over medium high heat 2-3 minutes ; let cool.
Mix soda and flours.
Beat eggs, add sour cream, sugar, salt.
Add the flour mixture; mix well.
Add melted butter and carrots and mix very well.
Pour mixture into baking dish
Bake at 350F for 35-40 minutes.
Serve hot with cranberry cream sauce (see below).
Cranberry cream-sauce for serving:
Mix Sugar and yogurt, till Sugar is disolved.
Whip the cream till soft and mix in the yogurt.
Mash the cranberries and add to the mixture.

Place all ingredients except baking powder into blender. Blend until the batter is formed. It won’t be a smooth and silky batter, instead you’ll still see pieces of barley. Don’t worry; this is okay. When the batter is done, mix or blend in the baking powder.
Line a round 7 inch cake tin with parchment paper and pour the batter in. If you use a bigger cake tin, the bread will be thinner and need less baking time.
